I love how the mint jelly is not just there to look good. Unlike many recipes that just put tasteless fondant on a cake to make it look nice, mint jelly makes perfect functional sense for the mint/chocolate combination.

There's nothing really complex involved. Shortbread, ganache, and gelatin. Trick would be finding the ratio of liqueurs to get the color right. And the recipe does that. Technique is really basic cooking.

I agree and don't agree at the same time. I think it wouldn't be as nice as if he talked, but sometimes I feel it's a little too much. Maybe because ASMR is for me really stressful.
So, a thing I learned while taking Japanese cultural and language lessons, is that they have great respect towards chefs and any establishment that tries to blend Art with Food. So you can have a beautiful plate of food, and it's 100% meant for consumption rather than just showing off. They take it to such an extent, they'll make literal art of food that they would sell, and it looks so real it would be confused with the real thing. An awesome example; I found out a Japanese-themed establishment where I live, had a plate of Sesame Soba by the window. It looked exactly as they served it, and I only found out before I left that it was made from a mix of Plastic, Rubber, and modelling clay.
After countless hours of preparation... the man's girlfriend says she thinks mint flavor reminds her of toothpaste. _Proceeds to eat the tart in the corner by himself w/ tears & sweat running down his face_

I can still remember my nan teaching me the concept of baking blind when I was a little boy. When I moved into my own place when I was older she gave me loads of cooking stuff, all the little things that you wouldn't think you need until you notice they aren't there. this is the above recipe with imperial conversions and added notes for clarity [ Ingredients and recipe ] - Tart (20 cm tart) - Unsalted butter: 75g 1/3 cup Powdered sugar: 48g 1/2 cup Whole egg A - Cake flour: 125g 1 cup A - Cocoa Powder: 16g 1/8 cup or 2 two tablespoons 1. Cream the butter (slightly melted) and mix in the powdered sugar. 2. Beat the whole egg and whisk it together, to soft peaks. In a double boiler on low heat. 3. Add the beaten eggs in several batches to the creamed butter. 4. Divide the sprinkled A's into two parts. Add half of the flower to start then slowly add the rest in to form a dough. 5. Wrapped in plastic wrap and placed in the refrigerator for at least 3 hours. 6. Butter the mold and put it in the refrigerator. 7. Roll out the dough to a thickness of 3 mm and rest in the refrigerator for 30 minutes. 8. Furthermore, after setting the mold, picket and let it rest for 30 minutes. 9. Preheat the oven to 160°C /320* F , and cook at 160°C /320*F for 35 minutes. 10. Brush the tart with the egg yolk. 11. Preheat the oven to 140°C, /280* F, and cook at 140°C/ 280*F for 5 minutes. - Ganache - Sweet Chocolate 56%: 125g 42% Heavy cream/whipping cream: 50g 1/4cup 1. Chop the chocolate, or beat with a rolling pin in a ziplock bag. 2. Add 50 g or 1/4 cup whipping cream to chocolate chips. microwave for 30 seconds. Then mix thoroughly and allow to cool to a handlable consistency - Chocolate Mint Jelly - -Alternate cheaper recipe. - A - Mojito Mint Syrup: 65g 3 tablespoons One tablespoon pure mint extract added to A - Blue Curacao Syrup: 15g 2 teaspoons or One 1oz unflavored gelatin prepared to instrutions on the box. A - Green Mint Syrup: 10g 1. 1/2 teaspoons Add green food coloring to your color preference. A - Water: 480ml/ 2 cups B - Agar: 20g 5 teaspoons. B - Granulated sugar: 30g 2 1/2 tablespoons My church group loved it . 1. Mix B. 2. Put A in a saucepan and heat B in it. 3. Melt well while heating.

I can still remember my nan teaching me the concept of baking blind when I was a little boy. When I moved into my own place when I was older she gave me loads of cooking stuff, all the little things that you wouldn't think you need until you notice they aren't there. I still have the old ceramic beads that she gave me. Lovely woman, dearly missed, If I can teach half of her lessons to my kids I'll have done a fine job as a father.
My grandparents taught me to bake / cook and although i'm no gordon blue* chef, i can cook a variety of dishes and can prepare game, fisf etc. One of the most valuble like skills ever. *yes, i know.

[ Ingredients and recipe ]
- Tart (20 cm tart) -
Unsalted butter: 75g 1/3 cup
Powdered sugar: 48g 1/2 cup
Whole egg
A - Cake flour: 125g 1 cup
A - Cocoa Powder: 16g 1/8 cup or 2 two tablespoons
1. Cream the butter (slightly melted) and mix in the powdered sugar.
2. Beat the whole egg and whisk it together, to soft peaks. In a double boiler on low heat.
3. Add the beaten eggs in several batches to the creamed butter.
4. Divide the sprinkled A's into two parts. Add half of the flower to start then slowly add the rest in to form a dough.
5. Wrapped in plastic wrap and placed in the refrigerator for at least 3 hours.
6. Butter the mold and put it in the refrigerator.
7. Roll out the dough to a thickness of 3 mm and rest in the refrigerator for 30 minutes.
8. Furthermore, after setting the mold, picket and let it rest for 30 minutes.
9. Preheat the oven to 160°C /320* F , and cook at 160°C /320*F for 35 minutes.
10. Brush the tart with the egg yolk.
11. Preheat the oven to 140°C, /280* F, and cook at 140°C/ 280*F for 5 minutes.
- Ganache -
Sweet Chocolate 56%: 125g
42% Heavy cream/whipping cream: 50g 1/4cup
1. Chop the chocolate, or beat with a rolling pin in a ziplock bag.
2. Add 50 g or 1/4 cup whipping cream to chocolate chips. microwave for 30 seconds. Then mix thoroughly and allow to cool to a handlable consistency
- Chocolate Mint Jelly - -Alternate cheaper recipe. -
A - Mojito Mint Syrup: 65g 3 tablespoons One tablespoon pure mint extract added to
A - Blue Curacao Syrup: 15g 2 teaspoons or One 1oz unflavored gelatin prepared to instrutions on the box.
A - Green Mint Syrup: 10g 1. 1/2 teaspoons Add green food coloring to your color preference.
A - Water: 480ml/ 2 cups
B - Agar: 20g 5 teaspoons.
B - Granulated sugar: 30g 2 1/2 tablespoons My church group loved it .
1. Mix B.
2. Put A in a saucepan and heat B in it.
3. Melt well while heating.
