Hi Gennaro, I made this dish today. It was great and very surprising... I was forced to use white chicory but I think it was not a problem at all... The combo chicory, blue cheese and bacon is sublime... thanks for the recipe... regards, Sander.

What are your thoughts on making tagliatelle with chickpea flour? I would love to see the recipe. I've been eating pasta since I was born, it's in my blood,...lets face it folks, we get that it's not healthy...wonderful execution. All respect is due to the master Gennaro!
I love it, only can cook it for me though, no one in my immediate family that may eat at my home will eat gorgonzola,bleu feta, limburger cheeses, they all say it is to pungent and strong. I tried to sneak it in a recipe, but they sniffed it out, lol, no pun intended, but what they do not know is that they say they do not like anchovies either, but i can put them in a recipe early so they dissolve and they do not know. I win

Like bleu cheese, goat cheese, or a cheese like a pecorino or a cheese that isn't as sharp like feta. That's what's great about cooking. You take someone else's recipe and switch it up to what you prefer, making it your own.

It does make a difference no matter what you use but the subtleties more present in a fine wine would be lost in a cooked dish. You really only get the acidity and sweetness or bitterness in the end.
I don't understand how some gourmet like Gennaro can eat Gorgonzola. It smells like puke and it just tastes like it. I can eat almost everything but why do people like Gorgonzola? Yes - taste buds are very different - but it just tastes as worse at it smells. What ever, great video!
