Hi, I am Joconde.
This video is for Red Velvet Cake.
The Red Velvet recipe has been shown many times in my channel.
But this one is also very delicious. Besides, it's the easiest recipe.
I strongly recommend that you try making it. Please trust me.
The batter is very thin. So you have to divide it into 2 cake pans and bake it.
I baked this cake in a conventional oven. It comes out most reliably. You hardly need to level the top.
When baking in a convection oven, the top is inevitably puffy and the center bursts.
So, when using it, the top of the sheet must be trimmed.
In convection ovens, the top shelf is relatively less affected by wind.
It is recommended to bake it on the top layer, and the temperature will be lower than 150℃.
Be sure to take good care of pampering while checking the oven thermometer while baking.
I made butter cream simply.
After whipping butter and cream cheese, add condensed milk and icing sugar to finish.
I added condensed milk, but why do I add powdered sugar again?
Cream cheese has more moisture. If you put whole condensed milk in to make it sweeter, buttercream will separate.
So, fill the rest of the sweetness with powdered sugar.
However, if you add only powdered sugar, it may not melt completely, so you feel grit. So it is better to use condensed milk properly.
I think the rough icing is pretty good for the red velvet cake.
If you're bored, it would be nice to add a few red rose petals on.

140g cake flour ( if all-purpose flour 120g)
2g cocoa powder
2g baking powder
2g baking soda
2g salt
160g sugar
110g vegetable oil (without strong flavor or scent)
1 egg (52g)
120g sour cream
45g hot coffee
4g vanilla extract
2~3g red food coloring (liquid)
2g vinegar (not strong flavor or scent)

220g butter
80g cream cheese
120g condensed milk
40~60g icing sugar
2g vanilla bean paste

오븐이 작아 한번에 두 판을 굽지 못하는데 한판 다 구운 뒤 나머지를 구워도 반죽이 괜찮을까요..?!😢
음..... 아유 어떻하죠. 반죽을 40분동안 방치하면 거의 부풀지 않아요. 베이킹 소다는 반죽과 동시에 반응 하기 시작하거든요. 제 생각엔 두가지가 있어요. 첫번째는 레시피를 반으로 나누어 두번 만든다.. 사실 별로 힘들지 않기 때문에 가능 하지 않을까요 😂
두번째는.. 레시피중에서 커피, 베이킹 소다, 식초만 빼고 다 넣어 반죽하세요.
반죽을 둘로 나누고 굽기 바로 전에 각각의 볼에 뜨거운 커피 절반, 식초 1g, 베이킹소다 1g 씩 넣어 아주 잘~ 섞은 다음 팬닝해서 굽는거죠.
두번째 케이크 구울때도 절반의 뜨거운 커피, 식초1g, 베이킹 소다 1g 를 굽기 전에 넣어 섞어주세요.
대신 이렇게 해도 나중에 굽는 케이크는 약간 덜 부풀고 질길 수 있어요.
밀가루가 수분을 만나면 글루텐이 생기거든요. 화이팅 입니다!!

@@Ida_lind не 6г кладет в видео) рецепт неточный , я делаю его редко, давайте поделюсь).250г мука + 50г крахмал +;1ч.л соды+ 3 ст.л какао. Масло( 80г) взбить + сахар мелкий(300 г)+ раст. Масло(30г) + 2яйца вбить+ + ваниль+ 1ч.л гелевого красителя+ смесь кефира(240мл ) и уксуса 9% 1ст.л . Добавить мучную смесь. На 3коржа , формы 20см, вес торта 1,8кг

Hi, Thank you for watching.
I am using two types of oven, convection that fan forced and conventional that has upper and lower heat. I think convection oven is good for sponge cakes.
Meanwhile, butter cake like this red velvet cakes or pound cakes or suffle cakes or cheese cake that needs water bath will come out better in the conventional oven.
Two types of oven is equally good for cookies.

Es mejor sustituir el yogur natural en lugar del yogur desnatado. La grasa ablanda el pastel.

그죠 실제로 아주 촉촉하고 식감도 좋아요. 정말 맛있어요.
식초를 넣은 이유는 베이킹 소다와 좀더 반응하길 바래서에요. 둘이 반응하면 기포가 발생해서 케이크를 좀더 부풀리거든요. ^^

집에서 만들어서 보관하는 경우 냉장실에서는 2~3일까지만 가장 좋은것 같아요. 더 오래있으면 아무래도 냉장고 안의 냄새가 배거든요.
만일 더 길게 보관해야한다면 차라리 얼립니다.
그러면 한달도 괜찮아요. 녹일때는 냉장실에서 1차로 2시간 정도 녹이고 다시 상온에 꺼내 완전히 녹입니다.

It adds flavor and helps cake rise well as reacting with baking soda. Baking soda react when it meet acid. Reaction is boosted more in high temperature.😊
It is not espresso. Just like strong americano coffee. I used 1g of instant coffee and 44g hot water. 😉
Can you taste the coffee in the cake flavor?
