My ancestors came north from Atlanta, during the great migration after slavery was abolished. In fact, my father used to cook it a lot. After I moved to California to go to college in the 70's I've rarely seen it since then and, actually, forgot about it until it popped up in your UA-cam posts! Thank you for reminding me how much I usedto love it when I was a child. So now I'm going to be on the hunt for it in local Mexican stores because I know it's one of the ingredients in their Menudo. Thanks, Aisha, for bringing back warm memories from my childhood of loved ones, like my Dad, who are no longer with me.

From St. Louis and remember HyWills on Leffingwells. Best tripe in town. Years later the name was Lewis snack. Made some last year and the turn out good. Boil on stove and then in crockpot overnight. Really tender and fried up good.
I cook honeycomb beef tripe. I soak it in milk over night. Then I rinse it off and boil it on low for about 2 hours. I then let it soak in vinegar for maybe a hour. I put salt and pepper on it. I then put it in flour and fry it.
Ok so my friend from St. Louis was telling me about this sandwich and I’ve never heard or seen fried tripe. So I came on here to how it was prepared. That sandwich looked so bomb!! I gotta try this. The only question I have is how do you clean? Because he said you have to clean it first. Can you please do a video to show how you cleaned yours?🙏🏾

I don't have patience! Lol I put mines in my instapot pressure cooker...I put my mom's chitlins and all that in there...less than an hour to cook and sometimes to well done at that so pressure at 35-40 mins on high for beef tripe...thanks for the tip on adding mustard to help the coating

tripe is so good, I cut it into fist sized pieces and use a slow cooker for about 3 hours. so good with salt, curry, chili, garlic etc. I can eat it endlessly, its so satisfying to eat and a nice change from regular meats

I love tripe! I learned to like it when I lived overseas in England. Yesterday I saw a beef tripe in milk in a can and it was the grossest looking thing I have ever seen. It was all gloopy and gluey and I mean once it was fried it was okay but I don't think I could open that can and do that. I have only ever had fresh tripe.
I could handle the strip down the middle but this is sideways and it's making me dizzy now! If you put your phone on portrait mode or turn it the other way horizontally it won't do this.

That's too much playing. Put it in a pressure cooker for 45 min to an hour and it will be ready to batter up and fry. You will LOVE it!! :)
