Lechon sauce is liver base with spices and bread crumbs but i think they use the bottled variety which is available in most asian store in the US, pandan is screwpine in english we dont really eat the leaves itself only the essence many desserts is also flavored with that pandan leaves.
We use real garlic that is minced and sauteed first before adding the rice. Then some toasted garlic is placed on top of the rice for garnish. The lechon sauce is made from pork liver that is grind and cooked with vinegar, spices, sugar, and some breadcrumbs as thickener. You should try pork or chicken adobo, pork sinigang, and dinuguan, too. Yummy! :)

(these really are very delicious but some people balk at the ingredients) sizzling pork sisig - some use pork belly but the original recipe calls for pork jowl, snout, ears, tongue. i hear it goes well with beer. i don't drink beer but i still found sisig delicious by itself. dinuguan - pork stewed in pig's blood --- like blood sausage or black pudding ... but in stew form. kare-kare - oxtail in peanut sauce happy eating! :)

Lechon sauce is typically a sauce called "Mang Thomas" someone's they add vinegar and mix that in. The sauce can be bough separately in a bottle at the Filipino store. It's also good with chicken. It actually contains bread, interestingly enough. Haha

Please try diniguan since you love blood sausage. It's a very famous Filipino pork and veggies stewed in pig blood with spices and seasonings. It looks like a dark, brown stew and local Filipinos here love it. Filipinos also love pusit, squid cooked in fish sauce. Also there is a snack which is thinly sliced pig ears that have been parboiled soft and then deep fried. It's almost like chicharrones but better! Really sweet share! Thank you!

The long leaf that you saw was a banana leaf and you eat the rice topped with other foods or viands is called boodle fight. You basically get a portion of the rice and choose the topping you want to eat first using your hand. Eating with our hands is a Filipino way of eating. Though now we also use spoons and forks. It is a military style of eating originated in the Philippines. You have to wash your hands first before you start the eating combat. I hope you can try it because it's really fun and good. Hope you can also have a video of it. One person cannot eat all of it so you should bring a group with you.

Food that normal carnivores would eat. We even have something for the vegetarians like LUMPIANG SARIWA aka FRESH LUMPIA. It's just that for some reason, the ones being highlighted are BALUT(duck egg) and DINUGUAN(pork blood) which freaks people out. They would either back out or try it one time and never try anything again. It makes me a little sad because we do have some good things to offer. Here are the other things that you should try: 1) Sisig (pork ears with fried pork bits) 2) Bulalo (beef stew with beef chunks and marrow) 3) Menudo (pork with tomato sauce and pork liver spread) 4) Sinigang (There are a lot of sinigang but try the one with pork. hi Victoria, I'm Mexican and here in Mexico lechon its a baby pig I don't know if its the same but it looks good, all the food that you eat looks great and you enjoy it do much omg, if you come to my home one day you're going to hate me because I don't use any salt at all hihihi the Dr told me no more salt for me, because I retained to much water in my body to give you an idea I nearly died because I had a 280 heart beats a minute I weighted 320lb and know I weight 165lb and that's why I don't eat any salt. love you guy take care.👍💝

hi Victoria, I'm Mexican and here in Mexico lechon its a baby pig I don't know if its the same but it looks good, all the food that you eat looks great and you enjoy it do much omg, if you come to my home one day you're going to hate me because I don't use any salt at all hihihi the Dr told me no more salt for me, because I retained to much water in my body to give you an idea I nearly died because I had a 280 heart beats a minute I weighted 320lb and know I weight 165lb and that's why I don't eat any salt. love you guy take care.👍💝
