    Thank you so much for these videos. I have watched dozens of sourdough starter and how to use videos. I don’t care about the scientific physics of why and how dough ferments or exact weighing of flour and water. All I wanted was a down to earth, easy to follow way of making and using sourdough, which you provided. Thank you again for keeping it simple for us simple folks.

      I appreciate the simplicity of your method and sharing your efforts with us. Our ancestors didn't have digital scales and didn't go through all the machinations I've seen in other videos. I shied away from videos who assume we're all one stir away from being PhD bakers. I wanted a recipe that just worked for this lay person.

    yay!! I followed your way for the starter and hot dang mine looked just like yours the 3rd day! WOOT WOOT!! 72 yrs old and never made sourdough starter.     It took 10 days for mine. I changed after a week from AP Flour to Wheat flour and started feeding it more this morning. It had grown to the top of the quart jar. I was doing my happy dance. Thanks for sharing!

      @@TheRoseHomestead do we discard on day 3 even if it’s clearly not been warm enough to cause it to activate much and rise? Mine still producing lots of water at the top

      Did you continue do keep it on the counter for 10 days? What ratios did you use for discard, flour and water for the 10 days?

    To add a natural yeast to my starter I add fully ripened (in the Fall) berries from wild Oregon Grape that grow here in WA St. The berries will have a gray coating of natural yeast on them that will impart a San Francisco type flavor. That yeast only attaches itself to the berries in the Fall as they ripen. On about day 3 or 4, when it’s really bubbling I pull out all the berries. Keep feeding. The flavor is wonderful.

    I make sourdough bread. I leave the scrapings in the jar after I have used my starter to make my bread. I put the jar with the scrapings in in the fridge for the next time I make my bread. I then feed the scrapings with 50g of bread flour and 50mil of warm water. The bread turns out beautiful. This way just seems so much easier for me.

      It appears that many love throwing in the scales, and g measurements just to look smart on their videos 😂 it’s so much easier to just say 1/4C to 1/4 C.

    I’m a beginner at this. I had a starter but lost my starter during a storm. No power for over three weeks. I wanted to start again so I came across your UA-cam video.     I have listened to so very many of these videos possibly 30 yours is the best. I don't mind throwing away some starter, but not having to, is some much better. I only found one other video that also recommended refrigerating it. It's just so much easier. Also not alot of needless talking . In the beginning you need a clear perscise directions. Not confusing, YOU DID IT.

    Just found your channel 💖 I love good sourdough and have watched many videos and always felt overwhelmed so never attempted sourdough.       @@TheRoseHomestead Yes. It's great. Don't know if you have them where you live, but we have store called Aldi's here in Miami, FL and that's where I got mine, for $1.00 a jar! Delicious.

      Mary ty you made this so easy…..ok now after the 5th day I put it in the fridge………can O make a loaf of bread or is it just good enough right now for pancakes or biscuits and not strong enough?????????? This is where I’m confused on the next step…………hope you respond or someone…..tks 🥰

      You can most definitely try a loaf of bread at this point. Just be aware that with it being a young starter it may take longer to rise and it may not rise as well at first. My recommendation would be to do a same day loaf with 1 cup of starter. For instance, 1 1/4 cup water, 1 cup starter, 2 tbsp oil or butter, 1 1/2 tsp salt, and 3 to 3 1/2 cups flour. Mix together in stand mixer. Add 3 cups at first and the last 1/2 cup slowly until the dough pulls from side of mixer bowl. Let knead for about 10 minutes on speed 2. Shape into loaf shape and put in greased loaf pan. Cover with plastic wrap and allow to rise at room temp until it's about the top of the pan. Preheat oven to 350 F and bake 40 minutes.     Mary, I just wanted to thank you for this video. I have baked bread for over fifty years but I have not been successful with creating a sourdough starter. I am on the third day of your process and did the first small discard. I fed it and I looked at the starter about four hours later. To my surprise, it had doubled in size in the pint jar. I’m so looking forward to being able to bake some sourdough bread. You have made this 75 year old grandmother very happy. God bless you Mary and happy new year!

      I guess I spoke too soon. The starter despite feeding it and keeping it warm, slowly died off. It peaked on the 3rd day. I’ve tried about eight times. I guess I’m not meant to make sourdough bread.
      Hope you are getting your strength back. I’ve had the dreaded bug twice. The first time was the worst. I had it during the big Texas freeze and blackout and thought I was not going to get through it. The second time wasn’t that bad. Be kind to yourself.

    My starter is finally showing signs of life and smells like it is getting ripe. I used some rye flour which the Beckers say can promote the process over other flours. I have named my starter Mary Rose because you taught me how to do this in such a simple and relaxed way. 🤗

    Thank you for your easy-to-follow video. I to have watched dozens of sourdough videos. You helped me after having 4 half-full quart jars in the fridge trying to get a strong starter going, feeding it. So I did it. I started a small pint jar, on day 2, and began discarding it to build a strong starter. I will use the weaker starters I have going in the fridge. I want to soon see the big bubbles and hear the active starter I see in your videos. Thanks again for your videos. 💞

    After watching so many videos on making a SD starter I landed here, and boy, am I glad I did!!
    Your down to earth, easy method is just what I was looking for. Thanks to you, I just mixed up my first batch of SD starter ever in my 52 years lol I can't wait to see how it goes!

