Is this the same exact infotainment that I would have in an LXS model also?
Nope.. the LX / LXS base models have an 8" screen that doesn't have factory navigation.. but they also support wireless Android Auto and Apple CarPlay.

Does it have to be wired to connect to Apple Car Play?
Some of the lower trims have a slightly smaller screen with support for wireless Android Auto and CarPlay but there's no option for wireless in these higher trim levels

You got it.. only over USB in this screen
If you want to see the apps shown with Apple Carplay, does your iPhone always have to be connected through a USB?
Yes, it's a USB connection for CarPlay and Android Auto so you need to be connected for it to work
That’s so weird cause I read online the new 2023 is supposed to have wireless 🤷🏻♂️

Yup.. there's no way I've been able to find for it to auto launch

Screen I bought? This one is standard in most trims of the Forte...
I have a Kia forte 2020 I followed the same exact steps for my iphone 13 pro and I still can't get it to project onto the screen 😢
Try going to Settings --> General --> CarPlay and see if the vehicle is there. If it is, delete it. Then delete the bluetooth connection and remove the phone from the vehicle. Try to reconnect.
If that doesn't work than it's probably the USB cable. If yours isn't an Apple original, replace it with an Apple one. I find that 3rd party cables don't like to work

Only thing I don't get is why you need your phones map when it has a built-in navigation
Phone navigation is up to date and typically more feature loaded compared to most OEM nav programs
so the carplay only works with a USB on😢
