I absolutely love this one. I made this today, and then a friend forwarded me this video. Nice job. I'd like to add two things, one is a tip from a native (I'm not a professional chef, but am just a casual home cook) and another is an explanation of how the term MLA came there. Firstly, cooking only one side makes it crispy, but for elderly or people with gastric trouble, make sure that you cook it on both sides. The traditional filling items are Jeera, Allam (finely chopped ginger pieces) and Green chilli (again finely chopped). Rest all are additions. Carrots and onions are not added traditionally but was a recent change. Now actually MLA has nothing to do with not adding upma. Upma is always the ultimate combination with it. However, not everyone are able to afford breakfast in old days. The term MLA got added because people started talking in olden days that Only MLAs can afford to cook Upma along with it. Anyways, great video! Enjoy the pesarattu!

I always had problems with heat control. Thanks for the advice. I made this morning and it came out great. I used a non-stick pan and did not use any oil. It still came out great.

This dosa tastes way tastier than usual once. I made it endless time n is loved by all. Hi Yaman I too sprinkle water on hot tawa n wipe it this is best technique no onion ghissing, oil rubbing. These dosas stay in shape as folded n crispy too for quite some time.
I tried it but with different filling i.e. i added onion cabbage and capsicum and it turned out really amazing and tasty... also the cutney turned out to be superb... thank you...

And the main thing in this PESARA ATTU(TELUGU), Add little bit of COOKED RICE or SOAKED POHA, & METHI SEEDS (5-8) , ITS MAKES PESARATTU SO CRISPY.👌😋 Tasty 👉NOTE: just 3table spoons of cooked rice for 1/2 kg batter. And one more thing is , the batter need to be fresh as much. 👉No need to fermentation.

1 cup of green gram + 2 tbsp rice. Soak 4-6 hours. Grind with 3 chilli, 1 tsp cumin, 1 inch ginger. Pulse into course batter

We make it everyday and add some fenugreek and asofoetida as well and it tastes very good

Unfortunately, some manufacturers mix melted white jaggery to the dark one to increase the quantity. Buy dark jaggery from a trusted supplier.
