Laksa Recipe - Singaporean Curry Noodle Soup (Laksa Lemak) | Asian Recipes

  • After a trip to Singapore a couple of years ago, I fell in love with their Laksa! The coconut curry broth is complex, fragrant, and just the right amount of richness. Seafood stock is the base of the broth, and the flavour the comes through is every seafood lover's dream. You might be tempted to skip the clams but trust me...the clams make a huge difference in the flavour of the broth.
    There are many types of laksa across Malaysia and Singapore, but this version enriched with coconut milk is the one common in Singapore and is also known as laksa lemak, peranakan laksa, or nyonya laksa. What's your favourite kind of laksa and what is it like?
    COOKING TIPS: It's a bit of work to get all the stuff together, as is usually the case for noodle soups, but you can make many components in advance and spread out the work. You can freeze the paste, so not a bad idea to make some extra. The broth can be made days in advance, and even the noodles can be cooked in advance. If you're going to make the broth ahead of time, make sure you cook off your clams and shrimp as well since raw seafood doesn't last long, but cooked seafood can last up to a week in the fridge.

      Question. You know it's really hard to find galangal here in the Philippines. Do you think if I order dried galangal or powdered galangal online, it would still taste as good? Mostly when doing your recipes, I used dried because its the only thing I see available online that could last a long time. Like dried lime leaves and dried galangal

      I am Filipino, who grew up in the US, now living in Australia, worked in Singapore for a few years....fully aware that this laksa recipe is very much Malaysian (with a Singaporean twist)...learning how to make it from a woman of Thai heritage...who now lives in Canada ! Whew...

    I'm french but my husband was singaporean (malay/indonesian), been there so many times when he was alive......I master lots of recepies including rendang! love S.E asian food; I live in Paris chinatown where I can find most ingredients but no more laksa paste (been looking every shop) so now, gonna follow yr recepie and will do it ''home made'' thanks a lot!

    This is almost exact replica of my granny's recipe! We will also add in a bit of sambal chilli paste in the broth before serving!

    My first trip to Singapore was in the 70s, only two western hotels in town, and NEWTON CIRCUS!! Best food in Asia...EVERYTHING...Thai, all kinds of Chinese, Malaysian, Indonesian, Filipino, ad nauseum.
    And the soups were divine, because the stock is always homemade. I could live on Asian food, especially soups, the rest of my life. Great recipe!!

    You should do an update featuring a _quick_ _version_ . I know the full, made from scratch version is the best, but a quick version would be fun too!

    You need to toast your belacan before blending,the same goes to candlenut, it would be much more fragrant. Too bad you cannot get daun kesum. Cheers from Singapore.

    Laksa, one of the best dishes in South Asia, love it!
    Suggestion : Roast shrimp shells till they go brown, it brings more flavor in the soup!

    Note - You can also fry and cook all the side dishes (tofu/fishcake/prawn) in advance. That way if you do an open house your guests just gonna assemble them and enjoy, like a taco party! You can also add any type pf salad-y leaves and lime if you want. 💕

    Hi Pailin. When i cook laksa, I add in a handful of laksa leaves together with the stems into the shrimp stock and let them mingle their flavours together as the stock boils away. I learned that in a recipe and the laksa leaves add more flavour to the shrimp stock.

    I've started a tradition in the last few years of making Laksa on boxing day with the left over seafood. Last year I made it with a whole lobster! It was so good. This year I only have one lobster so I probably won't use all of it. But have prawns for it. I can't wait! yum!

    lovely there's a recipe available for this dish I only knew from restaurants in Canada. I'm currently, unfortunately, living on the other side of the continent, far into South America where there's absolutely none of the ingredients shown - except for garlic I'm so homesick!.... How I miss Asian food!! When I came down to South America I brought just a bit of dried shrimp and people thought it was "awful" how I could like "that rotten" smell... if they only knew what (to me delicious) shrimp paste smells! thanks for this recipe and I hope one day the pandemic ends and I may go back at least, to Canada to a multicultural city where you can find even stores where the ingredients you show are sold. Thanks for your clear instructions!!!
