Thanks Becky. I grew up on sugared raw onion and toasted Wonderbread. Also fried baloney, hot dogs, rabbit, squirrel and catfish. My folks were shanty Irish dirt floor poor. I am ever grateful for my dear mother making creative food for 4 hungry kids. Made it to 83 so po-folks food never hurt anyone. You are blessed.

I'm old enough to remember Dad bringing home potatoes in 25 lb sacks. As a child I never saw them packaged any other way. I also recall that no one ever called meals like this 'poor man's food.' We just called it delicious. "Thanks Mom!"

      Hello James !
Back in the 1960's we had a root cellar under the house where I grew up.
There were sacks of potatoes, cabbage, carrots, swede, and onions in there. Plus shelves full of home made pickles, jam, and fruit syrup.
My frugal mum was an exellent cook. She'd bake 4 large loafs of brown bread every other week.
This, plus mostly frozen meat, vegetables, and fish, got us through the winter.
(Wich can last for 8 months here...)
      Stay safe and well.
      Love from Norway 🇳🇴

Well, the supermarket vegetables are scrubbed clean, and mostly wrapped in plastic.
As a chef I find this more than just a little annoying. So I shop from market stall holders, when ever I can.
The plastic wrapped stuff prompts you to consume even potatoes within a few days.
      Or they start sprouting !
Buying in bulk from your local farmer however, is a different matter. The root vegetables, leeks, and potatoes still have their dirt on. Wich keeps them fresh for much longer.
If stored in a cool and dark place.

This is also really good with scrambled or fried eggs. In our Latino household, we used to have sliced hot dogs, diced potatoes, onions, drained leftover beans and scrambled eggs in the morning, often rolled up in tortillas. Still something I make for my family and it's so filling!

Thanks for sharing this recipe! Made this all my life, one of my comfort foods, but use kielbasa (smoked sausage) which costs about as much as hot dogs and tastes 10 times better. Usually I put the potatoes whole in the microwave, take them out when they're done (4-8 min depending on size) chop them up and fry everything together. I fry it in oil and add a little butter at the end for extra flavor, along with salt and pepper. Delicious, filling and doesn't feel "poor" at all!

The poor man's meal has been a strong presence for four generations now in my family. During the depression my dad would feed a family of 10 with 3 to 4 hot dogs and potatoes. When I was growing up, he made us the meal and we thought it was his original recipe and so good. He then shared with us the origins of it. I raised my children with the familiar poor Man's meal also. Now my grandson is familiar with the origins and the history of it in our family. Since he was very young, he was interested in recipes and cooking and we tried to have history through food. He has always researched recipes and made grocery list along with helping me cook. We visit many countries culture through food and last night we had a Scottish recipe. Around the world with food and through Time with the history of recipes. Thanks Becky for her bringing these recipes to light with the young people who have no idea how to stretch a dollar. In today's times, we need to teach children and grandchildren how to stretch those dollars!

I swear that is why bisquits and gravy were invented: to stretch meals with good taste. My mother's people had a very hard time during the depression. She picked cotton for 20cents a hundred weight and it took a long time to pick a hundred pounds of cotton. Grandpa had gotten his arm cut off in a lumber mill so he wasn't able to do much back then. My mother could cook more with less than anybody I ever knew. And it was so good. We need to teach this new generation about old times and how they managed to feed large families on next to nothing. A lot of grownups and kids today know nothing about managing when times get hard.

A friend of mine was telling me about this dish his mom used to make called “weenie stew”. It’s basically the same, but I think she added a bit of tomato paste she had on hand. As is usually the case, the kids didn’t find out till decades later that this was a struggle dish.

my mom used to make something similar to what sounds like a weenie stew. Cook some taters to make potato soup. Fry some cut up potatoes, onion and spam or hot dogs in a pan, add that to the soup/stew + a can of beans and some cream cheese. Season with salt and pepper. Serve with a nice piece of bread. You might wanna leave anything tomato like out though. Makes it taste to sweet and destroys the savory part of this meal

This type of meal brings me back to my childhood. We didn’t have an option of eating any other way until we went in to town to see Grandma ❤️ Grandma’s universally seem to want to spoil the youngins from my personal observation, and somehow grandmas make everything perfect in all ways, in food and in life in general.
Sorry I lost track of the topic while reminiscing in my head. Point is that this meal and many simple recipes like this are what will sustain you and at the same time be delicious!! I love to cook, and while I may go a little more extravagant at times, I always hold the basics close at heart and will still not hesitate to cook some rice and bean with salt and pepper. Most of us that are true old timers will add a little bacon grease that we collect in a jar over time 😂🤣 I would not call myself a religious man but in my heart and actions I do feel that I spread good will and generosity. I practice patience, understanding and empathy. I give all that I can any time I can. “The Ultimate measure of a man is not where he stands in moments of comfort and convenience, but where he stands at times of challenge.” etc. Thank you for your video and I appreciate you!! ❤️

I buy the big cans of baked beans when they’re on sale, keep them stocked in my pantry. Then slice hotdogs, brown them in bacon grease (from my bacon dripping jar I keep in the fridge) bc my husband & son love bacon. Then put them in the can of baked beans, add brown sugar if needed. I buy boxed Jiffy cornbread in 6 packs for a couple $s. I make sweet muffins with brown sugar, homemade vanilla, & add melted butter to the mix. It’s quick & filling & cheap.

This looks good...I raised a family in the 70's so am well acquainted with this kind of meal, and I watched my mother and grandmother struggle prior to that..it taught me to be frugal and to prepare for the future and my old age..... I learned a lot from both of them b/c they'd lived through the Great Depression and WW2..gram lived through WW1 as well...they knew how to stretch a dollar...........Five pounds of potatoes here in east TN is $3.50; worse, egg noodles were $2.00 for a one pound bag..if potatoes cost that much a 5 pound bag would be $10!! I didn't buy the egg noodles, b/c the price is insane...Aldi has egg noodles cheaper but theirs have a funky taste I can not abide and I'm not a picky eater either....LOVE most everything at Aldi, but there are a few things that taste off to me...besides their brand of noodles, their english muffins and their flour have that same funky taste. Aldi has been out of a lot of stuff lately...so has Walmart which is just across the street...the reg grocery stores are almost unaffordable except for their specials...God deliver us of the insanity and the insane people making this happen b/c of their bad policy.

I know you probably already know this-- but-- sign up for the promotional flyers for your neighborhood stores, and stock up on noodles when they're on sale. Sometimes they'll have a "ten for ten dollars" sale, and most folks just see the on sale sign but don't buy ten. If you over-buy when it's on sale, you can coast through when it's over-priced.

I know what it's like to have done without, family didn't have money but we were lucky that my uncle always had a huge garden on the farm. I was a single mum from the time my kids were 9 and 5, it was not easy. Now my husband and I are both retired and pensions only go so far. So thank you for reminding me of things my mum used to make (farm wife before I was born, parents grew up through the Depression and WW2), nothing pricey but we never went hungry.
