If this were to be done with whole wheat flour, would you add an extra egg to help bind?
That's a good question. Does anyone know?
If you wish to use whole wheat flour, I recommend making Irish style soda bread instead. Darina Allen has an excellent video on UA-cam to demonstrate how.
James Stray
Irish soda bread has no egg or baking powder.
It has baking soda /bicarbonate soda.
I use wholemeal flour also and no problem
@@kqed aren’t you Jacques?
There are no words to adequately describe the comfort derived from watching Jacques in the kitchen. Love this man!
This is the best cooking show ever. No frills, just a master sharing his secrets (in a kitchen which looks remarkably like my humble kitchen).
My 78 year old father was raised to have bread with every meal and went for Chinese for the first time in his 30’s and asked for bread.
Lol! My husband is a Mexican man, and it is also very difficult for him to have dinner without bread.🤷♀️ I'm American of English extraction, and I do dinner just fine without bread, except if it's fresh from the oven, then there's no way I can resist anytime. Thank you, Jacques. This recipe looks like another real winner!! I'll be trying thissoonerr than later.😘❤️
Even just the way he stirs the flower and all ingredients together makes me so happy !!!! Thank you again Jacques
Thank you for so many great lessons Jacques :)
I've said this before and I will say it again, watching Monsieur Pepin makes me smile.
What an easy bread with few ingredients and no kneeding
There’s no kneed to.
I am in love with these Jacques Pepin videos.. He is such a fine person and it shows! He is my Chef Dad who I appreciate and love... :)
I really like this series - short and useful. No expensive or hard to get ingredients and Jacques is the perfect teacher.
The Irish sodas bread has no egg ,no baking power ,we use baking soda ,looks lovely.
and with Buttermilk to react with the baking soda.
The epitome of someone who loves what they do because it is their passion. One always loves to share their passions with others. You sir are a lost breed. There are few left and fewer still coming down the pipeline. Thank you.
Simple and great. As someone with French heritage too......Bread is a must have in meals. A quick and simple Soda Bread....absolutely yummy. The best part was hearing jacques say his oldest motto "Happy Cooking!" That made my day along with the video!
I hope that he lives forever..... I learn something new every time I watch him....... God bless
Great little quick recipe. I am French and Italian. The words "I find it difficult to eat dinner without bread" is something you can't understand unless you're this culture.
Soda bread and potato bread are fantastic
Love this easy recipe! Thank you Jacques!
Where's the baking SODA?! I still love Jacques.
Thank you Jacques!
I like how humble he is. He never introduces himself as Chef Jacques Pepin.
I watched more of these videos - and he does use Chef. Still a humble guy though.
People who call themselves "chef" before they run a kitchen are clowns. Sadly, the industry is replete with tiny cars packed full of them!
@@fun_ghoul Sort of like people with PhD's who insist that people call them "Doctor." I always ask, _Can you write me a prescription? Then, no._
@@TheVetusMores Not really, because a doctor of English will never accede to become doctor of medicine.
@@fun_ghoul Which is why it's even more annoying. If someone has done the time in a commercial kitchen, and has the requisite knowledge and skills, I have less of a problem calling them "chef" (if their ego requires it) than I do calling a doctor of English "doctor", to use your example.
@@TheVetusMores I know I'm a bit late to comment, but the medical profession stole the title of doctor from the PhDs and not vice versa. I still think that it is not needed to insist on being called doctor except for in formal settings when it might be appropriate
I bloody love Jacques. What a guy.
I’m going to try this with whole grain spelt flour. Thank you Jacques!
This is a recipe I always associate with Ireland and my grandmother making her own soda bread. Delicious with lots of butter.
Absolutely correct! It's an Irish quickbread 👍
His looked kind of dry, is it supposed to be like that? My mom used to make it but it was moister.
