How to Make Ground Chicken in the Food Processor

  • Ground chicken has been my favorite ingredient to cook with recently and I have some recipe videos coming up real soon that use it so I wanted to put this video out there so you can prepare yourselves if needed.
    Normally I don't use ground chicken because it is expensive and hard to find at grocery stores in the US. It is $5.99 a pound at Traders Joe and it is always watery and tastes funny. It also seems like it always has bone fragments in it as well. Ever since I bought my food processor I have been making it myself and freezing it. The difference in flavor is night and day and I save a ton of money compared to buying it. I bet if you have a nice butcher at your grocery store you could even ask them nicely to grind the chicken thighs at the store. My Costco won't do it though 😑

    Thanks so much for this video -- never ever thought to do this. I filled three plastic bags and stored them in the freezer. Plan to use later next week for chicken tacos, chicken chili, and grilled teriyaki chicken burgers.

    Much easier & less time consuming to just invest in a meat grinder! Well worth it & will speed things up 10x + the consistency will be better than a food processor.

      I wish. Unfortunately I don’t have the space for a grinder or kitchen aid with the grinder attachment right now so have to make do with what I got

    I cut up chicken breast on sale in about 1-inch chunks, flash-freeze, and mince the cut-up frozen chunks using a Vita-mix blender with the processor pitcher. Then spread out what was grounded up on a flat tray separated and then store it for future use. I found that it's quite easier for me to make ground chicken that way. Because I blend while the meat is frozen, the grounded pieces won't freeze together as much. The crumble is easier to separate.

    could you show us more meal preps that call for chicken or low cost food? maybe something that comes out to like $1-3/meal. i loved the buffalo chicken, potato wedges, and broccoli

    You can also throw your food processor blade in the freezer beforehand for improved grinding.

    you can put some beef bullion to marinade in prior to grinding so it tastes like steak

    yeah. here it already fails at 'boneless thicken thighs' because no shop sells them here. the thighs are already expensive, then they want me to pay for the weight of the bone too. one in a million chance a store has them once in a blue moon when the stars align. which is a major issue because tons of asian recipes i know ask for those because of the good fat/protein ratio.

    Good video. I will offer that 4% fat, as you pointed out, doesn't mean 4% fat per serving. 4.5 grams of fat in one serving is 40.5 calories, or 31.15% fat calories per serving.

    I poach my chicken first before I put it in a food processor just because they tell you not to even wash chicken anymore because you might spread salmonella. It only takes about 18 minutes if you want you can shorten it up and not have it quite as well done . Then put it in the refrigerator and when it's firm put it in a food processor You can pretty much do anything you can with Fresh ground chicken. If you think about it the chicken in your frozen dinners are is already cooked. I even throw frozen chicken breast in a pot of water bring it to a boil turn it down to the simmer and let it simmer for about 15 minutes covered

      I turn them inside out and put them in the dishwasher or just use hot soapy water

    Out of curiousity, do you know why those chicken thighs seem so much more macro friendly than any others I can find? The leanest I can find seems to be somewhere around 90-92% lean which isn't nearly as great as yours. No costcos near me unfortunately so not an option to just show there.

    Genuine question, if I put boneless chicken thighs in the food processor without cutting them into smaller pieces, will it cut them into smaller pieces to some extent? I just want to to save time cutting my chicken thighs into smaller pieces

      Yes probably but you might end up with more of a paste if you try and process it fully. The smaller pieces help it chop a bit more evenly
