For the gas pedal, maybe try flipping your floor bracket so it's under and behind the pedal, making the pedal's bottom go closer to the driver's seat? That may make it kick out and down far enough to allow the slot to fit on the end of the bar?
just checked my '78...the gas pedal bracket is indeed flipped; the pedal is bolted to the floor on the backside of the pedal, not the front side as you installed it. The linkage does go through the elongated hole in the pedal.

Which degreaser are you using/did you use on the hard to reach parts of the bumper builds? Looked like it worked better than anything I've been using...
Always a bit sad to know big red as to go 🚶♂️ it's such a unique build and it's actually a brand new truck . Love what u did with the Dash , u can aways buy a cup style astray and put a cup holder some where some cars have it like that stock . I really would love to see the dashboard powder coated maybe even in white but black would be the first option, would raptor line like u have in big get be a good idea ? I'm still with the white powder coat dashboard or places or parts of it with white . But there's lots of cool colors to choose but wanna point that there's not many metal dashboards and would look cool if was powder coated .
Looks like throttle pedal hinge should be bolted to the floor behind the pedal, not in front of it. The angle looks way off. The top of the pedal should be angled away from your foot, not towards it.

On the pedal I used an inexpensive latch for a lock bolted it to the the floor & the pedal ,nice hinged action ,works like a charm! You're welcome!

if you flipped the bracket 180 degrees around on the bottom of the pedal would it move the bottom of the pedal out/down and put that rod in range?

On my Mazda b2000 the gas pedal set right on top of that lever and I had a spring that would hold it against the lever.
I cruised rock auto once a week for a full 7 months for a heater core for my 72 Ford Courier resto and low and behold 1 day they had it

Try a 90' Toyota pickup for the heater core. I can get one for that
The gas pedal floats on that rod and hits the cutout on the back of the pedal thats factory.
