Low Carb Almost Perfect Pecan Pie Revised

- Here are two versions of the Pecan Pie. One uses the Sukrin Fiber Syrup and the other does not. Enjoy!
Revised Pecan Pie without Sukrin Fiber Syrup (Kristie Sullivan)
Pecan Pie on a low carb diet feels like a miracle to me! Keep in mind that the “goo” ratio is lower in this low carb version and may turn slightly gritty after the pie is refrigerator, so be sure to eat it warm on the first day that you make it!
While I have never experienced a spike from Sukrin Fiber Syrup, I have heard from many of you who have. For that reason, I spent some time revising my pecan pie recipe. I hope that you can enjoy it with stable blood glucose!
Crust
1 ¼ cup almond flour
1/2 cup oat fiber (or 1/3 cup coconut flour)
1 large egg
3 tablespoons (1.5 ounces) butter, softened
1/2 tsp salt
3 tablespoons granulated sweetener
Preheat oven to 350 degrees. Mix all ingredients in a food processor until dough forms. Press into a 10 inch pie plate (1 quart capacity). Press crust up the sides. To shape the edges of the dough, you will need to refrigerate it for about 30 minutes. Bake the pie crust for about 6-8 minutes until just starting to brown. Remove it from the oven and set aside to cool.
Filling
6 ounces melted butter
¼ cup water
3/4 cup sweetener, powdered
1 teaspoon salt (reduce if using salted butter)
3 teaspoons vanilla extract
2 teaspoons maple extract
1/2 cup Sukrin brown sugar (or granulated sweetener with 1 tsp molasses)
1/4 tsp cinnamon (optional)
2 large eggs, beaten
2 1/2 cups pecan pieces
Use low heat to melt the butter in a large, heavy saucepan. Use a whisk to mix the melted butter with the water, powdered sweetener, salt, vanilla, maple extract, brown sugar substitute, and cinnamon until well blended. Remove from heat, and let cool slightly before whisking in the eggs. Mix well. Stir in pecans. Pour the mixture into the cooled pie crust.
Bake at 350 degrees for about 35 to 40 minutes. After the first 20 minutes, cover the pecan pie with foil to keep the top from browning too much. Do not over bake. Let the pie cool for at least 30 minutes before serving.
Here is the original version WITH the Sukrin Fiber Syrup
Crust

2 tsp vanilla
5 tablespoons butter, melted
1/4 tsp cinnamon (optional)
3 cups of pecans
Mix the recipe for syrup, brown sugar (or granulated sweetener + molasses), salt, and cinnamon. Add eggs and mix well. Stir in butter and vanilla and mix until well combined. Add pecans and mix well. Pour mixture into cooled pie crust. Bake at 350 (no convection) degrees for about 40 to 45 minutes. After 20 minutes, cover the pecan pie with foil to keep the top from browning too much. Do not over bake. Let cool at least 30 minutes before serving. Watch bake time and watch for browning. - Навчання та стиль
Hi all! Please notice that I've revised the written recipe in the video description, so that you can make the pie without the Sukrin Gold syrup. The Sukrin Gold has never spiked me, so it does not spike some people; however, as many of my followers are diabetic, I worked hard to make a new version without the syrup.

Thank you so much leaving up the original version with the sukrin gold syrup. Some people may want prefer or may need the other version, so I’m sure that’s much appreciated as well, but I really prefer the original version. You’ve literally saved my thanksgiving with that recipe.

when I made it again today I was surprised the recipe called for 3 eggs. I think it's supposed to be 2 eggs. sure enough, the filling wasn't as good. doggone it! I fixed it in the recipe above.

So happy to find a recipe WITHOUT the fiber syrup. Sad that people have used these syrups for a while now; theyre derived from starch so I'm not surprised they were found to raise blood sugar.

This was amazing! My pie plate was a little small and could not hold all of the filling, so I put the excess (about a 1/2 cup) into a ramekin and cooked it by itself. Oh, it was heavenly! I could barely wait to serve the pie at Christmas dinner! Now that it's all gone, I'm tempted to make a mini batch, skip the crust and just bake in ramekins!

