Made this for my tea last night and I've just had it agaid for my lunch, OMG the heat from the chilli with the olives and pecorino of which you can never have too much, and the black pepper coming in, absolutely beautiful. OMG! You Italians know how to eat! I just now tried this paired with the Bruschetta recipe and a $12 dollar bottle of Italian Red Wine, and lemme tell you that was living with good food, my Mother and Myself really enjoyed this meal. I recommend that anyone wanting to try this do so paired with the Bruschetta, You won't go wrong. That was a very awesome experience! Better than I've had at any restaurant. Being that I am a cook already means that I could whip up both items fairly quickly. Still it's worth the time and effort! Do it!

Vincenzo I used to make a pasta dish very similar to this back in college. It was not an authentic Italian site but I think it was an Allrecipes or something. Basically the exact same recipe but with a touch of red wine and then some chopped Rosemary in the sauce. The flavor of the black olives and the rosemary together makes it smell and taste so good I could never successfully pack up the leftovers. So a little bit of an innovation but worth a try!

If I can say one thing to everybody. Make this!!!! Please dont miss the step where you smash the sausage. Smashing breaks the fennel and all the herbs in the sausage. Makes it so amazing. Just made this today for lunch. Great recipe and very easy yet tasty. Couldn’t find Italian sausage, so have to use local Cumberland sausages - still taste great. Maybe next time I will add fennels to Italianize the sausage 😊 The olives do work very well and basically cut the meatiness of the sausage. Thank you Vincenzo.

I make this dish often for the family, yet tone down the chillies for the kids. 👍👍👍👍👍 5 five thumbs up… Big aluminium 28cm+ quality pans hard to come by in the non stick era - old school pans the way to go ❤❤. You mentioned al dente pasta out of the pot. Better is 1 min before al dente, then finish it with 2 mins in the pan with the sauce - tossing of course. I personally add some pecorino to the sauce in the pan to melt and emulsify into the sauce before tossing - with an extra dose of cracked black pepper 🤩🤩🤩. I take my hat off to you sir for educating UA-cam with authentic cooking 🧑🍳🧑🍳🧑🍳

For refinement, French cuisine can’t be bettered (although the best Japanese does come close). But if it’s for the sheer pleasure of eating, it’s Italian cuisine all the way for me. I respect the French cuisine but I find it too technical, and lots of the refined complicated dishes I've tried were just... ok. (I absolutely love Japanese cuisine, though.) Meanwhile Italian cooking is incredibly simple and just HITS all the right spots every. single. time.

I like both, and absolutely love going to a good restaurant to experience the second whenever I’m in France. This dish looked absolutely delicious and I can't wait to try it. I love pasta, black olives, peppers, garlic, everything. I love that you keep your recipes authentic but I would like to ask if there is a substitute chili, one not so spicy. I cannot handle to much heat but I love the flavor the chili's offer.
Made this last night with really good quality italian pork sausages. I made a slightly larger amount of pasta so I did two sweet sausages and two hot sausages. It's a little greasy which I suppose is unavoidable given the way it's structured but the heat of the chili cuts through the richness of the pork fat and the olives balance out the sausage meat in general. It's an interesting red sauce in that it's one of those rare ones where the tomato isn't the leading flavor, it's just the platform where the pork and olives do this dance. If anyone makes this one I don't think it is a good idea to play around with this recipe too much or the sauce would probably be too unbalanced. It really needs the spice otherwise it would be sort of rich and flat.

We would have the daily menu which had a simple mushroom pasta as the dish before the meat came. I think it was porcini mushrooms. Can you show how to make a pasta like that? Made this for my tea last night and I've just had it agaid for my lunch, OMG the heat from the chilli with the olives and pecorino of which you can never have too much, and the black pepper coming in, absolutely beautiful. OMG! You Italians know how to eat! I just now tried this paired with the Bruschetta recipe and a $12 dollar bottle of Italian Red Wine, and lemme tell you that was living with good food, my Mother and Myself really enjoyed this meal. I recommend that anyone wanting to try this do so paired with the Bruschetta, You won't go wrong. That was a very awesome experience! Better than I've had at any restaurant. Being that I am a cook already means that I could whip up both items fairly quickly. Still it's worth the time and effort! Do it!

Vincenzo I used to make a pasta dish very similar to this back in college. It was not an authentic Italian site but I think it was an Allrecipes or something. Basically the exact same recipe but with a touch of red wine and then some chopped Rosemary in the sauce. The flavor of the black olives and the rosemary together makes it smell and taste so good I could never successfully pack up the leftovers. So a little bit of an innovation but worth a try!

Just made this today for lunch. Great recipe and very easy yet tasty. Couldn’t find Italian sausage, so have to use local Cumberland sausages - still taste great. Maybe next time I will add fennels to Italianize the sausage 😊 The olives do work very well and basically cut the meatiness of the sausage. Thank you Vincenzo.

I make this dish often for the family, yet tone down the chillies for the kids. 👍👍👍👍👍 5 five thumbs up… Big aluminium 28cm+ quality pans hard to come by in the non stick era - old school pans the way to go ❤❤. You mentioned al dente pasta out of the pot. Better is 1 min before al dente, then finish it with 2 mins in the pan with the sauce - tossing of course. I personally add some pecorino to the sauce in the pan to melt and emulsify into the sauce before tossing - with an extra dose of cracked black pepper 🤩🤩🤩. I take my hat off to you sir for educating UA-cam with authentic cooking 🧑🍳🧑🍳🧑🍳

For refinement, French cuisine can’t be bettered (although the best Japanese does come close). But if it’s for the sheer pleasure of eating, it’s Italian cuisine all the way for me. Italian cuisine is the little bit of food glue that joins “la dolce vita” to the “dolce far niente” - in short, one of life’s true pleasures. Thank you Vincenzo for another delightful recipe.

I respect the French cuisine but I find it too technical, and lots of the refined complicated dishes I've tried were just... ok. (I absolutely love Japanese cuisine, though.)

I like both, and absolutely love going to a good restaurant to experience the second whenever I’m in France. This dish looked absolutely delicious and I can't wait to try it. I love pasta, black olives, peppers, garlic, everything. I love that you keep your recipes authentic but I would like to ask if there is a substitute chili, one not so spicy. I cannot handle to much heat but I love the flavor the chili's offer.

Made this last night with really good quality italian pork sausages. I made a slightly larger amount of pasta so I did two sweet sausages and two hot sausages. It's a little greasy which I suppose is unavoidable given the way it's structured but the heat of the chili cuts through the richness of the pork fat and the olives balance out the sausage meat in general. It's an interesting red sauce in that it's one of those rare ones where the tomato isn't the leading flavor, it's just the platform where the pork and olives do this dance. If anyone makes this one I don't think it is a good idea to play around with this recipe too much or the sauce would probably be too unbalanced. It really needs the spice otherwise it would be sort of rich and flat.

We would have the daily menu which had a simple mushroom pasta as the dish before the meat came. I think it was porcini mushrooms. Can you show how to make a pasta like that? I wish I could find that pasta shape. It looks like mini-rigatoni and rigatoni has always been my favorite pasta.
