    To bring cream cheese to room temp fast just put in a bowl and fill bowl with hot water for 10 minutes. Eggs take about 5 minutes.

    I'm a brand new subscriber, as I just found your channel while searching for a really good pumpkin cheesecake recipe. When I saw your's, I knew I'd found what I was looking for.
    I can't wait to make one. I love your baking idea and leaving into the oven to avoid it cracking. I've made numerous baked cheesecakes, using many different methods suggested but to no avail. Mine always cracked no matter what method I chose. I was looking a many of your other recipes and I found several which I will definitely try for the upcoming holidays 2021. I also love how you chose to present your recipes. I don't have to sit here and take forever watching every little step to go through and wait for them to do it.

      Also, from some peoples feedback. My oven may run a little different than most peoples. You may want to stop your baking about 10 minutes shorter and keep an eye on it. This will help it be creamer and not over baked. Please let me know how it goes!

    Never made a cheesecake before, and only have a smallish table top oven, and no stand mixer so I had to mix by hand, but made this for Thanksgiving and everyone was blown away! Awesome video!

      Turned out really, really good but it cracked. I'm pretty sure I know what I did...I opened the oven and closed it again while it was still cooling. Wasn't really sure when I should've taken it out.

      Yay! So happy to hear you loved this pumpkin cheesecake :) Another way to decrease the chance of cracks in your cheesecake is to add in the eggs last. This way they get mixed in less to incorporate less air. Hope that helps :)

    A "ban marie" or water bath is used so the cheesecake will bake more evenly, i.e., wherein the outsides become hard while the center is wobbly. This can also be achieved by placing a dampened collar around the outside of the pan. The point is, to even the temperature while baking. To avoid the top from cracking, it's best to keep it in the oven (with the heat off) an extra hour to allow it to cool gradually. The sudden change in temperature is the reason it can crack. But cracks aren't the end of the world.

    Very good, also I see you put the base for the springform pan the opposite way which is what I do so many other people don't they put it in the way it was assembled when they bought it. And you lined with the foil and then put the ring around and closed it very good

    What if you use regular 9-in pipe pan pre-made crust how long would you cook that for

      Hi Jana, I am afraid that a 9 inch pre-made crust might be too shallow. A 9-inch spring form pan is quite tall. So I don't know if you will be able to fit all of the cheesecake filling into the pre-made pie crust.

      Hi Lena :) I have never tried making cupcakes from this pumpkin cheesecake so I am not too sure about the bake time. It will bake much faster due to its size though. Keep an eye on it, it may be done in half the time. Hope that helps. Let me know how it goes :)

    If I am only making half the recipe on an 8 inch Cheesecake pan, what is the adjustment for the time cut t in half when I switch to 250F?

      Hi :) If you cut the recipe in half but use an 8 in pan then your cheesecake would be much thinner. So it is really hard to say how long to bake for. I have not tried that so I can't say as to the time. You would have to keep a close eye on it. If you give it a try let me know how it goes.

    What happens when you live in Sydney and our supermarkets don’t sell, stock canned pumpkin 🎃 what pumpkin 🎃 would you recommend so I can cook up some pumpkin 🎃 and is your canned pumpkin sweet or just plain unadulterated pumpkin? Aussie gal is kicking it in the kitchen ❤

      American canned pumpkin is not sweetend. However you can buy canned pumpkin pie filling that is sweetend. Any pumpkin will do. Just throw it is a food processor after cooking. Traditionally in the states we use small orange pumpkins, usually referred to as pie pumpkins

      Are you referring to the graham cracker crust? You first bake the crust for 10 minutes then remove it from the oven. Then fill the pan with the cheesecake batter and bake for 15 mins. Then leave the cheesecake in there and drop the temperature and let us bake for another 1 hour and 30 mins. I hope that makes sense :)

      It takes about 4-5 hours to cool down to room temperature. Just make sure not to open the oven while the temperature is dropping. I hope you love this pumpkin cheesecake! :)

    on the recipe you put under neath the video it says 1 tsp but in the video you said two tsp or add an extra tsp for more pumpkin flavor did you mean the 2nd tsp was the extra tsp you added? because i only put one 1tsp

      The paddle attachment (as opposed to the whisk attachment) of a stand mixer is best so that you don't beat too much air into the batter.

      @@SimplyHomeCookedthe more air the better the batter appose to pop. Belief you cant beat the custard to much also the recipe is short a fee eggs i wont say how many but yeah

    I tried this recipe and it is delicious, but it cracked in the middle and I followed all the instructions. I don’t know what could happen 🥺

      I am sorry to hear that Sara. It sounds the you might have over-beaten the eggs. When the eggs are over-mixed, that tend to incorporate more air. So when the cheesecake bakes it causes it to crack. I hope that helps.

    Alright, this is a delicious cheesecake. BUT, you certainly want to wait the full 4hrs+ until you cut into it. One hour is not enough, it will fall all over the cookie sheet/counter top. But it's sooo yummy.

      @@SimplyHomeCooked Yes, many people are searching for that recipe, such as: "Costco's Pumpkin Cheesecake (Copycat Recipe)". They have a sour-cream like topping. Here is a picture. It is coming up on Thanksgiving time when it comes out, maybe duplicate it and post it ... then, you'll get a lot of views. It is something that PISSES PEOPLE OFF. CC has it for like 2 or 3 weeks maybe, then they quit selling it. At our CC, I've been to protests to keep the CCPC out until after Holidays. So, one year, they relented and let bakers make it until Jan 1. But, most years they don't. Then it disappears for 10 or 11 months. Yeah, makes me pissed even thinking about it, because I love it with the topping.

      Ok so update. I retried the recipe and added eggs in last. Got very little cracking but not as bad. My husband also suggested I cook it a bit longer due to our elevation 6500 ft because last time the bottom was still raw. The cheese cake came out better! Imma try one more time to perfect it.

    Looks dry, and 4 blocks of cream cheese, don’t think I’ll risk 4 blocks of cream cheese, I make cheesecakes in my instant pot, their Ok, only 2 blocks of cream cheese, certainly not Cheesecake Factory,good, not dry,30 minutes in the IP,remove and cool on wire rack, fridge, I prefer next day, so I plan it that way for special occasion, if you have an instant pot Try it, it’s great
