Keto Crusty Pizza Dough using Lupin Flour !

Yields 2 Small Pizza or 1 Large
Ingredients :
3/4 Cup Lupin Flour
1 1/4 Cup Mozzarella Cheese
2 Eggs
1/2 Tsp Pizza Seasoning or Italian Seasoning
¼ Sweetener of Choice ( Monk Fruit , Allulose or Swerve) optional
1. Preheat oven for 350F .
2. In a microwave safe bowl , heat mozzarella in the microwave for 1 min then mix ,heat again for additional 30 secs . Add egg and stir again. Egg will not be entirely incorporated just keep trying.
3. Add the Lupin flour , kneed dough by hand ( grease your hand a bit) in the bowl until firm and all incorporated. Form a ball of dough.
4. Divide dough ( if you want Two small pizza ). Lay down a large piece of parchment paper. Grease lightly with avocado oil. With your hands, flatten the dough ball into a circle. Place on parchment and put a second piece of parchment on top to cover. Roll out the dough until you form a 6 inch circle . Remove top layer of parchment. Roll the outer edge inward just slightly to form a raised edge. This will help keep toppings from spilling over and off of the crust. Poke multiple times with a fork to prevent air bubbles.
5. Bake for 8 to 10 mins . Remove from oven . Add your pizza toppings ( whatever you desire ) . Bake for 8 mins for 375 F .
6. Cut and serve while still warm . Enjoy!
Isn't Luptin flour very bitter when you use it alone?
With so many low carb flours avalable these days...why would you stil use cheese? Make yeast dough!
Which is your favorite? I am not a fan of fathead crust.
I would try with cream cheese instead of mozzarella cheese
Lupin can have a weird taste to it. Not my cup of tea
It's basically fathead dough only with lupin flour... Might be worth a shot. Thanks.
