- Today I am recreating those nostalgic school cafeteria lunchroom butter cookies. The ones I remember were large and came in a white parchment sleeve. This is gonna be good!

INGREDIENTS
2 sticks (227 g) unsalted butter (softened)
1 cup (200 g) sugar
1 1/2 tsp vanilla extract
2 cups (250 g) all-purpose flour
3/4 tsp salt

* I baked at 350 degrees F for 15 minutes
* I did not chill the cookie dough
*Makes 8 to 10 large cookies

I remember walking home after elementary school in the 60's early 70's and we'd walk behind a bakery just before getting home if the owner/baker George noticed us he would bring out one of these for both of us as a free snack. These bring back fond memories. thanks for sharing. Also, you bought a dozen of anything he'd give you 13.

Please do more “old school” cafeteria recipes! Will make these for my children and show them what they’re missing out on. They’re always grateful the servings are small at their school because the food sucks. Lol. I also remember in TX they offered “pig cookies” (marranitos) for breakfast.

Yes! You're right Chicago cookies. I remember these cookies when I was in High School, Corliss High-Chicago, IL. The cookies were 10cents. And they had the folk line on top. The good days!🤗

Thank you Anjelica!... yeees def remember, I am a Chicago native. Attended public schools, and those cookies were awesome! When I was in second grade, I believe, a neighbor began working in the lunchroom and my mom asked her for the butter cookie recipe and she gave it to us... honey we made "lunchroom cookies" - as my friends and I called them - often! And in 'the Chi' they were made with "real" butter and it had a 'three finger imprint' on the cookies. Whenever we took these to any kind of gathering or folks had them at our home, they loooove them and would say "these taste like the lunchroom cookies"! We would say, 'they are'! and they'd always ask for the recipe and we always shared it. We know recipe by heart. 😄 ❤

My aunt Rita worked in the cafeteria and those ladies created homemade meals, the posole, the peanut butter sandwiches with syrup. Yummy. Shout out to Richgrove school redskins. Good ole' days.

I lived across the street from my elementary school and the smell of those cookies baking in the morning was intoxicating... I couldn’t wait to get one. Thanks for the recipe ... can’t wait to re-live that taste and smell. 😋

School cafeterias used dairy butter as it was provided as a government USDA "commodity" like cheese, peanut butter, ground beef, dried pintos and flour.
I remember the square shaped pizza that had ground beef as the topping. This totally makes sense. 👍🏼
Honestly, the way I remember it, government cheese was the best. We made toasted cheese bread slices and my mom made the best mac & cheese with it.
Angelica my favorite cafeteria cookie was peanut butter. I made sure I had my 10cents to buy one before they ran out. Man those were the days. I live in Brownsville Texas.
I’m from Kansas. I don’t remember these sugar cookies in high school, but we had wonderful cinnamon rolls. We get them with a bowl of Chile. Lots of good memories.

Butter cookies were different than the sugar cookies. I wasnt a fan of sugar cookies or the snickerdoodle cookies.
I'm in Missouri and don't remember the cookies either, we also had the cinnamon rolls 😋
Texas don't know about chili and cinnamon rolls lol I'm from Nebraska and when I moved to Oklahoma I was shocked this wasn't a school lunch and when I mentioned it to a coworker she thought I was crazy!!

Yes girl! But I went to CyFair ISD in the 80’s and the cookies I remember the most were huge snickerdoodle cookies that were like $.10 in elementary- thanks for the blast from the past!

My aunt and uncle lived in CyFair for a few years during my cousin's childhood...use to love to visit and ride horses with my cousin...nice get away for the day!🤗

I remember those cookies and loved them when I went to Berry Elem in Houston Texas 🥰 then we moved to Mission Texas and never had them again. Did you ever try the beef and bean burritos from the Texas cafeterias, those weren't free and they would come with a side of nacho cheese. I was too poor to buy them, so it meant everything when I could afford one of those burritos. If you know what I'm talking about, please share that recipe too 😋😋😋😋😋😋 I've made so may of your recipes and they are always a home run! 🥰 You're the best THANKS!!!!!

I would get the deep-fried bean burrito almost every day in high school, 1975-1979...you could get them with a chili sauce, but mostly I got mine plain..I was born and raised in Houston Texas, but actually moved to Alief Texas in 1972...At one time Alief was considered Houston, until it was annexed around 1972...anyway, I loved the burritos, but only had the sugar cookies in middle school, in high school, I would buy packaged thin mint cookies, every day, they tasted exactly like the girl scout mints....
I attended schools in Houston, too! In the seventies, the school cafeteria had the best food! The pizza, chili hamburgers and the yeast rolls were the best tasting food. And of course, that delicious butter cookie!
Boy, do I remember these cookies!!!! I went to Lucy Flower Vocational High School in Chicago. I couldn't wait to get to the cafeteria and buy one. They were huge and half an inch thick. I grew up in El Paso Texas, and I do remember the cafeteria ladies use to cook homemade meals and those cookies were so so good. Sad that kids don’t have good old homemade meal at schools anymore. Now I live in Florida(20 yrs). Going to make a batch to remember the good old days in school. Thank you so much.

Trips back to yesteryear are the best kind of travel!!! We shouldn't and can't always live in yesteryear, but is a great feel good time that brings back some happier times and memories of places and friends. Enjoyed our little visit today. Thanks for all your hard work.

Omg these are my favorite! I make them all the time! I thought it was just a Chicago thing lol. My school used to have a cake with white icing too. It was the best cake slices I've ever had for .25 cents can't find the recipe though 😭 Thanks for sharing childhood faves!

Yes I remember these cookies I went to school in Chicago and they had the three fingers press on them. I've made them but I used powdered sugar instead they would come out so light and flaky they just melt in your mouth. Yummy😋!!

Ours weren't as big, but here in the south, (Tennessee) you could get 3 regular sized cookies in the little white bag for a quarter! We also had yellow vanilla cake with chocolate icing! Oh, those were the days!
I remember we had a yellow vanilla cake too but it had cream white glaze frosting. I loved it so much. The lunch lady would save me an extra large piece. Bless her heart. I wish I had that recipe.

Not in my school but I love butter cookies and so cute of you to recreate. And tasty too!
My school made some of the best desserts and these cookies were one of them. They decorated hem for each Holiday. When I was given a job in the kitchen I got to do the decorating as well as make the cinnamon rolls. Thanks for bringing up a great memory.
