    Another great option is macaroni and cheese with fried ground beef, and an added vegetable. My mom always used corn or peas! It was delicious!

      When I make Mac and cheese with ground beef, I add a can of diced tomatoes to it. It has great flavor sort if like a goulash

      Times haven't hit certain ppl yet. I've always lived on the edge. I had breast cancer twenty years ago hard to believe but ever since I've walked on the edge. Couldn't seem to come back. Now it really hits me. All the division and hate is our true enemy. I've just really Isolated and pray. God is all I've got.

      G'day Sharon! I'm from South Eastern Australia. I wanted to say hi I'm so glad we have UA-cam and the internet to chat to others around the world and build up each other's faith and encourage each other to stick close to God. Even before the pandemic I was a homebody and because of chronic pain and other health challenges I hibernate every winter. I only go out to go to doctors, shopping or errands so I spend many hours doing crafts or reading or jigsaw puzzles to keep my brain working.

    My mom went through depression and taught me a lot about frugal meals. She wouldn’t waste one crumb. She didn’t make many casseroles but we ate goulash a lot which was our clean out the refrigerator meal 😂

    Historically many of the food we think of as “comfort” food was really just good, nutritious, and inexpensive.
    This is the food that got us through the Great Depression and the rationing of WWII.
    Macaroni and cheese, Ham casserole, Tuna noodle casserole and many others. Becky often calls it Struggle food. This is the stuff that fed our parents and grandparents as they grew up.
    We have made it through before, we can do it again. God bless everyone. Thanks Becky for the wisdom and love sprinkled through each of your videos.

    I try to keep celery seed to add to potato salad, egg salad and casseroles when I don't have fresh celery. I've learned to mix the seeds in with the wet ingredients a few hours ahead or overnight to draw out more flavor.

    Times like these kinda remind me of what my grandmother told me about the depression… Prices so high… Food scarce… everybody ate out of their garden because they couldn’t afford anything else.     I used to work at a pizzeria and they al dente cooked their pasta ahead, portioned it into ziplock bags and froze it. Daily, sauce was simmering in a pot on the stove. Every order of spaghetti noodles was microwaved from frozen, ready in 2 minutes, a ladle of sauce over and quick as that. Perfect every time.

    Becky , I had told my wife many times watching your videos that your cooking reminded me of my grandmothers cooking . We ordered your cookbook and lo and behold you grew up on Gum Log . I grew up on Crane Creek just a few miles away . I have been to Many Forks Church many times. It was my grandmothers home church .     I know you have a ton of fans that keep thanking you for your videos. But, I truly appreciate all you do. I was looking for depression recipes when I came across your videos . I love them all. I am not a practicing Chritian but I even enjoy your Bible quotes. You are not judgemental, you just encourage people to be kind. And the recipes are fabulous. My MO.       Oh Miss Diana, I'm not on SS but our family recently went through a job loss and the new job has pretty much cut our income in half. Yes paying bills is a struggle, but I've learned to look for deals. I plan my trips according to how much gas I have or may use.
      I've learned that dollar general has some good deals, you can buy something for a dollar and get a$5 off a $25 purchase for Saturdays. They still have those (Dak?) canned hams for $3!
      If you have an Aldi near you you can find deals there too. I was able to find cream of chicken/mushroom soup for .58/can. Some of their spices are still .99. A 5# bag of flour is $1.56! Sugar about the same.
      Don't know if you can or garden but we do. I've learned to let nothing go to waste.
      I freeze my carrot, onion and celery scraps to flavor a broth for soup. I just re-use the freezer bags since I'm putting the same things in there. Been freezing chicken bones and fat for the same reason.
      Planning on making my own lard out of pork fat too.
      The Lord does provide, we just need to listen.

    I work in healthcare. When COVID hit in 2020, I was laid off later that year.
    I took my time away from work to learn basic cooking skills, help homeschool my nephews, be more self sufficient.
    The Lord has recently given me back my old job but at even higher rate! I am excited to be that shining light and bring people closer to God through my peace and joy 🥰

    My mother had to feed 8 children and a hubby so I learned a lot from her how to stretch food. She used to think pinto beans (slow cooked with a ham hock) and buttered bread was comfort food! I have often wondered about people who say no one cooks in their home-what do they eat? Thanks Becky for another great meal idea-keep 'em comin.     I love your cooking videos, because I'm not from the south (I'm Hungarian, Russian) but my mother went through the depression era, so with 6 kids she always cooked to ( like you expressed) spread it out.     You mentioned crumbling crackers on top. I remember back in the 70's, making tuna casseroles. I would crumble up potato chips and put them on top, they gave it a nice crunch too. Thanks for reminding me about casseroles. For people who have instant pots, I've made mac and cheese in one and put broccoli in it. Can cook the whole thing in just a few minutes.

    It was fun to watch you making a casserole while I was eating shepherd's pie made from my left over chuck roast. Casseroles are so good and easy. You could make one every day of the week and never repeat yourself.

Times were hard when I was growing up and I watched Mom fix a filling meal from almost nothing. I learned so much from her.     I wanted to show your saying, do it what you have. Remember, I am Male, 78, cooked and baked a lot as a teen, done little until Wuhan virus. I started with a pound sausage, browned, took out about 2/3 for later meals. That works for me, maybe nobody else. Browned it, no milk, I don't like the taste of canned, got out a qt pack of dry milk, didn't have a jar, used a 54oz square lock top container, new thing for me, shaking in a larger container mixes it better. Missed the butter. Put elbows on to cook. Put in fluor and browned it with the meat. Wanted broccoli and cauliflower, have but frozen too large florets, microwaved a partial peas and carrots bag that would soon be in freezer too long. Got the cream sauce and meat ready, put in mac and vegs. Have shredded cheese but have a partial pack of Aldis cheese melt that is aging, I put that in and did Steve top. Looks like 8 to 9 meals. My wife passed away, I live alone. I eat one now, two in microwave bowls in the refrigerator, the rest in bags in the freezer, I use cheap sandwich bags, put them in a good gallon bag and label with a sharpie. I am learning tricks from you, some from my sister, and some that I make up. Thank you. God bless.

    Everything you said, especially from 13.48 onwards made me feel so peaceful and hopeful. Food prices are through the roof here, but old fashioned wisdom WILL get us through. I made a cheesy casserole tonight with leftover bits of roast chicken legs (one kind of meat that is still affordable here) from the weekend, macaroni, spinach and green onions from the garden, and frozen corn. I will learn how to make your bread, so that I can save on that too. Bless you for what you do!
