- A frittata is like a heartier omelet, or an "anything goes" version of Spanish tortilla. If you have a few eggs, some leftover or fresh veggies, and perhaps a bit of cheese or bacon, you have the makings of a frittata. As for serving, frittata is good hot or at room temperature, for brunch, snack, or dinner, beside a salad, sliced and tucked into a sandwich, or at a potluck or picnic. The recipe below makes a veggie-heavy frittata; if you'd like a higher ratio of egg to filling, add an egg or two and use 2 or 2 1/2 cups of veggies.
Ingredients:
~3 cups filling of choice (cooked or fresh vegetables, roasted potatoes, etc.)
4 eggs, beaten
1/4 - 1/2 cup shredded or crumbled cheese, optional
1/4 cup crumbled bacon or pancetta
oil to cook
salt and pepper to taste
In a heavy skillet or cast iron pan, heat about two teaspoons of oil on medium and add vegetables/ potatoes. When pan is sizzling, stir vegetables and spread into an even layer. Pour eggs over veggies, turn the heat to medium-low, and season with salt and pepper (depending on how well seasoned your fillings are seasoned). Sprinkle on cheese and bacon/ pancetta, if using. Cover and turn heat a bit lower. Cooking times depend on fillings and the size and shape of the pan. Check after about 8 minutes; if top is very runny but edges look done, you can place the frittata under a broiler for a minute or two (if using an oven-safe pan), tip the pan to let the uncooked egg run under the cooked edges, or (if you're brave) flip your frittata and cook a few more minutes. I let mine cook, covered, on low for about 12 minutes altogether.
Yield: 4 servings, more as a snack or part of a larger meal
Storage: 5 days, refrigerated

Omelettes are already great, so this is DEFINITELY so good to have for breakfast or lunch (maybe even dinner, too)! Looks just SO filling - will save to make!
