Ania it's ok that Fiona did not rise as much as she did. When you make up the brad dough it's like feeding her again because of that she will double in size if not triple in size. Ani, You don'thave to keep many different starters. If you want a rye starter you can take some from the white starter and feed it rye flour a couple of times and you will have a rye starter. It's the same way with wheat flour or any flour.

The temperature in the room may be is affecting the starter to rise. When its hot it rises faster. Have you completed your recipe book
