    Retired pastry chef and bakery owner here. I do a very similar recipe with just a couple differences one being I add fresh grated nutmeg. May I say I absolutely enjoyed your video. Love it when the instructions are simple, to the point and explained without a bunch of noise. Very nice…😉

      @@jerrycallender9927 Yes it is and so many folks don’t realize nutmeg (fresh grated) enhances both sweet and savory dishes. For thanksgiving try it in your sweet potatoes and your stuffing. So versatile and flavorful. It lends to and enhances other flavors. Ok I’m done 😅

      @@jenniferanngarcia2496 Even tho “pumpkin spice” has nutmeg in it I still add freshly ground. Nutmeg straight from the nut is a totally different taste and helps in the enhancement of other flavors. Since I never measure when I add the nutmeg I’m going to give an estimate of prob 1/4 of a teaspoon. Hope this helps. 😉

    Y'all, my husband doesn't even like pumpkin, and yet I'm making these this week for the fourth time in a month, lol.

      dont sweat the cracks in a cheesecake. it even happens to the pros. my wife makes cheesecakes every year and the cracked ones get a chocolate topping to hide the cracks :)
      you can reduce your odds of cracking by letting the cheesecake cool more slowly

    Made this and somehow turned out with so much more filling than my 9x9 dish allowed! I am an experienced baker, so I'm not sure what happened. At any rate, if you find yourself looking nat your filling and thinking "gosh this looks like a lot for my dish" just get a bigger one. Easier than cooking two dishes back to back, as I then did! Plus my first one got over cooked as the filling was piled too deeply in the pan. A big bummer bc it looked so beautiful.

      Interesting! How deep is your pan? This was just a standard 9x9 that I used. That must’ve been frustrating though :(

      @@SugarSpunRun very standard, run of the mill 9x9. I'm guessing 2&1/2 " deep. But you know what, I trimmed off the darker edges, sliced the bars and brought them to our fall family gathering - and they were a hit! I got so many compliments on these bars! Some did not believe I had made them, they thought they were so good I must have purchased them from a bakery. So, there ya go. I'd add fool proof to your recipe description!

    I recently started baking and have been sharing my dishes it with my coworkers and supervisors. Today, one of the VPs approached me and asked if I could make him a pumpkin cheesecake.
    I, of course, said yes, even though I have never made a cheesecake in my life, lol. So I ran to good old trusty "UA-cam University." And after watching a couple of videos, I decided yours was the one. This video was legit so easy to follow, and the recipe is simple yet delicate and looks delicous af! I've got my pan currently cooling on the rack before I pop it in the fridge. It turned out awesome. It looks and smells fantastic. I wish I could share a photo. I can't wait to hear the verdict on taste tomorrow.

    Sidenote: I added nutmeg as suggested by another commentor. It only made sense to try it 😌👌🏾

    hello! i've made this recipe 3 times and every single time it's delicious and the talk of whichever function i take it to!! i love how in depth you go and how detailed but easy your recipe is. i do have a question for you: i'm making this recipe again for our christmas party this year, we have some guests who don't eat egg, so is it possible to make the recipe without eggs? i'm aware of the different egg substitutes such as applesauce, but seeing as to how cheesecake is extremely easy to mess up, i was just wondering if you could me out? thank you!!!

      @@SugarSpunRun i’ve sent your recipe to 6 people now in a total of barely 2 months, literally MOUTH WATERING just thinking about it. i ended up using about a cup of buttermilk as a substitute and it worked out AMAZING!! the tangy, rich flavor brought out the best notes in the cream cheese and it was AWESOME!!

    I only used the light brown sugar measurement for the crust and only a 1/4 cup instead of 3/4 cup granulated sugar for the cheesecake batter. Wasn't as sweet but tasted just as good. Will defiantly make again.

    It is really nice to come across a very intelligent UA-cam chef that just Cooks good normal delicious food. I get so tired of the "let's cook a vegan, gluten-free thing that's been blessed by a Martian priest" type of cooking on UA-cam. My young girls and I will be cooking this this weekend.

    Just baked this recipe last night and it turned out undercooked. Beware of too much jiggle after the 40 mins. I left it in for about 45 minutes and it still came out undercooked. Only the very center can have jiggle, even if the sides don't. Also, too much jiggle is still bad, even if it's not liquidity. I followed this recipe exactly (metal pan too) except a few variables; my batter was runny and not as thick as appears in the video. This might have been because I left my cream cheese sitting for too long, even though it was only for a few hours. I also may have overmixed the cream cheese and sugar (before the sour cream and eggs) because at first it did seem to be too thick. Don't worry about the batter being too thick before you add the sour cream and eggs. Those will help soften it up. Also, I placed the pan on a rack that was one below the middle, so not directly in the middle. This may have affected the cooking time also.
    So, if you have a runny batter, better to bake for at least 15 minutes longer. Other than that, it's great! I could have still served the cheesecake as is but I wanted it to be perfect, so am going to try to bake it a little longer now the day after, letting it come to room temp first and then baking it again.

    I made the pumpkin cheesecake bars but mine didn’t come out as beautiful as your did in the video. I will not give up though because it may just take another attempt. Thanks!

    I made them but used a pumpkin pie spice from dollar tree. I think that was a mistake and they need more oomph lol. So dont do what i did

    Consistency was runny. It was fine until the 3 eggs were added. Mine were large. Should they have been smaller, or maybe just the yokes????

    Hello again. I have tried so many of your recipes and no complaints here. I can’t wait to try these,will make today as a matter of fact. I had a recipe for mini peanut butter cups and somehow can’t find it, was wondering if you have one. I know I can get one on the internet but would prefer your recipes.
