Chris Makes Kale Pesto Pasta | From the Test Kitchen | Bon Appétit

  • Join Chris Morocco in the Bon Appétit Test Kitchen as he makes pasta with kale pesto. Substitute pine nuts for the walnuts if you'd like. To serve with pasta, stir in ½ cup pasta cooking liquid to the pesto until smooth and toss to coat, or serve as a topping for chicken.

    I really appreciate how different this video felt than the rest of them, in that there's a lot of...quiet? I don't know how to describe it. There's just like a lot of moments where the camera is just on and Chris is cooking and it feels very relaxing, but also still informative. Like it was really good for me to see how long he actually blended everything since it was such a short amount of time. It made everything look a lot more doable by an average person and less chef magic.

    The way BA chefs (I’ve seen Molly do this in another video too) just casually dip their fingers in boiling or near-boiling water (to taste whether its seasoned) is both scary and amazing.

    I cook pesto in the summer when I have a lot of greens hanging around. Never have done Kale before but I will try this.
    I've found that serving pesto with a side of fresh summer tomatoes, just as wedges surrounding the plate, is the best way to eat those beautiful tomatoes you get in late summer without having to cook them.

    I made this today, literally as soon as I saw this, but I could only find cashews for the cheap and MAN OH MAN... the cashews after soaked for about 30 minutes are so amazing in this. 10/10!

    Like everyone else, I'm loving this format and the tone of the video. I think in part, it's because of the recipe. It has variables, and options, and explanations, which is why recipe videos are helpful in the first place. All the questions you might have, all the things that could go wrong, explained.

    I have to say I love that Chris takes his time when he talks. This was a 17-minute show and he was deliberate and calm with his words. It's great to listen to and watch.
    I'm not a fan of pistachio, I'm not a nut fan I think. I really only like 4 nuts almonds, peanuts, cashews, and pine nut. And Pine nut needs to be very good for me to eat them. I think I will try this with pine nut. I have to make it for myself since my husband doesn't like pesto.