As an 'aside', Soda Bread is a traditionally Irish 'quick bread'. Baked every day in a traditional Irish home 👍
Big up your national Lacrosse team -- yes, you do have one! Lol -- for giving up their spot in the World Games to accommodate the Iroquois Nationals team. The latter have changed their team colour to green as a tribute to the people of Ireland
Happy Cooking. That's how to live life.
The world is a better place with Chef Pépin. We should be thankful.
Good one Jacques!💕👍
Raisins.. yummy
Loving him-a legend!
I love this simple recipe and have relied on it many times when short of the starchy stuff. I love this man...
I've made this today, quick, easy and tasty. Will be making again.
A very nice man cooking very nice food. Thank you!
So glad I found you here on You tube. Bring your daughter on. I love when you cook together. Reminds me of me and my Dad.
My hero.
Chef, you make everything look so easy! Beautiful loaf, crunchy and fast! Thanks for sharing, I'll be trying very soon! Stay safe! 🌈🌈🌈
Thanks Jacques! What are your favorite soups and stews for fall? Would be great to see you make some of them. Thanks!
I just watched Julia and Jacque make french onion soup on Tubi. This bread would do well in the recipe. Can't wait to make it.
Agreed!
@@saraheart2804 Sry, that was meant for the OP. I hate using the damn app on my phone!
i don't mean to answer for Jacques, but...use whatever is available, cheap and good. Squash, celery, carrot, broccoli and cauliflower all make excellent puréed soups, which also all freeze quite well! Oh, did you already catch his tip about freezing veg scraps for stock? A good stock is the basis for a good soup. Outer onion layers, carrot ends and peel, celery ends, etc. He uses milk cartons, i use large yogurt containers. Whatev.
P.S. As it happens, I'm a '79 model as well. Cheers
This is awesome! Fun to watch. Also very practical if one wants to try an easy bread to make! Thanks Jaques!
love your recipes
Thank you.
He couldn't resist having a bite! ♥
Who can blame him?
Master!!! Thank you!!! I will make this. 😎🍷❤️
Thank you so much
I bake soda bread at least once a month. I prefer to make it sweet, so I put sugar, raisins and vanilla extract.
*KQED* Cool !! keep doing

I love his shows. Why is it called soda bread if it has no baking soda? Or did I miss it?
Baking soda is one of the main ingredients in baking powder.
Great
Love it . Can't wait to try.
T'en à besoin d'un four grille-pain, Jacques. Même les moins dispendieux vieux modèles de Black and Decker (Toaat-R-Oven) se chauffent en 5 minutes! That's what i use for biscuits and scones...works a treat!
You're a great man Jacques but that is no soda bread! You need to visit Ireland to see what I'm on about... thanks for the videos!
If anyone is making this you can swap milk for buttermilk, takes it up a level.
Jacques = 👍
Monsieur J'ai t'aime!!
made some last night! was good! ..... What does covering while cooking do?
Probably encourages rising by increasing steam production, much like how popovers rise.
An Irish staple. This is usually made with sour milk.
That looks hard as rock.
425 degrees for 1h - of course it does 👍
@@qkayaman So you like rock bread, is what your saying?
I'm sure soda bread is made with baking soda and not baking powder. Am I wrong ?
This is the first recipe I've seen from this great chef that hasn't come out properly. The dough was far too wet which was probably why the bread looked too solid. Irish soda bread doesn't have egg and uses baking soda not baking powder. Plus better to use buttermilk or even milk that's slightly on the turn to react with the baking soda.
Imagine that, ingredients most people have on hand, no waiting just mix it up and put it in the oven.
I judt tried making this. Shortly after I put in the oven, I thought SOB, did I put in the right amojnt of milk.
is this his official page? why is it called KQED.. should be called Jaques Pepin
Reminds me of playdough
Interesting. No acidity to help activate the rise, so it's meant to be a more hard firm bread.
I use buttermilk, is there a difference?
Well
His had no rise atall because he used milk,, you use buttermilk to activate the bicarb and it will rise when cooking..
