For reference, I was there the day this was filmed. The line was 3 hours and 15 minutes, and I had a great time that day. I talked to people, drank some Lone Star beer, and took pictures. Met Benji, and had an awesome day. Made friends with the guy in front of me and his family from Chicago.
everybody knows that the best bbq is john's bbq and foot masage

We all know hes right
A fellow man of culture I see
I like that he appreciates the barbecue and culture. But as a native Texan, its strange hearing a brit using phrases like "much more sophisticated culinary expedition" in discussing deeply southern dishes
He sounds boston or new jersey.
@Craig Sundaram if only someone would make a thing on the internet to find stuff out about a subject by typing a simple question about said subject.
Why is it strange? He explains his reasoning. In modern barbecue joints, such as Franklins, there is more of an emphasis on the technique and science in achieving deliberate results and maximizing the good barbecue has to offer, while minimizing the bad.
He's some weird mix of American and British
I can assure you as a brit that we don't come across as pretentious as this guy haha
Nick is a great man, he is a good presenter who obviously cares about food. highlighting some of the lesser known amazing foods of many states, especially my home state of Texas. Who cares about is past as a skinhead, he has renounced it and apologized. Everyone makes mistakes as a young adult, as we are easily indoctrinated into ideologies and beliefs. He stepped away from it and is now doing great work as a meat eaters spokesman.
G
nobody knew about his past, or cared about it, until you brought it up. seems like a passive and sly attempt at slandering and ruining the rep of a host / food journalist.
Jordan 7
@@JackJackKcajify you are very stupid
@@JackJackKcajify Mate, literally look a few comments down and people are still calling him skinhead. Jordan is completely right.
The last guy must be high...
OH YES most definitely. he was stoned for suuuuuuure.
AF.
Exactly right!
He's also in the Chili episode and he looks high there as well.
I said the same damn thing.
Iron Works will always hold a special place in my heart.
Loved this video. My only quibble with it as a Virginian is that pulled pork has its roots in Virginia even though our Carolinian cousins are better known for it in this day and age. If you ever make it to Williamsburg, VA, I highly recommend Pierce's pit barbecue. Great episode and your passion for good delicious food is very apparent!
I'm originally from Austin and ya ain't wrong. And pulled pork is so good it needs to be shared! Recently had whole hog bbq in at Rodney Scott's in Charleston SC. Dang. That was a revelation. Got a personal tour of their hog cookers by the man himself. Great guy. Amazing food.
im from the UK, never seen BBQ like this. really looks amazing
You don't have to wait in line--- just order ahead and you get to skip the line (remember this for after COVID). Franklin BBQ is the best- if you plan ahead, you don't have to wait forever. There's a line for a reason.
Nick you're great. I'm sick of those people that act like they are flawless and judge other people cowardly behind there screen ...
I love this guy what a fantastic host, his knowledge base is unbelievable. I love how he covers all facets not just the meat but the patina of the place that serves it
FINALLY someone mentioned House Park, the ABSOLUTE BEST BBQ in Austin!
Great job Nick. Because of this episode, I have 3 more awesome places to visit when I go to Texas.
I really don't get why people keeps saying that he seems cocky.
He's a former skinhead, fuck him.
+Bruh really? Where did you get that info from?
+Casey M www.thewrap.com/vox-medias-eater-blog-suspends-editor-over-past-life-as-skinhead-report/
Other than the fact that he used to be a skinhead in 1980s,I still don't see why people keeps saying that he's cocky.
About the photo that is uploaded to google+ in late 2012,I don't know if it's really from 2012 since he looks drastically younger that particular.
I didn't even recognise which one is nick.
But I digress.
Anyway what can be better than real Barbecue?
Don't really see the reason for the downvotes - I do prefer Lucas' personality maybe but they both deserve merits and know their stuff. pls no bully
Because this guy was a skinhead
Wow. True or fake, this review and tasting was fairly accurate and entertaining. We should trust eater with their choice of host even if thats true ( wich would be a shame ).
