- Today I am recreating left overs and making tacos dorados or crunchy pan fried tacos filled with chicken mole and cheese. Check below for the mole sauce recipe used in todays videos. This is a great way to make ingredients stretch and a resource budget friendly way to make a family meal.

INGREDIENTS
3 cups mole sauce
1 lb cooked and shredded chicken
8 oz block of cheese (I used mozzarella cheese)
20 to 24 corn tortillas
oil for frying
garnish with fresh shredded lettuce, tomato, Cotija cheese, Mexican table cream, sliced onion and homemade salsa

I just made these, though I didn't have mole sauce so I marinated some chicken thighs in lime, garlic, seasonings, seared them, then deglazed the pan with some of the water from a can of tomatoes, and used that as the liquid. it was super good! i served it with a side of lime pickled onions :) though it could have used a bit more salt lol

For those that don’t have want/have too much time to brush every tortilla.. Try putting your tortillas in a little towel & then microwave.
Usually that’s what works for me, my kiddos are inpatient & I gotta work quick lols.

Seems like all us guys love the mole, a friend Gilberto asks his wife Toña to put mole with his scrambled eggs, and I love mole with my migas, like the migas you showed us the other day, toasting 2 corn tortillas, 1 egg(per person?), I think and to flavor the migas, MOLE! Not too much that it takes the crunch away from the Migas but just enough to thoroughly enjoy the mole flavor!