Soda bread is easy to make?
Is he ever going to do a show again? I know he has done enough, but I wonder what his plans are. Thanks, Jacques
I'm guessing these are his shows now. Put three or four episodes together and you have a half hour show. I doubt he'd do a regular show due to his age.
No baking soda?
As I know baking powder is kinda universal, baking soda activates in sour environment - there's need of some butermilk or sth like that, so maybe because of using just milk in the recipe Mr. Pepin uses baking powder instead of baking soda?
Baking powder is soda+an acid (cream of tartar, monocalcium phosphate or both if "double action"), plus corn starch to keep the acid and alkali from reacting. There's also self-rising flour, especially in the UK, which comes with those pre-blended into the flour; you just add your liquid and you're done. Note that you could also still use buttermilk in conjunction with the other acids.
So, it's a really big biscuit.
You spelled "scone" wrong. Lol
I thought soda bread was made with baking soda and a sour milk
We always called this batter bread.
Pork, ketchup & cranberries up next.
I hav to say i wud be so lucky if im a fly in his house... get to taste his cooking even i know it might lead me to my death... but damn...
Why do you call it "Soda Bread"?
Why is it called soda bread. With no soda?
I'm thinking, "where do I add some olive oil"?
One thing I'm not is a baker...Their a art to banking...And with all these good places to her bread in south philly I rather buy it and focus on the meal I'm going to cook...
@@DarkHumorWritesItself .. Thanks
Note: This "bread" makes excellent dry wall, it's pretty sturdy but please advisory, it's not bullet proof.
how do you call a 50% soda 50% yeast bread ? seast
And if you cut it in half? Diseast.
This is a good recipe for making bricks.
The man is a living legend. I understand that this series is "quick and easy" meals that even a child can do.. But this bread recipe is a train wreck and makes no sense.
He's 84, he had better be careful, all that bread he's eaten in his life... he's going to die young. I would rather die than go without bread ;)
He is going on a diet tomorrow....sorry never....always remember to add plenty of butter; salty french butter to live long and prosper....
Hockey puck anyone?
33.
That bread appears to be rock hard. I prefer Irish soda bread, which uses buttermilk, has more of a raise, and is lighter.
Why is it called “soda bread”?
It contains sodium bicarbonate in the leavening ( cream of tartar plus bicarb.) hence soda bread.
@@chrisgartenn here he has added baking powder too if you listen to his recipe.
It hurts my heart, but Chef Jacques is simply WRONG. The Irish do not add eggs, sweet milk (butter milk only) and no kneading..It's a quick bread. MORE RESEARCH NEEDED, CHEF JAQUES!
Most likely the worst soda bread I've ever seen been made . My mother would throw him out of her kitchen for calling that soda bread,. She's irish
huh?
Pepin is good but this bread was a no for me.
I have made this before and I didn't think it was bad.
Watch His video called th Bread Flip in the series Fast food my Way,he makes a 'Tibetan Bread ' in a skillet which takes at most 15 minutes, delicious.
Sorry Jacque but that’s not soda 🥖
I'm pretty sure you're supposed to crack eggs on a sharp edge.
You'd be wrong...
Yikes .....
That looks awful. He can’t even cut the bread.
Atleastashare I’ll take wonder bread over that block of cement Jacques just made any day. The thing made noise when he dropped it on the serving platter. It landed with a loud thud.
Soda Bread is one of a thousand different types of bread you can make, and very common in Ireland. It's kinda like a cracker/cookie, and is good dunked in coffee, soup and commonly in **beer**. If you don't like this style, don't make it. If it's all you've got, it's better than starving.
i've made it, it's good.
its not soft but its not supposed to be. He even says it's crunchy.
Don't knock it until you've tried it .
To be honest (I'm 100% Jacques+) but this seems fairly rubbish.
Looks like some really fluffy concrete.
No baking soda?
