    I saw this video and afterwards had the intense urge to make this pie. I went to 5 different stores looking for vanilla beans because i wanted to make it exactly how she makes it. This is the most complex thing I've ever baked and it was a bit of a challenge but I have to say, it came out so incredible. Seriously the best thing I have ever made, maybe even the best pie I have ever tasted. I cannot believe i made that. When I finish it, I will have dreams about it. This pie has cured my depression and has helped me reach spiritual enlightenment. I highly recommend you try this recipe.

    I just made this pie today and it was undoubtedly the BEST pie I’ve ever had! There’s a lot of steps which may seem intimidating, but take it step by step and it will come out amazing!

    I love how precise Claire is. You can see she really puts so much effort into everything she makes. She's basically the opposite of Brad.

    I’ve made this pie twice now, once for my brothers birthday and then for Christmas. It has been such a hit, and it only gets easier with practice!

    Okay, so I made this over the past few days. I ended up using two coconuts for this recipe. I shredded and toasted most of the white coconut flesh, and then shaved off about 1/2 cup of the flesh to toast and use for the topping. I do suggest looking up the written directions as well, because Claire (who's phenomenal!) makes it look so easy and there are some key details I needed in the written instructions especially with the caramel and custard components. All the ingredients are pretty cheap except for the Vanilla Bean (which is essential in the custard's flavor). I also used a whole pack of graham crackers (8) for the crust. The pie turned out amazing and was a big hit at the family Christmas dinner. People who normally don't like coconut flavored items loved this pie. 10/10 Thanks, Bon Appetit!

    Just made this coconut pie. It’s delicious! I substituted with monk fruit sugar for the cream portions instead since sweeter won’t caramelized.

    I have made this recipe so many times. I love how u incorporate coconut as many times as u can. It is out of this world. The only thing I did was sneak some cream of coconut in with the whipped cream. I go coo coo for the coconut 🥥 🌴🤪 but it is beyond perfection 🙌🏻🙌🏻🙌🏻

    I made this pie. It took me like 4 hours (1/2 hour to figure out US measurements 😕) it's very difficult but the result is sth to show off. My caramel was to thick but it's not a problem (extra chewy), custard was too liqudy and that was a problem, so make sure to use enough of cornstarch. Pie was very sweet and rich, maybe I'll do it again in the future. Thanks to BA for this recipe!😘

    We love this pie!! I have made it twice since September. First for my husband's birthday and today because his "hints' about how much he loved "that coconut cream pie" were obvious. He seldom hints, and I thought he was a total Lemon Meringue guy. Now I know he is so much more!

    BA is one of my favorite cooking channels on youtube and Claire is one of my fave faces from the channel. I also really love her hair, I even bleached my bangs because she's rocking it. Also Brad from It's Alive is a fav, wish I could have a job like this!

    I was so glad to see you strained the cooked filling. It always grosses me out to think there are little clumps of egg or whatever in it. I know, I'm probably a bit extreme about that.
    Your recipe looks like a dream for those of us who love coconut. The added coconut caramel sounds soooo delicious!

    the caramel is a great idea. i had peanut brittle with coconut a few years ago, it made me like both peanut brittle and coconut. i wish i wouldn't have remembered it because i haven't been able to find it in so long

    I would’ve used whipped coconut cream for the top. You can use the fatty solid part that separates and whip it just like heavy cream.

    I'm surprised she didn't go with coconut whipped cream. Just put cans of coconut cream in the fridge so the fat hardens, then separate it from the watery part, and whip it up with a little vanilla and sugar.

    the caramel looks good but i imagine it would be really nice also with a citrus curd layer (i'm really into kalamansi things right now, that would be dank with this pie i think) just something sharp to cut through the creamy mildness

    It would be so nice if BA were to publish a book of Claire's recipes. She is an amazing teacher, but sometimes she talks so quickly that I have to rewind multiple times. I'd buy separate books for appetizers, main courses and desserts. She could also have a book with "Tricks of the Trade". I am so glad she's back!

      I had the make the caramel 3 times because it kept getting chunky, and the custard didn’t set and I cooked it for like 20 minutes. I’m so sad I spent so much time and money on this disaster 😢

    If you guys like coconut, I highly suggest looking up a traditional Filipino coconut/buko pie recipe. It uses fresh coconut slivers and is a lot simpler and lighter than this version (nonetheless, this recipe looks amazing!) There are lots of different recipes for it so you can't go wrong with trying to make it yourself with your own local ingredients :D