ATW Tech Yeah Yeah, done some research myself but it seems he's trying to deeply forget this episode of his life. If he's over it, great, if he's lying tho', anyway, I'll trust Eater to make the right decision as them only can decide.
Embarrassing strawman argument, skinheads weren't dictators that killed millions of people, they're just racists.
+Jernau Morat Not all Skinheads are racist. Quite a few are anti-fascist.
Wait...did he say the burnt end is the flat of the brisket that they chop off and refire? I just finished watching Aaron Franklin's video and he says the burnt ends come from the "point".
It's from the point, and Nick knows it very well, he just goofed here.
@@kevenheinz6962 Oh....so you speak for him. Check! Got it!
I came to the comments to see if anyone else picked up on that
@@GlassHalfFull10 me too and so they did.
Austin TX, my dream food destination. Hope I get to visit someday.
meh
4:11 Not the flat of the brisket. Burnt ends are from the point.
I have a feeling you have to wait for them now.
the photo of nick taken in front of iron work is pretty dope. I Think he was a cool teenager back then. i am so curious about what he have been doing in his youth.
“It’s held together by a mere rumor of collagen”. 👍😂😂😂
As an Austinite on Ironworks - This is a place that the corporate convention center herd goes to on their lunch break as it is across the street. It sux compared to the other Austin BBQ places. La BBQ is great though. Many other great local bbq places could have been visited here instead of Iron works. Styles Switch, Coopers, Blacks, etc... the list is long.
At 1:18 you can see that Ironworks also sells cakes in the background
1:18 she T H I C C
Had to go back and pause that. 👆
😂 Nothing escapes the eye of UA-cam viewers does it 😂
She ain’t got no business being that thicc
Came for the bbq stayed for dat ass
Awesome video. Love Nick and am very glad to see him back.
I was in Austin in January. I went to the Ironworks as well as Rudy's , which is a chain across the region. I went to the Saltlick and a couple others in Lockhart.
What was your favorite place?
@@mmholling87 For atmosphere the Saltlick would be hard to beat. There was a fire/smoke pit near where you enter and above the wood are these sausages absorbing the smoke. There was in Lockhart, in the town centre, one where the pitmaster was really friendly and let me get up close and then took me for a tour.
@@rickrayn thanks for the response. I have tried a few places in DFW but I would like to try Franklin's, Black, Kreuz, and the Saltlick.
Solares' prose once again blazes hotter than any of the pits featured in this video. I have a viscous coating of tang on my tongue just thinking about the next episode of Meat Eater. #I'mOnTeamSolares
My opinion on BBQ is that variety is the spice of life. I have not spent time in Austin, but I know in KC, I've yet to have bad BBQ. It's wonderful to try different people's 'Q and experience the differences.
This all looks incredible to me.
KC bbq is all covered in a sweet sticky sauce, like it’s trying to hide something. True central Texas beef bbq has no sauce. So you have to get it right.
Thanks a million for relieving me of the 5 hr. wait, will also check out the others posted.
Of course there are other great bbq places. But Franklin's is the King of bbq. Plain and Simple. Been to a lot of places and this one is hands down the best. And for all complaining about the long line/wait, that's the fun part! And if you don't want to wait, then you don't have to eat there.
Yes!! Welcome back Nick!!
Burnt ends come from the point. The flat doesn't have enough fat to take on any additional cooking. The flat is best for slices of lean brisket.
I love the comments that Nick Solares gives. Fun guy to listen to, sounds like he knows his stuff. I'd like to see more of what he has to say. That camera though...does it still take film? Can you even buy film these days?
I saw this place at Chef movie. Seeing chef casper eating that thing makes my mouth watery.
The sausage of central Texas is beef based. However there is a lot of pork sausage in North and East Texas. Each region has its own spin and influences.
yes i'd like to torture myself by watching this at 3pm with my stomach so empty like my soul
I am from Atx Born and raised ..You are been shown what is popular because of bunch of drunk,hangover-ed hungry people, that leave six street and go to these establishments eat the food and swear is the best! And brag how good it was to outsiders! Especially like Juan in a million Tacos here in Austin ..Regular street Tacos people waiting in lines, its Ridiculous Anyways Back to the BBQ
Truth be told! So many better Pits here in ATX and the surrounding towns.
