    I do the same thing, same food processor as well. Do you put the meat in the freezer before you process it? I do for 45 minutes to 1 hour, firms it up and it then seems to process better. Great channel, looking forward to more content.

    I can't freaking believe I never thought of this before. I'm always looking for healthier, cheaper, and better ways to do everything. This NEVER crossed my mind until a few minutes ago. I just don't know if it's cheaper this way....either way, thank you for this.

      Every store I've been to, a chuck roast is more expensive per pound than just buying ground beef. By a good bit at that. And that's not even counting the waste you're going to get if you trim the chuck before grinding.
      Of course The flavor and texture when you grind it yourself is so much better it's not even comparable.

    I just had ribeye sliders in Spain that was processed this way and the texture was amazing!

    I use my food process for prepping chicken for homemade burgers and sausages. I prechill the chicken in the freezer (post cutting meat in cubes) for about 30 minutes prior to processing. I wonder if using that method would help get a better cut of beef, as well.

    Fairly good demo, do you add any herbs/spices in while grinding? (Has anybody ever mentioned that you sort of sound like Ed Sullivan? I mean this as a compliment.)

    I wouldn't mind going the paste route. I wonder if it toughens the meat more, or tenderizes it?

      When you break down or process the meat too much, you expose more and more myosin protein fibers in your meat. If you make a paste, the myson holds it all together too much and your burgers will end up being tough and chewy compared to if you just lightly process your meat in the processor.

    Is this hard on the machine? Do I need the biggest and the best or would an average one do the job?

      My ninja from Walmart does just fine. Unless you're using some really cheap borderline toy, you should be able to get by.

    oh, hands ...wash your hands off. not paws. A paw is a soft foot-like part of a mammal generally a quadruped that has claws. don't listen to someone who thinks their hands are paws. I stop watching the video at 1:48
