Stuffed Tuscan Chicken with Cream Sauce

  • Tuscan chicken can be cooked in different ways. It can be stuffed or unstuffed, with or without sauce, pan-fried or baked, skinless or skin-on. There are so many options but this is how we prefer to make it.
    INGREDIENTS
    Chicken, Dry Rub & Oil:
    1.2 kilograms (2.65 lbs.) chicken breasts, boneless & skin-on
    1 tablespoon Italian seasoning
    1 tablespoon paprika
    2 teaspoons onion powder
    2 teaspoons garlic granules (may also use garlic powder)
    2 teaspoons cayenne pepper
    1 teaspoon oregano
    ½ teaspoon ground black pepper
    1 teaspoon salt
    3 tablespoons olive oil
    Stuffing:
    70 grams Alugbati or Malabar Spinach
    8 pieces (60 grams) sun-dried tomatoes
    1 cup (112 grams) mozzarella cheese, shredded
    1 cup (90 grams) parmesan cheese, shredded
    300 grams herbs and spices cream cheese (may also use other spiced cream cheese)
    1 tablespoon garlic, minced
    Cream Sauce:
    3 tablespoons salted butter
    3 cloves garlic, peeled
    8 pieces (60 grams) sun-dried tomatoes
    60 grams Alugbati or Malabar Spinach
    2 cups (480 ml) all-purpose cream
    ½ cup (45 grams) parmesan cheese, shredded
    salt and pepper to taste