There is no best ..So many pits and they all have their unique taste!
What stands them out ,is the unique sides and home made desserts! If you are from Atx you know what im talking about!
And the ones shown above certainly do not have that!
You sound like you know what you're talking about. I think I want to know about any places you might recommend, on the off chance I ever visit Austin (which is 10000 miles away from where I live, so it might take a while). So if you have any recommendations, let us know.😊
I was in Atx in March and my buddy took me to Stiles Switch BBQ and it was great, we didn't have time to sit around and wait for Franklins and from what i have heard from locals it is good but hardly worth the wait and over hyped.
@@MrPig208 There are lots of great places to go in and around ATX for BBQ. Franklin's is right at the top of my list everytime. However that isn't always practical but it is a treat. Franklin's BBQ certainly isn't over hyped. People that tell you that have never been and trust me there are LOTS of people that have never been who think they are expert's.
He described a burnt end incorrectly. A burnt end comes from the point of the brisket. Usually the first 1" slice is taken. Which is then cubed into 1" squares.
Yeah. Although after spending 4 years in the South I swear the definition of a burnt end changes based on the region you're in, they all make them differently sometimes even changing which type of meat is used!
Just a correction to your statement about Texas mostly serving all beef sausage. That is primarily true outside of the "Golden Triangle" between Austin, San Antonio, and Houston. The Area between 290 and I10; however, is influenced primarily by Czech and Polish immigrants that arrived between 1850 - 1900 and are known for pork/beef blends and even in some cases 100% pork sausage, especially during times when beef is expensive. Rule of thumb if it's a Barbecue joint ran by Central Europeans it's more than likely going to involve a beef/pork blend in Texas.
The guy serving the mixed plate at House Park has been working there FOREVER.
I've said it before, the hostility towards Nick Solares is irrational.
He's a skinhead with hateful political views
+ufinc Not relevant to the job he is doing, which is tasting meat.
+ufinc that was decades ago. And he apologised sincerely multiple times
was a skinhead
no it isn't, if you've seen previous episodes you'll notice how pretentious he can be. I do agree that he gets too much hate though
1:54 my favourite part of the episode
Austins best bbq is sam bbq in east austin.martin luther king and mickjager used to adore that spot
Tremendous. Nick, your videos are appointment viewing and a true guilty pleasure. Eater is good, but you're the star.
I'm a 4th gen Texan and, I would be honored to eat Texas BBQ at just about any BBQ Joint in the State. And just about have. 90% are just as good as Franklins. It's real easy to tell. How crowded are they at lunch and dinner. How long have they been in business. The more the place looks like the pits haven't been cleaned since Carter was President the better. Also I have never eaten at a Black BBQ joint that wasn't to die for. In the last 20 years I've eaten at two joints where I would not go back. Both were less than a year old. If I lived anywhere but Texas, I'd just be a Vegan.
Burnt ends are typically made from the point not the flat. GREAT video
It really varies tbh but more from the point
What about John Muellers , he worked with Franklin and La BBQ !!! And the food is awesome !!!!
Do try all kind of food. Try Sushtronming if you can.
Great show, nick. The show is very informative.
Excellent video about Austin BBQ....great job
When I want BBQ in Austin, I stop by IronWorks!
Background music on 2:30 sounds like it came straight from pokemon
Good Video! Austin is legit for BBQ and La Barbeque is outstanding, though their line can be more than an hour too. Have to go back and try the other spots here.
Texas perfected BBQ and then decided to serve mac and cheese with it. Imagine that 😅
It's great to see nick back! +eater
welcome back... we all got a past
You guys deserve more viewers. :[
We know! Spread the word, thanks for watching!
+Eater just shared this video :-)
+Eater
Where's Pelin?
Eater I would like to hear from you the recent blasphemy regarding Brooklyn bbq
He did not mention Stiles Switch BBQ. Best BEEF ribs ever. On another note, if you order Franklin's months in advance, you can walk up an pick it up, no wait. You pay when you pick it up. You just have to know what you will be doing months in advance. Not a bad deal.
