    Cold butter DOES MATTER, but home cooks can do what they please. Also, since your using buttermilk you can reduce the baking powder to 1 tsp. And add 1 tsp. baking soda. The reason is that baking powder can, and usually does, give off a bitter taste, especially those with aluminum in them. The acid in buttermilk reacts with the baking soda. If you don’t have buttermilk just add 1 tsp white vinegar to 1 cup of whole milk. Stir, let sit 2-10 minutes and you have soured milk which can replace the buttermilk and still do the same job with the baking powder.

    • @paulandbenny
      @paulandbenny 14 днів тому

      All cooks can do what they please 😂 Vinegar in milk does not taste like buttermilk. Let’s stop that internet hack in its tracks. Yogurt or sour cream is a good substitute for buttermilk. Hopefully no one is using the baking soda with aluminum. It’s not necessary in 2024 and the possible health risks aren’t worth it. Happy baking and thank you for watching!

    • @OrangeMonkey2112
      @OrangeMonkey2112 14 днів тому

      @@paulandbenny no but the difference isn’t that much bigger. It’s not an internet hackZ it’s taught in culinary schools to sour milk, but people are allowed to believe what they like. Again, the flavor difference isn’t that much. It’s not like it’s ranch dressing.

    • @OrangeMonkey2112

      @@paulandbenny baking soda doesn’t have aluminum, but most baking powders do. Banking soda IS one of the healthiest things for people, but baking powder not so much. Sorry if my different opinion and training upset you.

    • @paulandbenny
      @paulandbenny 14 днів тому

      @@OrangeMonkey2112 I meant powder not soda. That was a typo. You knew that though because soda doesn't have aluminum in it. It's sodium. I'm not upset. You're 'correction' is not correct though. You don't live in a humid climate, you live in a high elevation. Just because something is taught at a school doesn't make it great. Vinegar in milk is a horrible substitution that works in a worst case scenario only because it's acid, but the internet has made it popular. Why not use grapefruit juice? Because it doesn't taste like buttermilk which is delicious in baked goods besides adding acid. Finally, we don't add soda because it helps dough spread and rise. We only want our biscuits to rise. They aren't bitter at all . It seems you only add faux correction to many videos. That sounds more like arrogance than expertise,

    • @OrangeMonkey2112
      @OrangeMonkey2112 14 днів тому

      @@paulandbenny I think it is funny you say your not upset, but it’s obvious you are. As for telling me about where I live I think that’s pretty prideful and arrogant of you to assume I don’t know what I’m talking about, since I actually live here. It gets very humid now. Back in the late 70’s it was dryer, but not anymore. Thanks for the laugh. The great thing about schools IS the professionals who teach there, I’m sure you are way smarter than them of course. At least it seems you think you are. But anyway, the Art Institute is a fine establishment and has produced some great chefs. I only have 20 years in the food service industry with 9 years in food management. In 36 states, but I’m sure there IS NO WAY I could know anything you don’t, but with all the blueberries and sugar Buttermilk DOES NOT MATTER. And more importantly is that for families on a strict budget that don’t use buttermilk that often it would be a terrible waste of money for them. Maybe they don’t matter to someone who knows so very much, but for many others that’s an important reason to use that technique. Again, I’m sorry I hurt your feelings. I don’t want you to have a mental break down or anything like that. I hope you can have some nice Chamomile tea or a nice hot bath to sooth your nerves. I will be watching out for more of your “recipes” in the future. Just in case your wrong again, which is highly unlikely. As for your closing statement I do at least believe you ARE well versed in arrogance 😉 Reminds me of some of these gay people around here lol. Their all nice until you disagree with them. I do the same with ground beef. I cook it 3 pounds at a time, let it cool and place flat into freezer bags and pop in the freezer. I do this with sauces as well. Store flat in the freezer. I also buy stew meat or what my local grocer calls taco meat which is the trimmings from different cuts of meat from the case. I cook ans season it and bag it up flat for the freezer, it helps make for a quick dinner! Hamburger patties too, for some reason the 93% lean meat is cheaper where I live, so I freeze a stick of buter, grate it, and add it to my meat and make patties. Parchment or freezer paper in between, you can thaw as many or as few as you need and the butter puts that fat back in for a juicy burger! Great video!

      All I heard was grate up butter in the burger. YUMMM!! 😋 I hadn’t thought about making the patties before freezing them. Thank you!

    I do all of these. I just froze a rotisserie chicken. I like having everything ready for meals. I just cooked a 9 lb pork roast in the crockpot. I pulled the pork and froze 22 individual packs. It is my favorite right now. It is versatile like rotisserie chicken. Makes great tacos too.

      I hadn’t thought about doing that with a pork roast. I love pulled pork sandwiches and tacos. Thank you for the idea and thank you for watching, Chastity!

    You covered one of our favorite time saving tips and that it prepared ground beef in the freezer. Always a let down feeling when it is all used up and we have to do it again. :) Something else we like to do is make big batches of casseroles, enough for a meal with leftovers and a meal for the freezer.
