Your family will love Blueberry Biscuits 🫐

  • Bojangles Blueberry Biscuits - Copycat Recipe
    These are lightly sweet, packed with blueberries and better than blueberry muffins. Please make some. You won’t regret it.
    Ingredients
    2 1/3 C All Purpose Flour
    6 T Butter
    1 T Baking Powder
    1 t Salt
    1/4 C Sugar
    1 C Frozen Blueberries
    1 C Buttermilk
    Instructions
    Preheat oven to 450 degrees F
    Mix dry ingredients, then cut in butter until it’s small chunks and large crumbs.
    Stir in buttermilk until flour comes together. Gently mix in blueberries.
    Fold dough in half over and over just until all flour is incorporated and you have one semi smooth mass of dough.
    Pat into a 1 inch thick disc, then cut into desired size.
    Bake on a greased pan until golden brown- usually between 8 and 12 minutes.
    Glaze
    Mix 1/2 C Powdered Sugar with 1/2 t vanilla extract and 2 t milk. Add more or less milk to achieve desired consistency.
    Drizzle over warm biscuits.

    In my area with humidity I had to an extra cup of flour to make up for the moisture, but it worked.
    Now I know to use way less buttermilk.
    They came out fine, but they had to bake an extra 10 minutes too.
    Adjusted just right. Thank goodness I had some extra knowledge and skills lol

    Cold butter DOES MATTER, but home cooks can do what they please.
    Also, since your using buttermilk you can reduce the baking powder to 1 tsp. And add 1 tsp. baking soda. The reason is that baking powder can, and usually does, give off a bitter taste, especially those with aluminum in them. The acid in buttermilk reacts with the baking soda. If you don’t have buttermilk just add 1 tsp white vinegar to 1 cup of whole milk. Stir, let sit 2-10 minutes and you have soured milk which can replace the buttermilk and still do the same job with the baking powder.

    Totally agree with you on the buttermilk. Here is the problem with the blueberry biscuits, I could probably eat them all!! But still going to try this and then freeze some. Yummy, great video

    Goodness gracious sakes alive! Those are some good lookin' biscuits, Paul! Steve's favorite biscuits are blueberry with lemon glaze. I bought some powdered buttermilk and started using it. Works good too. Dairy is getting so expensive. Oh, and I love the hair!

      Thanks, Chastity! I didn't think about lemon glaze. That would be awesome. I remember someone saying that powdered buttermilk works great. I need to look for it. We went to Aldi to look for powdered milk Friday (in case the building back better keeps getting worse) and they had none. We did get a spare freezer at Sam's though.😲 I'll look for some this week.

      @@paulandbenny Sam's here has a huge bag of powdered milk. You may want to check there. I got powdered buttermilk from Amazon a few months ago. We got a chest freezer from Sam's 7 years ago and it still works great. I've always been a stock up on sale items to get me through the hard times kinda person. It isn't the first time inflation and prices have done this. I remember my parents talking about gas lines in the 70s and selling the Chevy Chevelle for a Volkswagen Bug. 😆

      @@BobbiJo I didn't think to look for milk powder at Sam's but I will. Good thinking. I've seen gas prices high but since I've been an adult I haven't seen food prices high. My brother and his family have always been stock up just in case people, but I've really just started the past few months. I guess I'm growing up. LOL! I don't know if it's wide spread, but several farmers/food producers have said their costs have went Up drastically. So I figure it's better to buy it when it's cheaper and have it on hand just in case. PS. Benson that collaborated on the peach video also recommended the freezers at Sam's. Her family keeps a year supply of food in storage. I'm impressed!

      @@paulandbenny I subscribed to her channel and love it! I grew up on a farm so stocking up until the next harvest season was just something we always did. We were preppers and didn't even know it.

    Could I add lemon juice instead of vanilla to the frosting or should I add it in addition to the vanilla for a lemony frosting?

      Someone else said they like them with lemon. I would probably replace the milk with lemon juice, then add a little vanilla. I'm sure they'll be delicious either way😃
