LENTIL BREAD Recipe 🤩🍞 Gluten Free, Flourless Alternative + Savory Lentil Cake with Cheese and Herbs

  • For years, like most people, I believed that bread should be made with wheat. But it is possible to make bread with almost any seed. Lentils are a good example of that. Today I want to show you how easy it is to turn lentils into a gluten free bread and also want to take this lentil bread to the next level by turning it into a magnificent savoury lentil cake.

    Lentil Bread
    Difficulty: Easy
    Prep time: 15 minutes
    Cooking time: 35 minutes
    Serving: 6-8 people
    2 cups red lentil
    1 cup yoghurt
    4 eggs
    2 packs of baking powder, 20 g
    1 teaspoon salt
    60 ml olive oil
    Nigella & sesame seeds
    • Preheat the oven to 180 C (355 F) on upper and lower heat without fan.
    • Wash the lentils well and soak in water for at least 4 hours, preferably overnight, for them to expand and soften.
    • Sieve the lentils and add in the food processor. Pulse until it becomes a puree.
    • Transfer some pureed lentil to a bowl then add the yoghurt, eggs, baking powder, salt, and olive oil into the processor. If your food processor is big enough to mix all ingredients there is no need to take out some of the lentil puree.
    • Mix all ingredients (including the puree in the bowl) in the food processor and pulse until everything is smooth.
    • Oil the tray with olive oil and pour the mixture into the tray.
    • Sprinkle some nigella and sesame seeds.
    • Place the tray into the oven and bake it for 35 minutes.
    • Rest for about 30 minutes to cool and eat with loved ones.
    Savoury Lentil Cake
    Difficulty: Easy
    Prep time: 15 minutes
    Cooking time: 1 hour and 10 minutes
    Serving: 6-8 people
    2 cups red lentil
    1 cup of yoghurt
    4 eggs
    2 packs of baking powder, 20 g
    1 teaspoon salt
    60 ml olive oil
    250 g halloumi, diced
    4 sprigs of spring onion, chopped
    15 sprigs of dill, chopped
    1/2 teaspoon black pepper
    Nigella & sesame seeds
    • Preheat the oven to 180 C (355 F) on upper and lower heat without fan.
    • Make the plain lentil bread mixture by following the steps above.
    • Add the halloumi, spring onion, dill, and black pepper into the mixture.
    • Oil the tray with olive oil and pour the mixture into the tray.
    • Sprinkle some nigella and sesame seeds and put into the oven for about one hour and ten minutes.
    • Let it rest for about 30 minutes to cool down and eat with loved ones.

    After some experimentation, today I made a vegan version of your plain lentil bread. I used 2 cups of red lentils, 1 cup coconut milk, 3 flax eggs, 1/4 cup apple sauce, 4 teaspoons baking powder, 1 teaspoon salt and 1.2 teaspoons olive oil. Baked for one hour at 355 degrees F. This is from a fan in Gainesville, Florida, USA. Thank you for your recipes.

    After watching this video numerous times (you all are so fun and great to hear both on and off camera!) I made it as a vegan version! Using 10 tbsp of aqua faba and coconut yogurt. It came out super yummy and absolutely tastes like bread, not cake. Thank you very much for this recipe!

    I make zucchini fritters with soaked and blended red lentils instead of flour all the time! Lentils are magical.

    We just made this (the version with the herbs + feta cheese) and it was SOOOOOOO GOOOOOOOD! Thank you so much for sharing this. My boyfriend is allergic to corn and was elated to eat something that actually tastes like cornbread. You are a genius, and this is a recipe that I will be using for years to come!       Diane Thompson, check to see if it is just G M O corn that wrecks him. I tried white corn, now many of us find white corn is fine because no GM O. Yellow that says no GM O does make me sick, as does dairy from cows that eat yellow corn. Organic dairy is fine. Eggs from organic fed chickens fine, corn fed not, etc.

    Yes, it is very much like a cornbread. This is the most unique version I’ve seen. I think it can become vegan either with egg replacer, or like flaxseed based binder.