      Day two, and it looked like there might have been a bubble or two! I fed it per your instructions and stirred it well, and put the coffee filter back on, wrapped it in a dark dish towel, and put it away until tomorrow. I'm hopeful that tomorrow we have more bubbles!
      This is exciting!

      Day 3, and it looked just like yours did, and it smelled sour!
      I discarded the 1/4 cup and then fed it, stirred it well, and put it away. I'm just curious... Is there a reason for wrapping it in a towel and putting it in a dark place?
      I mean, it's working, lol, but I was jw. :)

      @@MoonFlower52798 Any fermenting product does better in the dark place. You don't have to continue that, it just helps right at first. Yay! You are well on your way!

      Day 4- I forgot to post, but I didn't forget it! It had some water sitting on top and not as much of a sour smell as Day 3, but I stirred it, fed it, and put it back up.
      Day 5- It was kinda the same as Day 4, so I did as you said in your Day 5 instructions as I'm following along with your video from day to day. So, now we'll see how it does. :)

    I’ve only recently discovered your channel and I am hooked! I’m really into the sourdough videos and am watching the making a starter video for the third time now and I was wondering what whole wheat flour you use in your starter on this video. I grind my own and have hard red, hard white, and soft white.

    Thank you so much! I watched your two videos for beginners and it’s given me the confident boost I needed to go for it. I like your simple method of leaving in the fridge and very little waste. I think your style fits with my lifestyle better than any others I’ve seen. I don’t want to constantly tend to it nor do I want to be discarding all the time but I want to have bread and biscuits on a regular basis from scratch. No more buying Bisquick or frozen bread dough from the store! 👍

    I just fed mine for DAY 3! I read the comment about DISTILLED water and I wish I'd read it sooner, because I'm using it, too. Mine DID bubble this morning and seemed to look great. It has a very distinctive smell and I don't know if it's normal or if it's gone bad. 🤣🤦🏼‍♀️ #1 - Can I start using store-bought Spring Water now? #2 - How will I know if it's a FAILED starter? THANK YOU SO MUCH FOR YOUR KIND and PATIENT HELP. Your character really shows in these comments. It reminds me of sweet Charles, formerly of Old Alabama Gardner.🧡God bless.

      Thank you so much! I would just start using spring water in the starter you already have. The smell will go from not that pleasing to a wonderfully sweet yeasty smell by day 5 to 7. I'm sure it'll be just fine to just continue with your starter and the spring water. Thanks so much for watching!!

      @sandybeach3235 when I first started with sourdough I tried distilled water with no luck. Since it's devoid of all the minerals I suspect it's not the right ph for sourdough. I'd just use filtered water or remineralize the distilled water before using.

    Hey, I’m new with sourdough and I made my first starter. It seems quite healthy and my first sourdough bread came out very good. My question is this.. Do you have any experience using water kefir to feed your starter? I have water kefir I use and wondering if that will improve my sourdough starter.

      I haven't used water kefir in sourdough before, but, I have used whey from making yogurt and it gives it a jumpstart for sure. You could always take some starter out into another jar and try the kefir without trying it with the main starter to see how it does. If you do, please let me know!

    Mary, when I feed my sourdough that's been in the fridge weekly, do I need to first discard a portion? If so, how much? Also, then do I need it to sit out on the counter and ferment before putting it back in the fridge?

      Yes discard half and add to a separate jar labeled discard. Use it in a lot of different recipes. Feed it and let it sit on the counter 4 to 6 hours or until bubbly and active.

    I am going to try your straight-forward approach but have a question - does it matter what the ambient temperature of the room is in which you let the starter percolate for the 24hrs?

      I keep mine in the warmest room with a range of 68-74 degrees F. Sometimes warmer or cooler depending on the season. I haven’t noticed a big difference with the temperature swings. Hope this helps!

      My house is always cold. Will the starter still "work" in an eastern, sunshiney window where the sun shines for about 3-4 hours every morning? @@TheRoseHomestead

    I have just now found your channel TYJ. I am interested to know if you have any experience with the Lord’s original flour, Einkorn. I am going to try to make a starter using it, as I have about 20 lbs. of the whole grain, and am interested to find anyone with experience with it. I agree with others that your style is one of loving simplicity, and respect for the process. Thanks for the time and effort you’ve put into these videos. I am anxious to see the next one.       I have baked with Einkorn quite a bit. Actually, I have a video coming next Thursday about working with whole grain ancient wheat in sourdough. I personally use Kamut, but they are very similar. Thank you for the kind comment and for watching.

      I, too, have some Kamut, but, as I indicted, life styles are COMPLETELY different here in Mexico. I need to find recipes for SOFT sourdough breads; I have plenty of artisanal that no one like but me. I end up making tons of tasty croutons. 😂

      We prefer the softer breads as well. The Artisan loaves are nice, but for a sandwich, there's nothing like soft sandwich bread.
