ANTI-INFLAMMATORY PUMPKIN PIE BAKED OATMEAL! TRIM HEALTHY MAMA!

    Coach Shannon’s Baked Pumpkin Pie Oatmeal
    Ingredients:
    1/3 cup of egg whites
    ½ cup of canned pumpkin
    ¼ cup of almond milk
    ¼ teaspoon of baking powder
    ¼ heaping teaspoon of pumpkin pie spice
    1/8 scant teaspoon of pure stevia OR 2 ½ tablespoons of Gentle Sweet
    2 shakes of salt
    OATMEAL PREMADE, of your choice. I prefer the texture of steel cut oats here.
    ** Here is my link to my instant oatmeal packets that I use!
    • INSTANT Oatmeal Packet...
    1. Preheat the oven to 400 degrees.
    2. Line your small baking bowl (mine holds about 2 cups) with parchment paper (optional) and spray with cooking spray.
    3. In a bowl, mix ALL of the ingredients EXCEPT the oatmeal.
    4. Pour into your small baking dish with parchment paper.
    5. Bake in your oven for 15-18 minutes.
    *** When it is 5 minutes from being done, take it out and carefully spread about ½ cup of your premade oatmeal on top to form a crust. Then stick it back into the oven to finish baking.
    6. Once the enter is firm, it is done, you can take it out and let it cool.
    7. You can add some Greek yogurt on top. As a DAIRY FREE option, I make a vanilla mousse and eat this alongside of this dish. (If you put the mousse on top, it will melt!) BOTH of these options will ADD some PROTEIN!!

    • COOKIES’N CREAM VANILL...
    *** For added protein to this dish, here are some options:
    1. Mix in some protein powder into your pumpkin mixture.
    2. Add a quick trim milk alongside! Here is my ANTI-INFLAMMATORY MILK RECIPIE!
    • DAIRY FREE MILK IN 5 M...
    ** You can make this in the MICROWAVE. You would cook it for about 3 minutes.