    This bread turned out amazingly well. Refika’s directions are so on point . The bread is as done at 355 degrees Fahrenheit in exactly 35 minutes to the second:) impressive Rafika - I used fenugreek leaves, garlic, red chillier pepper and spring onions. Amazing flavors. What I love about this recipe is that it is so versatile and can be globally modified to suit the regional tastes of people anywhere in the world. This is will be a staple healthy recipe that I will using and experimenting with different flavors! Thank you Rafika and your team .

    This is the best gluten free quick bread I have found and tried. Made it last night with dried figs, thyme and vegan cheese. I don't regularly eat dairy, so I used tofu in place of yogurt. My bread didn't grow as tall (maybe the baking powder has lower strength?), nevertheless it had a wonderful texture and flavor. I can think of many combinations: walnuts/ figs, rosemary olives, etc. This is now my go-to recipe for the daily bread 😋

      Lentils have carbs too. Also lentils should always be paired with some cereals. That combination is better for digestion.

      Usually when people want to make a gluten free bread it's because they have gluten sensitivity or celiac disease so pairing lentils with cereal is kinda defeating the purpose. Soaking and draining before putting into the processor already helps with digestion and adding certain herbs ie cumin takes care of the bloating for people whose bellies are not used to plant-based diet's amount of lentils, beans etc. As a side note I thought I was always bloated because of legumes consumption but turns out I'm extremely sensitive to gluten and my problem disappeared after changing wheat pasta to rice/millet/potatoes. Not eating gluten also made my acne disappear - I've had it my whole life🙃

    I have made red lentils flatbread using lentils, water and salt, but I have never seen a fluffy bread like this using the red lentils! I can't wait to try it 😊 I was diagnosed with Celiac's 15 years ago, and while nothing will compare to wheat/gluten bread, it's nice to have these beautiful alternatives. Thank you ❤

    I made this today! I was going to comment that I felt like there was something missing in the savory version, and thought I might try some caramelized onion in the next batch I make. But I looked at the recipe again and realized I left out the 4 sprigs of green onion😅. Now realizing that, I think my next batch will have the green onions, a little caramelized onion on top with the seeds, and another half teaspoon of salt.

      It's now later in the day, and I made some caramelized onions to have with the bread (that I forgot to add the spring onions to). It's VERY good this way! I'll definitely do both spring onion in the bread and top with caramelized onions before baking the next time I make it.

    OMG!!! I made your lentil cake. I did not have yoghurt as I am dairy fee, so I made some sunflower seed cream a little ACV....and also I used our Portuguese sheep cheese diced. It is heavenly!!! Only half recipe for me, a single person made a huge cake nontheless! You guys sure know how to make DELICIOUS food! Thanks so much...💕

    I would never have thought of making bread with lentils! But seeing you make it and thiking about how good lentils are I love the idea. I make soup fairly often and I can imagine this being a lovely accompaniment so I'll give it a try soon.

    Dear Refika! I made the cake/bread today, I woke up very early, because we have heat waves here, and I didn't want to use the oven during the high temperature. We love it!     Oh yum, I'll definitely be making this bread. We love red lentil Dahl & as I've been gluten free for 24 years I'm always on the lookout for a great tasting gf bread recipe.     It's just like dhokla which is prepared in India .
    It's made using gram flour (yellow lentil ) .

      It's actually called KHAMAN and not DHOKLA (like all non gujjus refer to it).. DHOKLA has some portion of rice in the mix Moreover, it's steamed just like idli. In fact in Gujarat we have another item called IDLA which is also steamed and is like idli. The difference is that IDLA is steamed in one big thali and cut into bite sized pieces. There's plenty of variations of all three.
      Though one could compare this bread with another Gujarati dish called HANDVO, which though has rice along with lentils and is baked not steamed.

    I just made this using a mix of 3 lentils and it came out delicious! I also added come shredded zucchini in the batter along with lots of fresh herbs. It reminded me of firinda kabak mucver with lentils. My mother makes a very similar Indian bread called handvoo and it was a favorite growing up. Wonderful easy recipe! Thank you.