I’m from Austin,Texas love my city😍
La Barbecue is my favorite with Franklin's being a close 2nd. I was so happy when La Barbecue opened up near my vacation loft. I can't leave Austin until I get some food from there. You can't go wrong with either place. Wish we had something similar to that up in New York City. Virgil's, Dinosaur, Hometown, Dallas, and other BBQ places in Manhattan/Brooklyn can't compare. If you're looking for a vacation spot, just going to Austin for the BBQ is worth it to me. Definitely check it out.
Southside in Elgin. I live in Austin but the 25 minute drive is worth it.
Meat isn't my favourite thing to eat but this video is making me so hungry.
Go up 183 about ten miles to Big Cat BBQ in Cedar Park. Their brisket is best I've ever had, and I have tried all the ones mentioned in this video.
The burnt end looked like it came from the point, not the flat
You guys have to go to Don's BBQ on 969. It is one of the best in Austin.
Burnt ends are usually made from point not flat.
I had it once and never again I got really sick and was in the hospital for 6 months. The dr took a stool sample and found bacteria on some left over food also in my poop. I'm not the only person this has happen others have pass after eating here. Stay safe and avoid a $350,000 hospital bill
If you want BBQ Beef Back Ribs the place you want to go is Terry Black's BBQ in Lockhart Texas...!
Black's, Smitty's, and Texas Pride in Lockhart. check em out.
And Kreuz
I used to work at House park when I was 16 , definitely some good bbq but it was the best job I ever had
Best
Damn the brisket at 1:17!!
Whoa! Check out that SNAPBACK at 1:18
does franklins not have lines anymore? do they still sell out?
Oh why do I torture myself watching these mouth watering bbq videos sigh... my kingdom my kingdom for great brisket n ribs.
That guy at 7:00 was high as a kite
He was born in UK and moved to US. I stayed for years in London and it influenced my English somehow. So yeah I kinda understand about the accent. But the pretentiousness is strong with him. Jmo
you need to work on the sound, it's messy, but I love the content!
As a Brit living in America, what's been your favorite individual American dish? (I hope I'm not wrong in assuming the britsh-ness, but I'm a guy from NJ who has really taken interest in the differences between American and European culture) I really enjoy your videos by the way!
An insane experience to eat Austin bbq
You've just missed so much here. Micklethwait, Stiles Switch, Brotherton's Black Iron are as good or better than the ones listed here and even less likely to have a line. And, on Saturdays, Micklethwait usually has free local craft beer.
Completely agree Scott
I'm from Texas and i've NEVER been to a BBQ place that didn't have sides.
I can’t watch this and not get up and go eat something. It just makes me too hungry
omg, im watching this right before lunchtime and its torture.
5:59 zach from buzzfeed spotted
idk about the burnt end statement though
P J yeah aren't burnt ends made from the point, not the flat?
i like the explanation of BBQ I.Q.
“I might even tell you about it” well I’d hope so... it’s your job.
La barbecues beef ribs are UNREAL
This guys pretty informative i like it
Proud of your boy
Thank you Nick! :) These features make me soooo hungry!
Reads title but 15 seconds in he says there’s a 4 hour line you have to wait in🤣
The man explains well the food he eats.
1:59 damn man I don't know about you but I think them ribs been left on abit long 🤣
5:18 brisket looks good
that last dude was so ripped lol
Nick. Argentina. We're waiting.
Last dude was stoned af
Any bbq in Austin is good honestly.
That brisket looks so damn tender and juicy. I love it.. My favorite bbq meat and I'd never wait in line for 4 hours when that good looking meat is just around the block or so.. Plus i saw where a plate at Franklins is over 100 bucks or more
@Daniel Courter oh i know its expensive but here in my area of Mississippi its not as much as out west. My brother smokes them all the time. I just wouldn't wait 4 hours or more in line when some that looks just as good is close by. Also i saw a comment on another video where a guy pd 1500 for 4 platters of different meat there.
