Chives and sieve/scallions are of the same family but one is more potent than the other; chive grow like weeds and more pungent & scallions have bigger bulbs and a less aggressive scent

yep lol! I have done this a few times and got it just right, then other times i added the chicken too early and got sweet chicken. lol still tasted good but i did add a little dark oyster sauce to balance the flavor

I cooked that dish two days in a row cause it was so good 😋. I cut up the habanero I cook with since I didn't have scotch bonnet peppers, cause I like mine 🔥If you put a half of chicken cube in it takes it to another level
Thyme is a must in Trinidad cooking for meats and fish. The chicken should have been soaked with some lime juice, vinegar or lemon juice for a while to take away that fresh taste and smell and then rinsed again. So thyme, ginger and a little mustard are missing. That is how our grandmother's taught us. Some people add Worcestershire sauce and soya sauce. You can add whatever you want after that but it then it becomes your stewed chicken and will taste differently. In Canada there is chive and green onions. What Trinis call chive would be similar to what we call green onions. Chives in Canada have extremely thin leaves and are used in green salads.

In Trinidad, we used yellow mustard and some people burned mustard seeds. What some people fail to realize is that the majority of Trinidadians two generations ago had a parent or grandparent who came from another Caribbean island or elsewhere, so they all cooked differently. A lot of our food originated from different parts of the world. I have no idea how old you are, but the original Trinidad cuisine has evolved. I lived on Roberts Street in Woodbrook and every house had a different race living in it on my block. They all cooked different foods, so guess what happens to the local dishes. There is no set rule for the spices and herbs that you can use. On that same note, how many Trinidadian kitchens have you been into while they are cooking?

Brown sugar is a natural browning technique it's a west Indian thing.

A little lime in the seasoning adds an interesting flavor and cuts the fresh smell of the chicken while cooking.

Stew chicken must be done in an iron pot/Dutch oven. It's harder in a thin bottom pot, I have one.... it's trouble eh! Volume is a bit low

Always a great fan of the show...all the food prepared is for people who can tolerate a normal diet, what about those folks who are diabetic ,hypertensive or have kidney disease? any consideration for those kind of cuisine?

Nope, it isn't sweet at all
If you can’t use sugar squeeze lemon or lime in the oil instead of the sugar. It makes a brown base as well!
