Change the bed and the cooler side. Now you can easily open the cooler while in the bed and drain it . Also no worries on something flying over onto the driver .
The cargo area cover actually fits down with the spare tire beneath the cargo area floor in that model of Outback. If you’re not planning to use it regularly, it’s the best place to store it! You may also be able to fit some small, less used items in that space too. Have a good trip!

It goes crosswise, and I think you’ll have to pop up the two side floor panels to fit it in there, but when positioned right, it’s sunk down far enough that it fits flush. Pop both side floor panels back in and drop the middle floor panel back in place. Sounds harder than it actually is to do, there’s probably a video that shows it as well.
Have you noticed the really nice roof rack on top of your suv? It's great for putting a lot of stuff. If you invested in a type of cargo carrier you'd be able to put the chairs, tent, etc.,( btw, no neice needs to tent sleep in 40-degree weather while you sleep all snug in your suv). Plus, putting all that weight on something you just filled with air is only asking for trouble. Inflatables always spring a leak anyway. The way you're packing you'll find out where the leaks are sooner than later. Most likely, it'll be in the middle of the night. Come morning, you'll have a sore back, and your niece will be just plain sore at her aunt for making her sleep alone all night in a freezing tent.
@joanndavis4843 Thanks for your comments. I did consider a cargo carrier on the roof but I am very short and reaching things is an issue for me. My niece is an adult and chooses to sleep in the tent and prefers to camp in colder temperatures. The air mattress worked well for me with minimal issues in 4 weeks. Have a great day!
