Blueberry Butter SWIM Biscuits | Satisfy Your Sweet Tooth!

- The blueberry season is starting to wrap-up here on the Homestead. There's probably only one more good picking out there - which should be ready in about a week or so. We've harvested around 4-5 gallons so far - so it's time to start using some up! Today we're going to make some BLUEBERRY BUTTER SWIM BISCUITS! They turned out amazing, even without the "frosting"

Ingredients
½ cup (1 stick) unsalted butter
2 ½ cups all-purpose flour
¼ cup granulated sugar (more, to taste)
1 Tablespoon aluminum-free baking powder
½ teaspoon salt
1 ¾ cups buttermilk (you may need 2 cups)
1 ½ cups blueberries

Hubby and I watched your video today and both agreed we had to bake this. It is in the oven now! This weekend I will be processing 25 lbs of carrots and pulled up your video to see what you recommended. My plan is to can a few pints (using a mandolin), freeze some shredded for baked treats and whole for roasting later in the year, and of course, have some for snacking. I enjoy your videos and have learned quite a lot from you. You are an inspiration to my canning, gardening and just general self-sufficiency journey. Blessings to you and Todd.

Oh how I wish I had blueberries in my yard! But I did make the Blueberry swim in my cast iron pan, it was delicious!!! I made it in my regular cast iron fry pan. Will be a "keeper" recipe!
