Damn, this guy is an inspiration. He seems like a guy with no excuses, especially doing that commute from San Antonio to Austin. Even after losing his job he worked hard day in and day out. Opening his own business is a huge accomplishment
You can tell how passionate this guy is about the food he makes and it shows in the final product. I live 15 mins away and just tried it for the first time today. Everything was exceptional. Got the brisket man loved that bark , sausage , mac n cheese and coslaw was top notch. Its a must try.
I love watching these videos. We are all products of our environment for sure. I'm from northern California and I love bbq myself (bbq in this area is really bad) I smoke with wood from wine barrels and have had great success and I work for a winery so getting my wood has been easy. I just do it for fun just like you did and continue to do. When people ask for "the secret " I always say it's patience as well. Love what you do and be passionate about it, very proud to see you also incorporate you Mexican flavors into this. Food looks delicious and if I ever make it your way I'll be stopping by.

Although, I have had bomb ass beef ribs, my dad just made a prime rib, and I had the runs on it, and they were awesome, and some guy who I knew who loved to Florida made some bomb ass beef ribs. Just here in Cali they usually blow, and pork is usually safe.
This place is awesome the best in San Antonio hands down. The brisket melts in your mouth. This place is so popular they sell out daily ,so you have to go early or you don't get any bbq. If you ever is San Antonio you have to check them out.

"Beautiful" Thank you so much for sharing this great video.. I had the please to be around a great Bar-B-Q King in Dallas Texas... My Uncle Blackie had two of them... Bob Whites Bar-B-Q and The El Rancho Restaurant in the 50s and the 60s and I was there in the 70s... Everything was made from scratch... I learned a lot!!! When he died... he didn't give his kids the receipts... all they wanted was money... he gave them to me, because I would work in the back in the summers and leaned the trade.... YUM... I am thinking seriously starting a food truck and selling my Beef Jerky... Thank you again for sharing this video... it brings back a lot of good memories.

Steakhouses serving top quality steaks will pair their perfectly cooked amazing steaks with a proper sauce and it's all copacetic

For those of you who do not now, Esaul worked for John Lewis (this is mentioned in the video). This was at LaBarbecue in Austin, where John was the pitmaster. LaBarbecue was started by LeAnn Mueller, after kicking her brother John Mueller out of the business they had together. Both Mueller's are grandchildren of Louie Mueller (their older brother Wayne now run Louie Mueller Barbecue in Taylor). Before that John Lewis, worked as pitmaster at Franklin Barbecue. John is now running his own barbecue place in Charleston. From the look of the meat, it looks like Esaul definitely knows what he's doing.
You forgot to mention that Denise Crockett was Louie Mueller's third grade teacher... Seriously though, these connections mean nothing to 98% of the people reading these comments unless you can explain the significance