OMGOodness pecan bars just came out the oven they are great! Thank you! I did the full crust recipe (omitted the precook and cooling part, complete oversight) but they still came out great! I halved the filling recipe and added cups of pecans, think next I will just 1/2 the pecans for a little more gooey filling or do 3/4 filling recipe instead! But regardless they are delicious! Love your recipes ... One keto blogger tested different sweeteners ,to see which raised his blood sugar the most . Gold fiber syrup raised his fasting blood sugar much more than plain granulated sugar . He was very disappointed as it was his favorite . 👍😀

Kristie I am going to toot my own horn here and I don't usually do that but I GOTTA share this since you LOVE pecans like I do and I am also from the south. :-) OK I make or made a pecan pie that is to die for. That is before this WOE. I have had people tell me I could sell my pies and make lots of money. lol One guy even asked me would I bake him some, he would pay me etc. I would always make the guys where my husband worked, pecan pies for Christmas or Thanksgiving each year. My sister wanted my recipe so I gave it to her but she said hers wasn't as good as mine and wanted to know what I do. What I do is I turn the oven down some so the pecans will ROAST in the pie. BUT doing almond flour it might not work. I guess we could roast the pecans first in the oven and then put into the pie. The pecans being roasted just makes it soooo soooo much better I actually did this by mistake one time and that's what got me to baking it longer so they would roast. I forgot the pie in the oven and that was my mistake hee hee but wow what a difference it made! OH AND I DO NOT bake thick pies just the thin ones because I don't like all that thick goo. YUMMMMMMM

I reckon you could put some pecans in your crust mix and that might help make a more solid crust. I've used pecans for a low-carb cheesecake crust and it did pretty well.

How much would you need to reduce the pecan syrup layer if you made it a cheesecake pecan pie. Also what would the cheesecake layer ingredients consist of and how much volume with each. I have 3 diabetics in my family! As you said they can’t have so many carb desserts ! Thank you for all of your work to perfect your recipes.
Never heard of the liquid sukrin gold.. Not sure what is wrong with it but I usually use Bocha Sweet in the sweet recipes on my channel here. No funny tastes, just sweet like sugar. Portion size is hard with pecan pie and the first slice is never gonna be the one you take a cover pic of. Nice recipe.
I did some research on this, and the main ingredient is isomaltooliguosaccharide. It is also in Quest bars which throw people out of keto and spike blood sugars. It is similar to malitol.

Just ordered the Sukrin products and can't wait to make your pie. I think I won't even bother with the crust. It's the pecans and the gooie filling that are the magic for me. Oh, and the South has been wrong about a lot of things, but the pronunciation of pecan isn't one of them. ;)

Found this for this coming Thanksgiving tried others butjust not satisfied. This looks promising. Gotta have the goo. I was taught by my Southern Missouri Mom, that a peecan is something you keep under your bed. Pee Kahn or Pehkahn were acceptable to her.
Your two recipes differ in how much Almond Flour to use in the crust. Is that intentional? 1 1/4 or 1 1/3 Which one is "right"? or do you really NEED more flour with the Sukrin Gold?
Can you give me an estimate of the carbs and proteins per serving? I made this last night and it was amazing. My husband, who continues to try the recipes with me (but is not necessarily following LCHF eating), liked it as well!

Oh Girl.. my Sukin products were ordered last night.. I knew then it was gonna be a winner. I dont care much about the crust.. really. Even when I was a kid, I'd leave the crust.. lol.. That pie looks AMAZING!!!! Have you considered using the pastry dough you made for the danish instead of pie crust? It might hold up better. I can't wait to use this recipe to make my pecan tartlets again. I have been looking for ways to make a "legal" version for years.

