- I’m so excited to share my recipe for Pasta e Fagioli with you! This one uses the Parmigiano Reggiano rind to add flavour - no wax is used to cover Parmesan cheese, so the rind is perfect to use in your cooking.

Are you sure? Come here in Italy and then you’ll change your mind about it. A good showman, probably a pretty nice cooker...but almost every men and women here in Italy can do much better.

Pasta Fagioli is one of my favourite meals. I’ve made big pots for guests before and no one goes hungry, that’s for sure. I always keep my Parmesan rinds in the freezer for future use. It’s like a bay leaf - it adds something like depth to the soup.
Do you eat the rind or just leave it in the dish but don't eat?
@@disdonc6012 Some people eat it but it gives flavour even if you don't.
@@disdonc6012 There are two reasons why most say: "don't eat the rind". The bacteria, having contact to the air, and to many hands it goes through, and because the rind is really, really hard to chew. By cooking it, you get rid of both, bacteria and hardness, so you can eat it.

I will definitelly try this. Here in Colombia we have great quality beans, it never occured to me to mix it with pasta. This looks delicious!!!!!

I remember, my mama used to cook such soup with Fagioli and she putted big slices of Parmigiano rind in - buonissimo!

Was „the rind“ synchronized afterwards? Look at 1:52 for example 😄
I was thinking exactly the same. I am pretty sure it is synchronized afterwards. You can tell also that his lips don't sync up very well to '"rind" either. I'm curious as to why they did that though.
He probably used the wrong word or said it in a different language

It was a lovely recipe. I would like to learn this recipe and maybe cook my own version, the best that i can, and maybe invite some friends or maybe my cousins, and we can have a nice dinner-evening eating Italian cooking. Just hanging around, gossiping about fun stuff and eating Pasta e fagioli.

We love beans as well but we usually add fish sauce and have them with rice. This is something i need to try. I cooked alot of pasta as well but this is something new for me.
