Former atheist Günter Bechly is also a palaeontologist, would be an interesting guest as well 😊 he curated a huge Darwin exhibition in 2009 (he was an atheist back then). He knows a lot about the fossil record and the waiting time problem. The fossil record is full of sudden changes / explosions whereas Darwin claimed "nature makes no jumps". Today, Günter Bechly is an old-earth ID proponent and a Christian.

Would death predating humans be a problem? It depends on what you mean by death... physical death is one thing but eternal separation or soul death is a completely different topic. The reconciliation of "death" before the human fall is that the death promised in gen 3 is soul death or eternal separation (depending on your view of hell). If animals don't have souls and soul death is what genesis is talking about, then animal death prior to the fall is not a concern.
Jeremiah 4:22-28 speak of a time before man where civilization existed. Ezekiel 28:12-17 speaks of the fall of lucifer 2 Peter 3:5-7 speaks of a flood where all died and this is not Noah's flood because it did not cover the mountain tops and all died, in Noah's flood 8 were saved along with the animals. Isaiah 45:18, Gen.1:2, Ps. 104:30 and various other text (sorry you can't teach Bible lessons in a comment on UA-cam) yes other verses flesh out more of the story. Let me encourage you to do your own research. God lovers will enjoy working thru the scriptures and we learn so much. Remember you are in the world but not of the world.
The Bible says that the Earth and the universe is less than 10,000 years old. There is no way to get around that fact. Prof. John Lennox is most likely Cognitively dissonant. Although John Lennox's arguments against atheists in general are pretty good, he is in denial about this fact.

That doesn't mean Jesus' body consists of wood or metal. Jesus also says He is the vine, but of course there are no leaves on His body... the Hebrew word for "day" (yom) in Genesis 1 can also mean era. Btw, there is an unspecified time gap between the beginning of the universe (Genesis 1, 1) and the first day of creation. I also highly recommend the works of physicist Hugh Ross, for instance. You want contextual proof that God created the Earth and the heavens in 6 literal days and rested on the 7th day: Read Exodus 20: 8-11 8 "Remember the Sabbath day, to keep it holy. 9 Six days you shall labor, and do all your work, 10 but the seventh day is a Sabbath to the LORD your God. On it you shall not do any work, you, or your son, or your daughter, your male servant, or your female servant, or your livestock, or the sojourner who is within your gates. 11 For in six days the LORD made heaven and earth, the sea, and all that is in them, and rested on the seventh day. Therefore the LORD blessed the Sabbath day and made it holy. If this doesn't convince you, I don't know what will. Also, the Church throughout all its history including the early 1st century church has always been believed that the Earth and the universe were created less than 10,000 years ago. If it is easy for you to believe that Jesus Christ is a man with an XY chromosome who was born through a virgin woman and if it is easy for you to believe that Jesus Christ was raised from the dead (which is scientifically impossible), then it should be easy for you to believe that an old earth and an old universe was created less than 10,000 years ago.

However, I accept that it's very likely more than 6000, and this is based on science. I am a Young Earther because of science and not the bible. But the one thing that I never hear people mention, and is in part why I reject billions of years, is because I believe the dating methods are indeed flawed. I could say quite a bit about this, but I would point out that we have several example of known materials that were dating using K-Ar or Ar-Ar dating and given dates millions of years old when we know they're not (Hualalai basalt, Mount Etna basalt, Mount Lassen basalt, Kilauea basalt, Mount Stromboli, Medicine Lake obsidian, etc). Additionally, radioisotope dating methods rely on three assumptions: 1. No daughter atoms or decay products were initially present, 2. That it is a closed system and nothing can enter or exit the system, 3. The rate of decay has always been constant in the past. It's my understanding that the examples I gave of wrongly dated materials is evidence that assumption 1 is false. There simply is no way to know whether or not all of the measured daughter atoms were from the in situ radioactive decay of parent atoms. U-Th and U-Pb dating face the problem of failing the second assumption. For anyone interested in learning more about this, I would recommend the book Contested Bones as it cites dozens (if not hundreds) of studies and other evidences that support the above.
Everything Answers in Genesis believes and asserts stems from the particular idea that all death, not just human death, began after the Fall (based on their interpretation of Romans 5). If Adam and Eve were only immortal because they were inside the Garden and had access to the tree of life, and meanwhile outside the Garden the earth was evolving and changing as observed in science, Adam and Eve could have been in the garden for an unknown/incalculable amount of time.
I give a pass on "millions of years". All creation is 6000 years old, not gap theory. The Bible is the truth. Let God be true, and every man a liar, including Dr. Mallon.
So I might slim this later, I already have firm opinions on this topic. I don't agree with everything else the guy teaches, but Kent hovinds theory is solid! Look him up! He has very solid and detailed, science based answers. And he's debated all sorts of other beliefs and not yet had a shaky answer to anything.
