Cookies们,上个礼拜说了,今天教你们做这传统简单的牛油蛋糕。非常的香牛油味,口感扎实又不会干燥。我时常选择用来做的蛋糕底,好搭配跟任何馅料和奶油糖霜。赶快作来吃哦~ 单吃蛋糕本身就够了~
Cookies, as promised last week, today I’ll be making this traditional simple butter cake. Very fragrant buttery flavor, with a firm texture yet not dry. I often choose as my go-to cake in my cake making, suitable to pair with any fillings and cream frosting. Faster make and eat it~ It’s delicious enough to eat the cake alone~

= 牛油蛋糕 =
4颗大蛋(分开)
230克 无盐牛油
90克 白糖
1茶匙(4克) 香草精
60毫升 牛奶/奶酪
200克 面粉
2茶匙(8克)发粉
½茶匙(3克) 盐
¼茶匙(1克) 塔塔粉
50g白糖(蛋白质)
[烘箱180℃-30分钟和150℃-15分钟]
♦ RECIPE (8’x8' inch square pan)
=BUTTER CAKE=
4 Large Eggs (Separated)
230g Unsalted Butter
90g White Sugar
1tsp(4g) Vanilla Extract
60ml Milk/Buttermilk
200g All Purpose Flour
2tsp(8g)Baking Powder
½tsp(3g) Salt
¼(1g) tsp Cream of Tartar
50g White Sugar (for meringue)
[Oven 180C-30minutes & 150C-15minutes]

Thanks for the recipe, added 120g of melted dark chocolate to 1/3 portion of vanilla batter and turned this into swirled marble cake, so yummy!

這是個人第三次按照原創做法再次烘焙。全程用手翻攪除了蛋白部份用機器打發。因為個人喜欢如Sugi蛋糕的嚼勁所以加了碎杏仁。預熱180度x半小時,放入己攪拌好的材料用150度×15分鐘,但不能如期烘焙完成但可能不同烘爐烘焙完成时間不同因此再加時約30分鐘才告成。這次是最完美的。我給自己打99分。謝謝原創老師的視頻教導也是從過去不同視頻當中最成功的第一次。
恭喜你成功了,不过你烤错了呀。我影片里和description box都写清楚了。是烤箱用180c提前预热至少15分钟以上。烤箱热了再烤。
放搅拌好的面糊进入烤箱180c烤30分钟,之后在降低150c烤15分钟。
总共烤45分钟呀。
不是像你这样烤只是预热180c,只是烤150c:15分钟而已,怎么可能熟呢?看影片要仔细噢,跟紧每个步骤噢。

After cool, yes u can. Store in airtight container. But overnight in fridge will make butter cake abit harder, as tje butter harden, i like to eat them cold, but my mum likes to eat it at room temperature, so u can take out to thaw see which texture u like

HI Iwen, why some parts of my butter cake appear more moist or wet in colour? Can you advise what might be wrong in my baking?
If its wet at bottom, means mostly is your egg white meringue problem, overwhip/underwhip also cant. Overmix When add meringue into cake batter also will cause Meringue to deflate. Also cake batter must be baked immediately after mix well, too long also will cause meringue to deflate

大约要拿食谱x0.8倍。
温度一样,时间看你面糊深度,越深越久,越浅越短噢。自行拿捏。
如果面糊很深,烤很久,中间可能会凸出来噢

Hi Wendy, I tried baking this butter cake, it was fluffy but I hav a problem. The bottom part (as I cut) I can see is abit wet. Hope u can correct me, is it bcoz I mix the egg white first & leave it there never use immediately. then only I add the flour to the butter to fold in.
Yes might due to that, if egg white meringue has deflated will cause bottom layers to be dense n wet. Make sure to whip it last n use straight ahead

我的搅拌器力度很大,最大用2-3号打发而已(搅拌器总共5号),可是打发面糊/蛋白霜不建议全程都用高速,因为会导致面糊粗糙,烤出来也不美。到打发要好时改换最低速来除大气泡较好

Wendy, 请问你要怎么才能蛋糕底部避免卡油呢?谢谢
蛋糕底部沉淀很大可能是你蛋白霜的问题,打发过度/不够,都不能噢。
而且面糊翻拌过度也会导致蛋白霜消泡而沉淀。
面糊一拌好就要立刻烤,不能等太久,不然时间久也会消泡

可以噢。可以在葡萄干那里洒一点面粉,搅拌让葡萄干裹上面粉,再加入面糊,这样就不会沉
150C X 15 minutes。下次会小心,也会拍照示衆。試过多次只有你的做法最成功最滿意。

如果不要用白糖,放brown sugar代替可以吗?
不建议噢。有些brown sugar有molasses成分,口感不同

你可以尝试cake flour.
一定要加baking soda 和baking powder.
Cream of Tartar可以帮助稳固蛋白霜。你可以用白醋/柠檬汁代替。
记得用指定温度预热烤箱至少15分钟,热了再烤,用上下火设定,不开旋风,中层烤

你好,我一向来都是用菜油做蛋糕的,做出来的蛋糕很好吃的。但不知道为什么我用同个做法同个份量来做牛油蛋糕但菜油换成了很香的纯牛油来做蛋糕但用纯牛油做的蛋糕反而不好吃也不香,饼干也是一样本来都用菜油,但换成纯牛油后变成不好吃了,我真的不知道为什么可以教教我吗?
