Natives are the ones who pioneered it. Mexicans and blacks just copied them. The name “barbecue” comes from the native word “barbacoa” which is how the natives used to cook meat really slowly by digging a hole in the ground and covering it with cactus leaves. And it started in Texas that’s why it’s called Texas barbecue.

as an indian living in texas i can say i feel more homely in the south than in the north like new york or chicago, something indians and southerners share is strong family values and heritage.. i live in texas by the way....
Friend, you should have traveled the whole state. Tennessee is a melting pot of different styles. I grew up East of Nashville in Mt. Juliet. The Masonic Lodge BBQed every Independence Day as a fund raiser. We cooked shoulders over hickory coals. Covered with cardboard. Stabbed the meat with long knifes and rubbed salt into the cuts and on the surface. About 18 hours on the pit. Different sauces different years. Sometimes vinegar based, sometimes ketchup based. One year we even had a crazy black sauce with fine-chopped onions in it. I believe that’s a Kentucky thing.
Well, they don't give credit because it really isn't true, the spanish and the Indians coined the term for cooking over green wood called barbacoa, here, this from the Smithsonian: The first indigenous tribes Christopher Columbus encountered on the island he named Hispaniola had developed a unique method for cooking meat over an indirect flame, created using green wood to keep the food (and wood) from burning. Reports indicate that the Spanish referred to this new style of cooking as barbacoa: the original barbecue. As the Spanish explorers who followed Columbus turned their expeditions north, they brought the cooking technique with them. In 1540, close to present-day Tupelo, Mississippi, the Chicksaw tribe, in the presence of explorer Hernando de Soto, cooked a feast of pork over the barbacoa. Eventually, the technique made its way to the colonies, traveling as far north as Virginia. And here's the whole article: www.smithsonianmag.com/arts-culture/the-evolution-of-american-barbecue-13770775/?no-ist
***** My retarded article is from the smithsonian, there's literally no better source, if you don't care about it, you never cared about the truth in the first place, which is endemic of a professional black victim. Chris columbus did indeed discover america, of course everybody knew once he arrived that they weren't the first on the land, the king of spain knew it, the sailors knew it, however he did discover it, because the Indians didn't know where they were, didn't know what the world looked like, they had no context--the vikings were in america before columbus yet they didn't discover it, why? Because they didn't place it in context. Context. Placement in the big picture...that's discovery.

Zack=When your truly at the top of your perfection but still anxious on what a person off the street says about his bbq. You don’t find that around the corner.
Yes we are. Tennessee is called the volunteer state. Do a little research on it. A year back we had a couple tornados touch down and mess up a pretty big area. Storm chasers from different states came to help cut trees and stuff but when they got here there was nothing left to cut. We love thy neighbor down here and help one another.
See how great people from the southern states are, super friendly and very humble. It's a shame that they are usually represented by the media in such negative way. The real soul of America.
Its like that in Sweden too. The country folks are portrayed as ignorant and prejudice by the media and politicians in the cities. Divide and conquer. Old as time.
So wild how an Englishman comes to the south to try BBQ. The difference in dialects is enough to watch. Funny how all the locals cleared out as soon as he sat down lol. Great lookin BBQ
Dude to everyone saying the guy at the end is somehow racist , they are paid employees. I used to serve for a high volume restaurant, If they're covering 3500 people in a night, those servers are probably making at the bare minimum $600-$700 on a given busy day probably more most nights. Plus whatever hourly wage he's paying them. That's over $50/hour after taxes and thats if they arent just pocketing cash every night. You can make a career out of that pretty easily especially in the south where cost of living is cheap. If you have a 100k corporate job you're making roughly $500/day. He's given those lucrative jobs to black people, not white ones. How tf is that racist..
i was about to say i didn't see any uncle tom references. Although reverse racism does say that his hiring mostly black people is a cover for his racism, but there's also alot of black people in the south- who knew! So of course he's going to have people of color working for him( this is an agreement and affirmation). And as an aside; I'm a white guy, more pinkish beige, but I've never seen European-America on a map, and I'm also not Caucasian because i find that term in bad taste, the classification being product of white supremacist eugenic "research". Its weird to think that if you're born here as a white person, you're white, but if you're anything else you are considered an ethnic american. Compared to Native indians( people who live between the earth and sky), we're all ethnic.
I didn't see anything racist about what the last guy said. I've watched a lot of these types of videos and you rarely see any white pit masters or restaurant owners acknowledge the contribution of African Americans.
Thank you for saying that. Everyone is not racist. He was paying homage to African Americans being the first to cook good BBQ..i respect him for that my uncle own a BBQ restaurant and I can tell you they make good money Especially on the weekends

It makes me so happy that there are people out there with this passion. Its more than food.
Zack=When your truly at the top of your perfection but still anxious on what a person off the street says about his bbq. You don’t find that around the corner.
7:55 he loves his job for sure
pure americana! cannot get enough of this episode.
Are people genuinely this nice in the American South? Seems amazing.
I just ate...hungry again. Need to recreate this road trip
Lovely people.
I wanna see all of them and give them a big hug
500 a day....in Germany you get only 1000€ a month. Maybe i have to go to america where you earn so much money its crazy lmao
What an amazing journey. The people you met are just amazing and so talented. You can see why people in general fall in love with the South. I just hope I can experience it myself in my lifetime. made me envious.
What a great episode !
