Memorial Day Potato Salad
8 medium potatoes, peeled and cut in to bite size pieces
1/2 cup onion, chopped fine
5 hard boiled eggs ( reserve one for garnish)
1 1/4 cup mayonnaise
1 tablespoon plus 1 squirt mustard
1 1/2 teaspoons sugar
3/4 teaspoon salt
1/2 teaspoon white pepper
paprika
parsley
In large pot, add water and salt. Add potatoes and bring to a boil. Boil for 7 minutes or until fork tender. Drain and cool for 7 minutes. Mix mayonnaise, mustard , sugar, salt, and white pepper in a medium bowl. Taste to make sure dressing is good. Add eggs and onion into the potatoes. Add dressing and mix well. Slice one egg thinly. Put potato salad in serving bowl. Sprinkle with paprika. Add egg slices on top. Tear parsley leaves off stem and edge dish with them. Refrigerate immediately.

My favorite of all time, POTATO SALAD! Grew up with Southern, where I would pick Mom's pickles out. But, now, I like the sweet relish. Yum!
Such a lovely cool summer side dish. A must for family get together.

Sometimes, we mixed in a few tiny pieces of green bell pepper with the onion, but always sprinkled red paprika on top to finish off the dish! Good served warm/freshly made or cold! And, there is NOTHING like homemade potato salad! 🤗
Here's a tip: After boiling potatoes, drain, wait for them to cool, then put them in cold water to keep them from turning brown until ready to mix ingredients.

Cooked potatoes never turn brown. The uncooked ones will if you don't submerge in cool water. I know my mom left them out to cool and never turned because the starch is fully cooked.
Sorry, Linda! 😊 I should have said peel, cubed, and freeze if not going to immediately use. Otherwise, rinse, and let sit in water until ready to cook. My uncooked potatoes have turned brown on me before. 💕
You can't freeze raw potatoes. They do have to at least be partially cooked before freezing them.
