Northern Irish Soda Bread

  • This Irish soda bread is not the yeast-risen, raisin-studded loaf you probably know. Northern Irish soda bread is the foundation of the mighty breakfast sandwich know simply as "a soda". When split, toasted, and filled with bacon, sausage, egg, and potato bread (recipe link below), a soda will set you up for a big day - or fix you up after a long night! The quantities below make eight medium sized sodas; simply half for four if you're not feeding a crowd (nor wanting soda for the week).
    Ingredients:
    4 1/4 cups/ 510 g flour
    1 1/2 teaspoons baking soda
    scant 2 cups/ 450 ml buttermilk
    In a large bowl, stir baking soda into flour. Make a well in the center of the bowl and pour in buttermilk. Stir until a rough dough forms, then finish mixing with floured hands until the dough comes together. Turn onto a floured counter and knead a few times. Meanwhile, heat an ungreased griddle or cast iron pan on medium; pan is hot enough when a bit of flour sprinkled into it browns quickly. Pat dough into a rough rectangle (or, for wedges, into two circles) and roll until it is 1/2 to 3/4 inches thick. Divide into eight total pieces. Place sodas on the hot pan (do not crowd the pan; work in batches if needed) and cook until browned on each side, about 5-6 minutes per side, then turn onto their edges for a minute or so each. As soon as you remove the sodas from the pan wrap them in a tea towel; leave wrapped sodas overnight on the counter. The next morning, slice the sodas and toast in an oiled pan. Top with Irish butter and jam, or for a traditional Northern Irish soda, fill with fried egg, sausage, bacon, and potato bread and eat with brown sauce. Leftover untoasted sodas will keep in an airtight container for 3-4 days.

    My grandmother was born in Northern Ireland in 1893 and emigrated to the US through Ellis Island in the early 1900's alone. Her family didn't have much money and her version of irish soda bread is very much like your own, no butter, sugar or eggs like you find at the supermarket. For the round loaf we use 1 tsp baking soda and 3 tsp of baking powder. Curious as to whether the loaf would be diffrent than these "rolls". Either way, just have to say I am baking these as written tomorrow. I love the idea of using them as part of a breakfast sandwhich, I can taste it just watching the video. Thanks for sharing!

      Thank you for sharing this about your grandmother! I bet her recipe and this one are close cousins. It's definitely one of those things that's more than the sum of its parts (though for folks with family ties to N. Ireland, one of those parts is nostalgia 💚). To really have the full soda experience, you've got to give the potato bread a go, too. I hope you like it!
