It's time to say CHEESE! Ever since I got my first smoker I've wanted to smoke some cheese. Today we're finally doing it on the Pit Boss Platinum Lockhart! In this first of a two-part series we'll smoke the cheese and then prep it for cold storage for 2 weeks. In this video I'm using a smoke tube from AMAZEN Smoke Products, sold by Pit Boss.

When did you move the smoke tube from the far right over to closer to the cheese?
Or about at what time mark did you move it for more smoke infusion?

I would avoid wrapping in butcher paper or in anything other than vacuum packing.
