Carne asada is what you grew up with. Keep the marinade simple and have some tortillas ready to make tacos. The soft ones and some that you leave a little longer to get stiffer and charr. Have some veggies roasting for a salsa, if you have leftover carne that’s getting old use the salsa you made and pour it onto the sliced carne in a sauce pan with diced potatoes. Make some rice on the side and now leftovers seem like a new meal.
Carne asada to me is.. all the familia , tios , tias , primos , getting together with tortillas , beans , arroz , mexican beer and tejano music all night !!
I remember a couple years I lived in TX back in the 80s, A HD, Some beers and some of the best grilled meat ever in them wide open bars with the monster fans. I like the way you man the grill, Thanks for the memories of some good times...
just like Arlie said there is a lot of different styles, but the real northern Mexican way(where carne asada comes from) is to cook way to cook with, garlic powder, salt, lime juice, pepper ,on beef previously marinated on beer.
That is feasting my eyes. Good to know what carne asada means in the traditional sense. I don't often see beef ribs grilled on charcoal like that. I have not done that for ages. Time to revisit!
Yea I've been using the same recepie for over 10 years now and it's amazing. Sometimes I just eat with rice and beans and other times I use it for fajitas.
I learned how to cook authentic Mexican flavors in South Texas (Ingleside) while stationed there with the military. I had a neighbor who taught me and also introduced me to his aunts (owned the City Tortilla Factory in Ingleside Texas) who made the Best Tex Mex flavor I have had to this day. I said ok but I thought to myself they real must like their ref tacos . Dont get me wrong I love tacos de carne asada & upto that point that's what carne asada was to me. So I waa like why they making such a big deal for it. When i got there i found out the difference lmao. They had pretty much what you had bu also chorizo & beef short ribs. As far as sides they had the usual rice & beans but also they had macaroni salad, potato salad & cactus salad which was basically pico de gallo with cactus it was really good & refreshing. Oh yeah the beer they had 2 trash cans with ice one filled with beer the other had sodas
This is exactly how i remember growing up. Outdoor BBQ, Fajita meat, the only thing i remember my dad doing is a can of budwiser over the meat while it was on the grill, and the union being rubbed on the grill before cook
I think a reason I never enjoyed the food at a carne asada when I was a kid was that the meat was always dry. Now that I make my own fajitas I figured out that cooking all the pink out of them is not the best course of action.
I have watched a lot of cooking videos over the years and just found you. I really like you cooking, but even more your personal touch and subtle animation, instead of looking bored to just tell your audience the ingredients and methods.
While I knew the overall meaning was basically grilled meats , I still equate it with marinated skirt steak after living in San Diego in the 80's . You hit a Robertos or Ramiro's stand and got a carne' asada burrito after surfing and it was the greatest thing ever . Still is! Now it's kind of a fixture on menu's up and down the west coast . I think maybe that happened because if you just said "beef burrito" most Americans at that time would automatically think ground beef .
Yes sirr !! My Abuelo invited the whole family every weekend for that carne asada!! It’s a good way to get the family together , a lot of good memories 🙌🏼🙌🏼🙏🏼
Carne Asada also includes elite and onions. Because we live in an apartment, the carne asada will either be in someone's house or in the balcony of someone's apartment.

I appreciate a classic carnita asada, escuela-bieja knows best. Traditional flank steak, guacamole, sausage, some steak tomatos, yellow corn tortillas, forget it, thats heaven. Next time wrap some onion in foil & toss them on the fire for some time & let the sugars break it down, that is a wonderful addition of flavor that simply just belongs. One more thing, have your butcher hook you up with some corte argentino steak, grill that up along with your flank & compare them, your going to love it, trust me. Salud, DC Los Angeles CA.
