    Hi, Jhustinne - Leigh - There are a couple of ways to tel when the frying oil is hot enough for frying these donuts. The simplest way is to use a wooden spoon. Insert the spoon into the oil, and if lots of oil bubbles form around the stick, it's hot enough for frying. You might also use a popcorn kernel. It will pop somewhere between 325 and 350 degrees Fahrenheit. (You want it to be 350 degrees for these donuts.)

    You are absolutely right, these doughnouts are absolutely fabulous! I read this recipe today and within an hour started working on the dough. The doughntus turned out simply gorgeous, with a delicate crunch and very nice and tender inside. Instead of water, I added freshly squeezed lemon juice to the icing. I don't usually swear, but after the first bite I couldn't help and said "Oh, sh***, it's so good!" Thank you for this recipe!

      @@mnmbri1525 That was a long time ago, and shortly afterwards I stopped eating deep-fried foods, and forgot about this particular recipe. If I remember correctly, these doughnuts (donuts?) did not last long enough to be tested for loss of crunch with time. Believe me, they were good, and were one of the reasons to drop deep-fried foods, this stuff is just too good and you just can't stop gorging on it.

      @@Iranda_ omg thank u so much for answering, I've been trying to find recipes that gives out rlly crispy donuts that last long but all the ones that I've tried just turns out soggy after like a few minutes so I thought of trying this recipe since it's kinda different from others cuz she used shortening and I searched online that shortening is used to help make products get crispy or like flaky idk if that works for this recipe but thank you sm for the the info, and im so surprised u answered since ur comment was 9 yrs ago omgg ,also u should try air fried donuts! They're rlly good they require little to no oil just some to for the basket so the donuts don't stick

    Thanks for your yeast question, Alyssa Ong. You may substitute instant yeast. Keep an eye on it when proofing to make sure it doesn't get too active, but it will work very well.

    Thanks for your question. You can certainly try this with rice flour instead of all purpose. A general rule for using rice flour is to cut the amount of all purpose by 1/8th. With that, however, you might want to try substituting only part of the AP with rice flour first, to see if you like the texture.

    For 5 cups of flour, a single package of yeast is inadequate. Two would work better for that much dough. Also, add a tsp. of cream of tartar or baking powder for an added rise during cooking. Is what donuts shops do now...

    Thanks for your questions, Frisky project. Shortening is solid fat derived from either plants or animals. If it's from animals, it's called "lard." Shortening made from plants has no flavor and is produced using a hydrogenation process. "All-purpose flour" is the same thing as "plain flour" in the UK. Hope this helps.

      Lard is fat from a pig. Tallow is fat from a bovine (cow or other such animal). Both can be used as butter substitutes depending on the recipe. Tallow is better for pie crusts and such and does as well as butter. Lard is a better subsitute for veg oil and has a much higher heat tolerance.

    Totally awesome!! Their nice and crunchy and delicious on the outside and fluffy in the inside. A must have treat! Powder Syrah is good. I just covered with powdered sugar and enjoyed. AMAZING!!!

      All of the above, plus homemade food just tastes better. I have made all 7 of my daughter's birthday cakes throughout the years and she knows what a good cake is. When she goes to a friend's birthday party, she doesn't enjoy the cake like when we made them. Last month she also ate her first doughnut from Crispy and Kreme and she had to put it aside after the first bite. Too sweet, greasy and just unpleasant. The same reason we don't make her eat it in the first place.

    Hi there, thanks for your questions. Icing sugar is generally the same or close to confectioners' (also known as powdered) sugar. Shortening might be called white vegetable fat in the UK. Hope this helps :)

    Hi Valeria, thanks for your question. Unfortunately, yeast is a very hard ingredient to duplicate, therefore substituting it with a different ingredient isn't always recommended.     Hi jennifer, thanks for your question. Water is a more reliable way to activate the yeast, and while it is certainly possible to activate yeast in milk, we wouldn't recommend it in this recipe. Hope this helps :)
