how to make lentil cookies

  • This super easy lentil cookies are very tasty, moist, gluten free, sugar free.
    Ingredients:
    1. 1 1/2 cups lentil flour
    2. 1/2 cup ghee butter
    3. 1/3 or 1/2 cup (up to your liking) sweetener (or use sugar)
    4. 1 egg
    5. 1 teaspoon vanilla extract
    6. 1/4 teaspoon baking powder
    7. 1/8 teaspoon baking soda (or bicarbonate of soda)
    8. 1/3 cup white chocolate, melted
    9. 1/2 cup chocolate chips
    Method:
    1. Preheat oven to 180 C (350 F). Line two baking trays with non-stick baking paper.
    2. Mix wet ingredients: put ghee butter and sweetener into the bowl and beat with electric mixer for about 3-4 minutes, until light and fluffy. Add egg, vanilla and mix properly. Add slightly cooled (not hot) melted white chocolate, stir it well.
    3. Mix dry ingredients: mix together lentil flour, baking soda, and baking powder. Add mixed dry ingredients to the wet ingredients and stir until combined well. Add chocolate chips and mix together.
    4. Take 1 tablespoon-sized portions out, roll them into balls, place onto prepared baking trays and press them slightly. Place into preheated oven for 10-12 minutes. Cool in the trays. Then place to cool on wire rack. Makes 20-21 cookies.
