    I made this according to the recipe, except: 1) I added a bit of salt to the topping mix, and 2) added nutmeg to the topping mix. The result was outstanding. Next time I make this, I’ll amp up the cinnamon. This is a real winner.

    Don't have access to grape nuts so I just doubled the oats instead , and it was still delicious and crispy. This was the best recipe I've tried yet for apple crisp. Thank you, Chef John!

    I had grape nuts a few days ago for the first time and it made me think of this recipe. They were served for breakfast on top of natural greek yoghurt with honey and sliced bananas. I dont know where the restaurant got them from because we're in the UK but it was delicious. I can see why they would be great in an apple crisp.

    This turned out amazing. I made 2 batches, one made this way (Except for the store didn't have grape nuts, so I substituted granola and chopped pecans) and a batch of peach crisp made with the raw fruit/cold butter method. This allowed for empirical testing. The pre-cooking of the apples in the sauce is genius, it makes the consistency perfect. I added too much water, and it didn't matter, it just made it necessary to cook the apples and sauce a bit longer. Chef John never disappoints!

      Yeah. Grape Nuts is a non-starter for me. Finely chopped nuts is a good call.

    Ya know... I don't really like cooked apples. Apple pie, ect. but Apple Crisp is actually pretty good. And this looks real tasty.

    Several days of snow coming our way and I thought, oh well, it's time to make apple crisp. You did not warn me to not test the topping, because if you do, one might eat more of it than you should because its sooooo good. Grape Nuts, I'm glad I live in America where we grow grape nuts. I tried to see how much a box of grape nuts cost 10 years ago. I never got my answer but I did see that there was a grape nut shortage back in 2021.

    @hatesit1 you need to be careful of heat when working with sugar. too much will turn it hard or go past caramelizing. lower heat next time and go for it again.

    Could you try doing some recipes that use less butter and sugar?
    I know it's hard to believe that there are desserts without or less butter and sugar..
    But Chef John I know you are talented enough to do this!
    I think many people here would like to enjoy your tasty and beautiful food
    but also eat them healthily at the same time..

    I tried to make it and as soon as I put the apples in and tried to stir it, my entire caramel mixture turned hard and completely solidified and turned into accidental apply candy. :(

    Grape-Nuts aren't actually a nut; it's just whole grains and barley flour! They were called that originally because of their resemblance to grape seeds (according to Wikipedia).

    Sir.....you had me at the use of 'Grape-Nuts' (THAT cereal--- along with the GOD created cockroach....will survive a nuclear attack) and the money line...... "ummmmmmm.....accidental apppple caaannnddyyyy...."
    ------I been researching for almost a week for an Apple Crisp recipe. All had the same boring look and process. I'm always lookin for that unique 'application and creativity' that I can add to and make it mine. I thought you were going to say the secret was 'granola' but then you shocked me with Grape-Nuts. I used to eat that not because it was necessarily errrr tasty.....but because that stuff neeeeevvvvver gets soggy.
    Bingo, Eureka...! Whatever you call it...this is it. Your controlled humor just pushed it off the curb. Thanks guy!!

      i am using cashews in mine. i am just crushing them up a little bit beforehand of course. I too can not get the grape nuts that he is using.

      Firelord Kushroll. Grapenuts is a cereal. they are not actual nuts. it's a breakfast cereal. and they are very hard.

    We love yourfood recipes, tried substituting granola for grape nuts and it turned out great, extremely crunchy though, l think l would grind the granola up a bit in the food processor though,for next time. A bit toothy. But probably the best I have made so far.

    Hi Chef John! I'm from Portugal so I couldn't find the grape nuts and I didn't wanted to use just the oatmeal so I decided to go for GRANOLA ! I was a little reluctant but surprisingly it came out great :D Also I had never ate granola or any type of recipe similar to this one, but I've got to say that this is my favorite dessert right now!, although caloric but who really cares ? So delicious! Thank you so much :)

    I love apple crisp but don't care for oats based toppings. I'll try making this using Chef John's Ultimate Berry Crumble topping instead. I'll likely have to adjust cook/bake times to ensure the topping is done without the apples being reduced to apple sauce.

    Thank you for this recipe! I am in love with apple crisp and tried to make it one year several times, but it never turned out crispy--it makes sense that I needed to cook the apples first and get rid of some of their excess water. No recipe I found said to do that. I will try this! Thanks!

    Never heard of apple crisp before. This is a lot like 'crumble' which we have in the UK. It came from the days of rationing, I believe, and the lack of an egg to make the crust for a fruit pie. The filling is often cooking apple or rhubarb or something and is served with custard. The fruit is just cooked with sugar. I usually add granola to my crumble but having seen this, I'll probably make apple crisp instead. Looks a lot better.

      Oatmeal, crushed up Kashi cereal, or rice crispies. Its called Grape Nuts. Look for it on Amazon.com

    Using a vegetable peeler to peel the apples will result in less hemoglobin in your crisp then if you use a paring knife

    This look so yummy. Not sure if I would use the grape nuts myself, but it still looks tasty! I would love it if you would do an empanada filling recipe, I usually Find the dough at my local supermarket but I would love to see what you would d with the filling!

    @glhswccc Try adding the white sugar into the apples and let it sit over a colander for about an hour. Most of its moisture will render out.

    For the topping:
    1/2 cup melted butter
    1/2 cup all-purpose flour
    1/2 cup oatmeal (rolled oats)
    1/2 cup Grape Nuts
    1/4 cup brown sugar
    1/4 cup white sugar
    For the filling:
    5-6 apples
    juice of 1/2 lemon
    2 tbsp butter
    1/3 cup white sugar
    1/3 cup packed brown sugar
    1 tbsp water
    1/4 tsp cinnamon

    Mmmmmmmmm DOGGY! I *finally* got around to trying out this one - it's been on my short-list forever and ever. I made the whole thing in a 4.5 qt dutch oven - no pan to clean up later. With it with some added blueberries, about 2 Tbls of very finely minced ginger (yes that's a lot) and crushed up sprouted wheat and cornflake cereal (closest I had) instead of grapenuts. KNOCKED IT OUT OF THE PARK! By the way, for recipes like this where we're combining white and brown sugar in the same stage, I love just using white (or raw) sugar and adding a Tbls or two (I usually go a little heavy cuz I love it) of molasses. :D

    I don't know what I did wrong, but the topping was burnt at about 15 minutes in a 375degree oven. Also, the topping was much more wet (kind of like cookie dough) than crumbly. It still tasted great though!

    That casserole dish has gotten a LOT of use over the years.😀
    Made this today and it is so good. Added a pinch of salt +more spices with a little less sugar. didn't have any Lemon so used a little Apple Cider Vinegar. Might try and soften the grape nuts a little the next time as they are really really crunchy.

    YES! I thought I was the only person who adds Grapenuts to her fruit crisp topping. I have to try your trick with the apples too (nothing is worse in a beautiful apple crisp than uncooked apples). Thanks Chef John, and as always, we enjoy!