    Hi Retika, we in India we make a similar thing known as Dhokla with yellow lentil and we steam it. We in India use a lot of lentils to make Dosa and idlis. We use a lot of millet in making our hand breads.
    Your recipes are wonderful. Would definitely love to try this. ❤️❤️❤️❤️

    Hey Refika
    In India there's a savoury dish that's called Khaman Dokhla which is so similar to this dish. It is made with chickpea flour and is steamed and not baked. That's a total vegetarian version and no eggs are used. There's another dish called Handvo. In our Konkani tradition we make crepes of the lentils too which taste absolutely yummmmm. It was great to watch this. I am a vegetarian and do not eat eggs yet i might try a substitute to egg and try this dish.

    To anyone trying to make this in their American kitchen:
    60 ml = 1/4 cup olive oil
    20 g baking soda = 4 tsp
    Yoghurt = plain nonfat yogurt
    I added sugar, 1/2 cup and felt it totally needed it if making original variety.

    We have a vegan cousin for this bread in India called 'dhokla' made with chickpea flour and many variations of it . Yum! 'Handvo' is another one with lentils and vegetables. Lots of love from the US

    OMG, what a brilliant way to use lentils. That is also extremely high protein, which means all you need to eat with that is a nice salad🥗 This will be my new specialty for lunch.. BTW, as I watched the vlog, I was eating baklava from my favorite restaurant, here in NYC, lol. Take care❤❤💜

    Yum. I've made this a few times with different fillings, but I made a version today which is to die for. I put the lentils on to soak overnight, covered them and then had no time to deal with them yesterday morning. As a result my lentils were soaking for a day and a half and started to ferment. I also used natural yoghurt that was a bit past its 'use by' date. As a result I got amazing rise on my bread and the texture was more like conventional bread I am used to in the UK. I'm doing this every time now!!

    It works really well. Thank you Refika for bringing this to us. Now it is in the oven, 3rd time, and I have halved the ingredients and used a 20cm spring form cake tin. This time the base is split green peas and I have mixed in some diced sun-dried tomatoes and spring onions, with nigella seed on top, but I have also mixed in one tablespoon of rice flour because eating rice with a pulse gives a full protein combination (or so I have been told.) We are having a smaller ratio of carbohydrates with our meals to manage blood sugar. The bread will be eaten with a lovely rich tomatoey ratatouille and cheese. Yum yum! (I hope it works this time)

      FYI: One Tablespoon of rice flour won't make a complete protein with 2 cups of lentils (or even 1 cup). However, the dairy (yogurt) in this recipe makes it a whole protein to start with (either a grain or a dairy makes a whole protein with legumes). So no real need to add the rice flour. But, I doubt the rice flour in such a small amount very much affected the recipe. Can hardly wait to try this.

    Hi! Refika! Like Kavita mentioned in the comments, in India we make this bread with baking soda. It acts as as substitute for eggs. If you look for Dhokla and Handvo recipe, then I am sure you might be able to get a clue about how to make this recipe without eggs.

      Hi! I need to learn from Indian cuisine more, I'm Portuguese but I'm allergic to glúten it seems 😂. We base many things on wheat. So just baking powder will make it grow? I have to try this. Here bread is very much part of our breakfast and the rice flour bread tastes like nothing😂. Thank you so much!

    You beat me to it, Refika. I was going to comment that this looks just like cornbread! I'd love to make this, using ground flax and water for the eggs and soy/cashew yogurt instead of dairy yogurt. 🤤

      @@hibiscusflower5911 So, I'd possibly just swap out 4 eggs (which would roughly equal to 220g) with silken tofu. I believe it would work perfectly, also not lacking of the protein that'd normally come from the eggs in the original recipe.
      As for your question, the dairy yogurt, it's best to stick to the recipe and use a yogurt, of course a vegan one in that. I'd possibly use a soy based one but if you have any soy or even nut allergies I think chickpea yogurt would definitely work. Actually I imagine it's best to use either soy or chickpea yogurt, so if you can't pick soy I'd go with chickpea yogurt. Not sure if you can find one commercially (I personally have never came across a chickpea yogurt on the market) but it's so easy to make at home. I highly recommend trying giving it a go. Just search vegan chickpea yogurt online/UA-cam and you'll have plenty of references.
      Also for the cake version, you can most certainly use firm tofu or any vegan feta-like cheeses from the markets. OOOORR even better, I again highly recommend making your own by curdling your choice of plant based milk with a few tbsp of lemon juice.
