I'm a chef but i tell you this guy is one hell of a chef. His food makes me hungry and hungry everytime i see what ever he is cooking up. Man what a blast!!!$😃
Been subscribed for years and never made 1 of his recipes. Always watched but never made 1...this is going to be my 1st!! Love this guys personality! 💯
This guy taught me to make trinidadian corn soup. Now every time my family wants corn soup I'm one has to make it loll. He seasons his stuff perfectly you gotta try more of his recipes.
I'm Guyanese and I was screaming when you mentioned that ketchup in brown stew.... I'm glad someone mentioned it. Our Grandparents are rolling in their Graves!
Excellent recipe my brother. One suggestion, try not to use a metal spoon in your nice expensive enameled pot, in the long run you are scraping the enamel off, wooden spoon is best.
I am from a Trini family (Dad's side) and he taught me this dish when I was probably under five years old. As I became into my adult life I did change it up a bit in that I add sliced water chestnut and sometimes sliced carrot. Adds some sweetness and the water chestnut adds some crunchy bits. Always marinate same as Chris. Bone in chicken, tomato, scallion, thyme, borage, garlic, tomato, worchestershire, and of course scotch bonnet.
I made this for dinner tonight, it’s so good, I had to sneak a plate to hold me over until the family gets home!! Thank you so much for this detailed video!!!
Wow i just made your recipe and its the best stew chicken i ever had and i dont even know how to cook lol. U explain why things are done instead of just leaving us to figure out why. You are the best
I am glad you mentioned roti. There was a Caribbean place here that was ran by a 🇹🇹 man who used to make these rotis wrapped like a crepe for burrito. You could get with curry 🐐, 🐔 or shrimp. I used to get the vegetarian one with curry cabbage, potato and chickpea. Could you do some videos with more roti?
I made this DELICIOUS meal/recipe on today! 😋😋 My husband is a (home made) food critic.🤣 He kept complimenting how good this dish is 👍🏽👍🏽. FYI: only difference i did was add cut portions of corn on the cob (niblets) and rice on the side for other family members. One of my best dishes yet! Thank you!🎊🎊🥳
wow that looks so good. i will try it out. thank u for sharing. happy Saturday to u and your family. have a safe and bless weekend. new to your channel.
Hi Sharon! Using ketchup and soy sauce is not traditional, true, but it sure tastes great! Other non-traditional ingredients that could be considered- butter (to thicken that yummy chicken sauce, and it will tame that burn from the Scotch Bonnet too, IMO!; another is sweet potato (in addition to the Yukon Gold potato that Chris suggests), this will also help to thicken the sauce as it breaks down, IMO; and one last idea- garlic! Yes, more garlic! I know, it is not traditional, but it sure does amp up the flavors and garlic will reduce the need to add more salt before serving, IMO! I also enjoy adding chunks of fresh red and green bell peppers to this stew, for color and for texture. Again, not traditional but they add great additional visual appeal to this stew. Add them 15-20 minutes before serving so their color stands out in the stew as you serve it. Other ideas to try- how about peanut butter? How about bacon? (c'mon, everything tastes better with bacon!). Happy cooking, Sharon!
Luv it- have made 2x now 1 ? I have- my chicken releases a lot of water when cooking and so I don’t get the ‘niceness’ that Chris demonstrates. What can I do different?
I made it and it was good. The only thing I didn't add was ginger 🤦🏾♀️ I didn't realize that I didn't have anymore. And I didn't use the scotch bonnet pepper. But I did have a carribean season mix. And don't worry, I did not add ketchup or soy sauce.
When i make mine i take the chicken out when im doing my gravy thickening as i dont like the chicken to over cook. Then i put it back in and on a if you want it to be a star. Seasons for 24hrs cook then ince cooked leave it overnight in the fridge to soak up all the flavour again then eat it the next trust me its fantastic.
Plenty Caribbean people put ketchup in their stew chicken, old and young. Your granny never did but believe me, lots of people's grannies put a little ketchup in it. Has almost nothing to do with colour. It just gives it another layer of flavour with a very slight sweetness. So mash brakes on that one lol. Your granny isn't the only granny, muh boy. I do like your channel, though, and don't take this comment to heart. Just my thoughts on your problem with the ketchup lol.
7:46 Saturday morning and I'm ready to eat stew chicken. Uncle, you go make me fat. Laaaawdddd, I can even smell the pot. So ah guess ah eating stew chicken for lunch. Lemme go season the chicken.
I love how you explain the reasoning within the cooking process because It really helps to understand the “why”! Thank you!

Agreed. I love me some bamboo spoons.
Wooden spoon nice but less bacteria 🤷♂️ can only stay nice for so long haha
@@badburial1097 Hopefully we have more than one wooden spoon in the house. Lol. A silicone spoon also would be good.
@@2075vj I love you
Thanks, I always love different things when sharpening the knives ...you know...

good tip.. too much liquid does over-cook the chicken and it also becomes soupy
Good morning Chris what size Dutch Pot is that you're using??? I want to purchase one, but the one I like is only 2.75quart!