I'm trying to come up with a great low carb menu for Thanksgiving and I'm not sure if this or the pumpking cheesecake will win :) I do have another question though... if your weight loss was still extremely slow would you try to give up sweeteners, cheese or just reduce/restrict both?
I did both and it did help with weight loss. dairy is harder than sweeteners for me. except for the baking for videos, I'm now limiting dairy. it has helped me lose 6 lbs in the past month.

Im going to make this but.......have people not noticed that Sukrin brown sugar is the EXACTsame as regular brown sugar??? Both have 4 grams of carbs per 1 tsp. lol. The only difference is that Sukrin is 5 times the price.

I am doing this pecan pie for thanks giving but no time to order the sukrin fiber gold syrup. Do you have any suggestions of what to buy at store until I can order it. I bought the Walden cal free pancake syrup instead do you think that would be ok? I do have the sukrin brown sugar. Also do you put the pie in refrigerator or leave out. The Walden cal free pancake syrup says to put in frig after opened.

It's always best if you calculate the macros for the ingredients that you use.

I want to try this, but don't think that Sukrin can get the stuff here before Thanksgiving. You mentioned substituting sweetener and molasses. What sweetener do you recommend that I can buy at Wal-Mart? I currently have Truvia, but want to switch to something else if that is not the lowest carb. Also, if I use your substitution, is it comparative to the Sukrin syrup? I have spent most of the day watching your videos! Great job! Bobbie
gosh. I don't know of a good substitute for the Sukrin fiber gold syrup. it's the syrup that makes the pecan pie possible. so....a few options...1. you could try some other low carb pecan pie recipes. Carolyn Ketchum at www.alldayidreamaboutfood.com has one that I haven't made but it sounds great. Maria Emmerich at www.mindbodyhealth.com also has a low carb pecan pie. if neither of those strike your fancy, you could place an order with Sukrin just to see if you can get it in time. when I've ordered on Sunday, I receive it on Wednesday.
I have read that folks used sf pancake syrup but those often have malitol and I don't recommend it as it can raise blood glucose and cause digestive issues.

Do you ever have cheat days or cheat meals? If yes, how often? I like them but I don't like them cuz they make me crazy. Once I start eating that sugary stuff I just want to eat everything sugary in sight and I hate getting uncomfortably full. Cuz I know I won't let myself eat it the next day so I get sad at the end of the cheat day. Embarrassing but true! 😂

HighfalutinLowCarb did some blood glucose tests with 10+ different sweeteners. Unfortunately this Fiber Syrup spiked his blood sugar the most; in fact, it was twice that of actual sugar! Just beware; it may be low carb, but definitely not Keto :-( Otherwise, thanks for the recipes!

Question: I'm trying to cut down the carbs out of a chocolate/cream cheese pie I make every year and someone gave me a recipe for a crust made from pecans themselves - have you tried this? Just a little nervous since our pecan trees produced nothing this year and buying them are so expensive!
yes!! I used primarily pecans in the pumpkin pie cheesecake recipe. look in the video description for that. it's my husband's favorite crust. ya know, I'm thinking hazelnut flour will be really good too!

I make myself a personal crustless punkn pie soufflé every year to gnaw on for Tgiving and Christmas week because I hate crust of all kinds lol...lucky me...so I may use just the goop portion of ur recipe to make myself a pee can ( LOL ) pie so I wont die of a blood sugar high eatn regular....now would it kill borden to make a sugar free egg nog, I don't like homemade nog ( especially mine, blech!! ) thanks for this post. Even though my cookn is rot LOL I made a pretty good keto Oktoberfest to take to friends including almond floured viener schnitzel ( made of pork not veal ) and heck the rest of it was all naturally keto....sausage and kraut and the like...outdid myself if I say so me self..LOL

I like a lot of your videos BUT why would you publish this with so many errors in it and talk about the errors and never show a good version? If you follow the video you are going to get a bad crust that isn't sweetened and a filling that doesn't stay together...I can't serve that as a holiday pie! I can easily make a video showing how not to cook. I'm an expert at that!
