Normally how long does the glutinous rice take to steam, if too long, will the bottom layer texture become too hard? And when steam the top layer, did you use small fire or medium high? Thanks!
I didn't soften the banana leaf, but you can do that for your convenience. If the glutinous rice over steam, it will become over softened. Difficult to press it firm, just steam for 20 minutes is enough. And also don't over soak the glutinous rice. When steam the bottom layer, use high heat for 10 minute, after that turn to medium heat
For lining the tray you can use baking parchment paper, for lever the surface you can use spatula or wear plastic hand glove. However, it is doesn't matter if the steam tray didn't line with banana leaf. Thank you 😊

我認為啦,不是滴水造成表面不平滑,而是鍋裏蒸氣太大,溫度太高令麵糊裡有小氣泡膨脹造成凸起來。所以蓋Al foil是好方法。被水滴到的表面會讓顏色變淺一點。
但我是開最小的火, 8" 模,沒蓋錫紙,鍋蓋開小縫(我用筷子),讓鍋裏不太過熱導致麵糊裡的小空氣膨脹,蒸大約50mins就熟了
