This is amazing, the last time i baked shortbread, it took 2 hours, then my mum suggested the easy vegan, ant it took me HALF AN HOUR, JUST HALF AN HOUR.
I can conclude that i will be using his tutorial every time he bakes something.

So, I actually made this recipe! 2 times already :)
It is soooo good!
Though, I think I put too much vegan butter the first time - so shortbread was a bit too soft. and also I missed the part about “caster sugar” and used just sugar - I bet it could be even tastier and had the better texture with the caster sugar.
But anyway, for all who was missing shortbread badly (like me:) I highly recommend to try this simple recipe!

I switched the rice flour for almond flour and it's quite good! But ir's funny because the batter rose in the middle, even without any rising agent... However, I should have left it for longer in the oven, because it's could have been crunchier. I didn't wait for the edges to be as brown as in the video. I thought it was enough, but next time I'll leave it to brown a bit more. Thanks!!
made this with coconut butter (the package said it tastes like dairy butter though), oat flour instead of rice flour, and 100g of sugar. it tastes so good!!!! thank you, i really missed shortbread :)

Heya, sorry I'm not from the UK. Is caster sugar the same as powdered sugar is it just really fine sugar? Would regular sugar work too? Not sure if I can find it in my country. Looks delicious!!

I was craving something sweet yesterday so I finally made the shortbread...I didn't have baking paper so it fused itself to my baking tray (oops...) but it still tastes awesome and satisfied my cravings =D will make it again to use as a "cheese"cake base or crumble topping, I think it would work really well ^-^
